Sweet Pidi kozhukkatta

Ingredients

rice flour-1 cup

salt-1/4 tsp

Boiling water- 1 1/2 cup

oil-1 tbsp

jaggerry-1/2 cup

water-3 tbsp

grated coconut-3/4 cup

dry nuts

cardamom powder-1/4 tsp

Preparation

Add rice flour in a bowl, pour hot water and salt into it, knead it into a soft dough, then make small balls, and steam cook this for 15 minutes. Heat a pan, add jaggerry with water, once it melted ,add grated coconut, dry nuts chopped , and cardamom powder, mix well, now add cooked kozhukkatta, and mix well, then cover the pan, cook for 5 minutes in low flame. Now turn off flame.

Wheat noodles home made

Ingredients

wheat flour-1 cup

egg-1

salt

water

carrot chopped

garlic

onion

capsicum

spring onion

soya sauce

vinegar

tomato sauce

red chilly sauce

green chilly sauce

turmeric

garam masala

coriander powder

chilly powder

cumin powder

pepper powder

Preparation

Make atta dough by using egg, water and salt, rest the dough for 1/2 hrs. Next mix all sauces in a bowl, same all masalas mix together in another bowl.

Add the dough to a idiyappam press, then press to boiling water, cook for 1 minute then transfer to cold water, and strain out from water.

Heat a pan, add oil, next add all vegetables, then saute it for 1-2 minutes, now add salt, cooked noodles, sauce, pepper powder and mix it well. Serve with hot.

Black forest cake

Ingredients

maida-3/4 cup

cocoa powder-1/4 cup

baking powder-1 tsp

baking soda-1/4 tsp

oil-4 tbsp

vinegar-1 tsp

vanilla essance-1 tsp

powdered sugar-1 cup

egg-4

whipping cream- 1 1/2 cup

Dark compound( grated)

sugar syrup

Preparation

Strain all dry ingredients to a bowl( strain atleast 3 times). Break eggs into a bowl, beat well, add vinegar, powdered sugar, sunflower oil, and vanilla essence, then beat well, next add maida mix , then mix well and make a perfect batter, and pour the batter to a mould then bake cake. Cut the cake into 4 layer.. Beat whipping cream well. Take a cake top, put 1 layer of cake, pour sugar syrup , next spread whipping cream above it, then place next layer, repeat the same for all layers. Finally cover the cake with whipping cream, decorate cake with dark compounds, rest the cake in refrigerator for 1 day , then you can cut it.

Rava uthappam

Ingredients

semolina-1 cup

curd-1 cup

salt-1/2 tsp

water

onion

carrot

green chilly

tomato

coriander leaves

Preparation

In a bowl add semolina , curd, salt and 2 tbs p of water, mix well, then rest for 20 minutes. Add more water, make a perfect batter. Make uthappam by using vegetables.

Potato cutlet

Ingredients

boiled potato

boiled carrot

green peas cooked-1 tbsp

onion

salt

turmeric

garam masala

bread crumbs

Preparation

Mash potato and carrot well, next add other ingredients one bye one, mix well, then make perfect shape, dip all cutlet in egg mix and coat in bread crumbs, then shallow fry these cutlets.

Jackfruit seed laddu

Ingredients

Jaggerry-75 gm

water-1/4 cup

peanut-50 gm

jackfruit seed-100 gm

ghee

raisins

grated coconut

sugar-2 tbsp

Preparation

Lets beging the cooking with melt jaggerry, and keep aside, next roast peanut and chakkakkuru separately. Add these to a mixie jar. and grind into a slightly fine powder. Heat a kadai, add ghee, then add kismis and roast it well, transfer this to a plate and add chakkakuru powder to the kadai, mix well and cook in low flame, now add grated coconut and kismis, and sugar, then turn off flame, next add melted jaggerry and mix well, then make small balls.

Mysorepak

Ingredients

chick pea-1 cup

ghee-1/4 cup

sugar-3/4 cup

Preparation

Dry roast chickpea, then grind into fine powder, take 3/4 from it and roast again, and keep aside. Prepare sugar syrup for it, add gram flour into the sugar syrup, mix well, then add ghee into it, stir continously until it become thick and non sticky, then set in a plate. Once it become cool, cut into desired shape.

Kuzhalappam ( Ilavarasi special)

shallots

sesame seeds

garlic

boiling water

cumin

grated coconut

Preparation

In a bowl add all ingredients into it, then knead it by using hot water, and make a soft dough. Take a plastic wrap, put small ball shaped dough, and roll it over the wrap, then roll this by using a pipe, then remove the pipe, and fry these in hot oil.

Heat oil in a kadai, add some spices, and roast it well, next add onion, saute well, next, salt, green chilly, ginger, garlic and curry leaves, mix well and saute again, then add all masalas, and cook until the raw smells gone and now add coconut milk into it, mix well and finally add boiled egg.

Caramalise sugar in a kadai, then add milk and mix well, once the sugar melt completely, turn off flame. Beat eggs well, then add egg mix into caramal mix( cooled), then mix with a whisk, and transfer to a cake mould, then cook in a steamer.
