Kulfi cake

Ingredients

for cake base

maida-1 cup

baking powder-1 tsp

sugar-3/4 cup

egg-4

vanilla essance-1 tsp

sun flower oil-2 tbsp

for filling

milk-1 cup

condensed milk

sugar

cardamom

nuts

maida-1/2 tsp

whipping cream-1 cup

Preparation

Mix maida and baking powder together, and strain 2-3 times. Beat egg with vanilla essance, add powdered sugar and sunflower oil, then add dry ingredients little by little, make a thick batter and pour this to a cake tin, bake for 35 minutes, after cooked well, cut the cake into layers.

For filling, boil milk, add condensed milk, sugar,nuts , cardamom and maida, cook until it become thick and keep aside

Beat whipping cream, a portion of cream mix with the filling.

For assemble the cake, Put first layer in a cake top, add sugar syrup , spread whipping cream, add kulfi filling above it, put second layer, repeat the same, finally cover the cake with cream, and design as you can. Keep in fridge for 1 day before cutting.

Sharkkara varatty

Ingredients

Baw banana – 1.5Kg

Jaggery – 250 gm

Coconut Oil

Dry Ginger Powder – 1/2 tbsp

Cardamom Powder -1 tbsp

Sugar

Preparation

Peel off raw banana, then cut into small pieces.Heat coconut oil in a pan, add banana, fry it well, then strain out from oil.Melt jaggerry, add dry ginger powder and cardamom powder, next add fried banana, cook until it become dry, mix it well, allow it to cool, finally add some sugar.

Easy porotta making

Ingredients

maida- 1 kg

salt

sugar-1 tbsp

egg-1

water

oil

Preparation

Add flour and other ingredients in a bowl, make a soft dough, knead it about 15 minutes in counter top. Rest this dough for 3 hrs. Next divide this to equal portion. Roll it into thin, add oil and maida flour, roll another ball, and set above the first one, complete all, then rest for 1 hour. After 1 hour, take one sheet, roll it and flattern it, then cook porotta, after cooking all, tap it.

Hotel style fish curry

Ingredients

Fish – 500 gm

Coconut oil – 3 Tbsp

Tomato ( M ) – 2 Nos

Onion (M) – 1Nos

Shallots – 15 Nos

Ginger – [ M – PC ]

Garlic – 5 cloves

Green chilli – 3 Nos

Water -1/4 +1/4

Salt

Fenugreek – 1 pinch

Fennel seeds – 2 pinch

Red chilli powder – 1 Tbsp

Kashmiri chilli powder – 1 Tbsp

Turmeric powder – 1/4 tsp

Coriander powder – 1/2 tsp

Curry leaves- 2 sprigs

Coriander leaves – 1 sprigs

Tamarind – Gooseberry Size ( You can also use Kukum Star (കുടംപുളി) – 1pc ( Note: put Kukum star in to the curry along with water )

Water – 1/2 cup

Hot water – 3/4 cup

For vseasoning

Coconut oil – 2 Tbsp

Shallots – 4 Nos

Curry leaves- 1 sprigs

Preparation

Heat a pan, add oil, saute onion with salt, next add shallots, ginger garlic and chilly crushed, next tomato, mix well and add water, cook for 10 minutes, transfer to mixie jar, grind into fine paste. Heat a claypot, add oil, add fenugreek, fennel , ginger garlic chopped and shallots, next add masalas, roast it well, then add grinded masala paste, mix all well, add hot water, next add tamarind juice, add required salt, allow it to boil, next add fish, cook well, finally season with ingredients in the list and add to curry.

Preparation

Heat oil in a pan, add coconut and curry leaves, roast until it become brown color, then transfer to a plate. In the same pan add masalas, heat it and keep aside. Again add coconut oil, roast spices, add onion, saute it well, add ginger garlic, chilly and salt, next add masalas, mix well, next add chicken with required water for cooking. Cook for 20 minutes, then add pepper powder and garam masala powder, next add coconut, mix well, cook until it become dry.

Easy Bread snack

Preparation

Grind bread into powder, add to a bowl, then add other ingredients one bye one, mix well, and divide into desired shape. Dip all bites in wheat mixture and coat in bread crumbs, then fry in hot oil.

Ginger curry

Ingredients

tamarind-100 gm

turmeric-1/2 tsp

chilly powder-3/4 tsp

green chilly-3

mustards-1 tsp

dry red chilly-3

water-2 1/2 cup

jaggerry

salt

coconut oil

curry leaves

Preparation

soak tamarind in water, then squeeze it and make juice. Slice ginger, seperate 2 tbsp from it.Heat a pan, add oil, once it hot, add sliced ginger, fry it well, then grind it. In the same pan, add chopped ginger, curry leaves and chilly, fry it well,next add tamarind juice, masalas, salt and jaggerry allow it to boil until it become thick, now add fried ginger, mix it and turn off flame. Heat a pan, splutter mustards, dry red chilly and curry leaves, and add to curry.
