Drum stick roast

Ingredients

drumstick – 3

garlic -10

tomato-1

ginger- a small piece

green chilly-3

onion-3

red chilly powder-1 tbsp

coriander powder-1/2 tbsp

turmeric-1/4 tsp

garam masala-1/2 tbsp

pepper powder-1/2 tsp

oil

curry leaves

Preparation

Cook drumstick in 1 cup of water and required salt. Heat another pan add coconut oil, green chilly, ginger, garlic, curry leaves, onion, and tomato , then saute well, next add all masalas one bye one, saute until raw smell out, add water, salt, finally add cooked drumstick, mix well and cook some more times, add some coriander above it.

Bread snacks

Ingredients

bread slices-8-10

egg-2

gram flour-1 cup

water- 1/4 cup

chilly powder-1/2 tsp

pepper powder-1/2 tsp

capsicum chopped- 1/4 cup

onion-1/4 cup

tomato-1/4 cup

coriander leaves

Preparation

Add eggs, gramflour and required water in a mixie jar, blend well and transfer to a bowl, add chilly powder, pepper powder, vegetables and salt, mix well, dip the bread slices in to the mix and fry well.

Easter special vattayappam

Ingredients

Raw rice/ idly rice -1 cup

rice flour-2 tbsp

water-1/2 cup

grated coconut-1 cup

sugar-1/2 cup

cardamom-1/2 tsp

cumin powder-1/2 tsp

yiest-1/4 tsp

salt

water

vanilla essance-1/2 tsp

Preparation

In a pan add rice flour and water , mix well and turn on the flame, stir continously, once it becomes thick turn off flame and keep aside. Add soaked raw rice in a mixie jar, add coconut, rice flour mix,sugar, cardamom, cumin, yiest, salt and water, then grind into smooth batter, rest for 6-8 hrs, finally add vanilla essance and mix well, steam in a round shaped tin.

Broken wheat snack

Ingredients

Broken wheat-1/2 cup

egg-4

milk-1/4 cup

oil-4 tbsp

salt

baking powder-1/4 tbsp

wheat flour-1/4 cup

garlic chopped-6

grated carrot-2

cabbage-250 gm

spring onion-150 gm

brocoli cooked-100gm

cheese

Preparation

Soak broken wheat in hot water for 1/2 hrs. In a bowl add eggs, milk, oil, salt  wheat flour, and baking powder then mix well and keep aside. Heat a pan add oil, garlic, and athor veggies one bye one , saute well, next add broken wheat, and 3/4 of the egg mix into it and cook well. Then take a glass tray, grease with butter, put the veg mix , spread some cheese above it, again veg mix , level it, then bake for 5 min, and pour the egg mix above it , then bake again.

Banana cake

Ingredients

riped banana( robust)-3

sugar-3/4 cup

oil-1/2 cup

wheat flour-1 1/4 cup

baking powder-1 tsp

baking soda-1/2 tsp

cashews and raisins

Preparation

Add banana , sugar, and oil in a mixie jar, grind into smooth paste, transfer to a bowl, add wheat flour, baking powder, baking soda into a strainer, then mix with a whisk, add raisins and cashew nuts into it, then pour the batter to a cake tin, add some chocolete chips on the top of the cake, then bake it well.

Ladies finger sambar

Ingredients

Preparation

In a cooker add dal, water, turmeric, tomato, and green chilly then cook for 2-3 whistle, and keep aside. Heat a pan add oil, onion, curry leaves, garlic and okra, then saute well,  add cooked dal into it, next add salt and tamarind juice. Slightly roast all masalas add add into the curry, boil well. Finally temper the sambar with mustards, red chilly, and asafoetida.

Chickpea halwa

Ingredients

chickpea-3/4 cup

jaggerry-1/2 kg

coconut milk-1 cup

cardamom

oil- 1/2 cup- 3/4cup

cashews roasted

Preparation

Soak chickpea for 8 hrs, grind well, then strain this well, add required water, rest for 1 1/2 hrs, then remove the water from starch , add this to a pan,  melt jaggerry and add into chickpea puree, then add coconut milk, cook this mix and stir continously,  add cardamom, then add oil frequently until it become non sticky and thick, then add cashews and mix well, transfer to a container and allow it to cool before cutting it.
