Velleppam and egg curry

Ingredients

for appam:

raw rice-1 1/2 cup

urad dal-1 tbsp

cooked rice-1/4 cup

salt

coconut-1 cup

sugar-4 tbsp

water

yiest-1/2 tsp

for egg curry:

tomato-2

oil

mustards-1 tsp

cumin-1/4 tsp

onion-2

salt

ginger garlic paste

curry leaves

coriander powder-2 tbsp

chilly powder-2 tbsp

turmeric-1 tsp

garam masala-1/2 tsp

coconut milk-1 cup

egg boiled

Preparation

Wash rice and urad dal, then add rice,coconut,salt,sugar and water into it, mix well and rest for 8 hrs, then grind into fine batter and rest for 1/2 to 1 hr, then make soft paalappam.

For egg curry, heat a pan, add oil, splutter mustards and cumin, next add onion, saute it well, then add ginger garlic paste, salt, next masalas, mix well, then add tomato puree, cook well, next coconut milk and boiled egg, cook for 1 minute.

Cooked rice snack

Ingredients

cooked rice -1 cup

egg-1

onion-1

chilly powder-1/2 tsp

turmeric-1/4 tsp

maida-3-4 tbsp

salt

Preparation

Crush the rice, add egg and other ingredients into it, mix well and make a dough, and make a finger shape , then fry it.

Varutharacha chemmeen curry

Ingredients

chemeen /prawns 250g

coconut oil 3 tbs

curry leaves

onion half

ginger 1 inch

tomato half

red chilli powder 1 and 1\2 tsp

coriander powder 1 tsp

turmeric 1\4 tsp

water 1 cup

garam masala 1\2 tsp

For seassoning

small onion 3 nos

curry leaves

coconut oill 2 tsp

Preparation

Heat oil in a claypot, add curry leaves, allow it to crack, next add chilly, onion, ginger and garlic, saute it well. Next heat  masalas in an another pan mix well and add to mixie jar along with tomato, and grind into fine paste and add this paste to claypot, add more water, allow it to boil, next add prawns, cook it well for 15 minutes, now add garam masala, mix it well. Roast shallots and curry leaves in coconut oil and add to curry.

Mutton Roast

Ingredients

For Marination

Mutton : 1 kg

Chilli powder: 2 tsp

Ginger garlic paste : 3 tsp

Coriander powder : 2 tsp

Garam masala : 3/4 tsp

Turmeric powder :1tsp

Curry leaves : 2-3 sprigs

Coconut oil : 3tbsp

Lemon juice : one full lemon

Green chilli : 2

Pepper powder : 1tsp

Salt : as per your taste

Mix all ingredients to mutton and marinate it for 2 hrs in refrigerator.Now pressure cook mutton with 3/4 cup of water up to 4 whistles.

For masala preparation
Onion : 5 big
Coconut pieces : 10-12
Chilly powder: 2 tsp
Ginger garlic  crushed : 3 tbsp
Coriander powder : 2 tsp
Garam masala : 3/4 tsp
Turmeric powder :1tsp
Curry leaves : 2-3 sprigs
Coconut oil : 7tbsp
Lemon juice : one full lemon
Cumin powder : 1/2 tsp
Green chilly : 4 Tomato : 1
salt : as per your taste

Heat a pan, add coconut oil .When oil is hot add coconut pieces and saute until it slightly turns golden in colour. Now add ginger garlic and saute until golden brown.to this add thinly sliced onion and mix well until onions are golden in colour. Add curry leaves and green chilly and mix well.Now add turmeric powder, chilly powder,coriander powder,garam masala, pepper powder and saute well.Now add tomato  and saute until it is fully cooked.Now add the cooked mutton and reduce the gravy in high flame.When oil starts oozing out move the mutton pieces to the corner of the pan add coconut oil, 1 tsp pepper powder, 1/2 tsp fennel seeds,1/2tsp garam masala and saute.Now combine everything and saute for 10-12 minutes until mutton is fried.Add 1/2 tsp cumin powder ,a sprig of curry leaves and 2 green chilly for extra flavour. Delicious mutton roast is ready now

Soft paalappam

Ingredients

Raw rice-1 cup

cooked rice-1/4 cup

grated coconut-1/2 cup

dried yiest-1/2 tsp

salt

sugar

lukewarm water

Preparation

Wash rice and soak for 4 hrs, then grind rice into fine batter with cooked rice , yiest , salt , sugar,and coconut usning lukewarm water. then rest the batter for 10 minutes. Now you can make soft appam.

Traditional Ilayada

Ingredients

rice flour-2 cup

water-1 1/4 cup

salt-3/4 tsp

oil-1 tsp

grated coconut-2 cup

jaggerry-1 1/2 cup

water-1/2 cup

ghee-2 tsp

cumin-1 pinch crushed

cardamom-2

banana-1-2

Preparation

For filling, heat a pan, add ghee, once it melts add coconut, cook until it become yellow color, next add jaggerry juice, cumin, cardamom and ghee, mix well and keep aside.

For dough, add rice flour in a bowl, add salt, mix well, then add hot water, mix well and make soft dough.

Take a banana leaf, spread rice dough over the leaf, add filling, then fold the leaf from 1 side, and cook in a steamer.

Heat a pan, add coriander, fennel, dry red chilly, gram dal and tuvar dal, roast this well until change the color then grind with roasted peanut into fine powder. Soft unniyappam

Ingredients

raw rice-2 cup

cumin-1 tsp

cardamom-5-8

jaggerry-300 gm

water-2 1/2 cup

maida-1 cup

banana-4

coconut pieces

ghee

black cumin seeds

salt-1 pinch

baking soda-1/4 tsp

Preparation

Soak rice for 4 hrs, then grind without water. Add cumin and cardamom in rice for grinding. Melt jaggerry and add to the rice flour, add 1 cup of maida, mix well, add banana paste, after mixing well rest for 6-8 hrs. Add black cumin, roasted coconut pieces, salt and baking soda, mix well and make soft unniyappam.
