Amrutham podi halwa

Ingredients

Amrutham podi-1 cup

water-1 cup

cardamom powder-1 tsp

milk-1 cup

corn flour/maida-2 tbsp

salt-1 pinch

sugar

ghee-4 tbsp

Preparation

Take a bowl , add amrutham podi, water and milk, then strain this mix 1-2 times, add corn flour into it, add salt, required sugar and mix well, then pour this mix into a pan, stir continously , after some times add ghee, mix again, continue this process until it becomes non sticky, finally add dry nuts and mix well, then pour this in a mould, allow it to cool.

Kozhukkatta( oshana special)

Ingredients

for filling

Jaggerry

water-3 tbsp

coconut-1 cup

cardamom-1/4 tsp

cumin powder-1/4 tsp

salt

ghee

For dough

water-1 cup

salt

coconut oil-1/2 tsp

sugar-1 tsp

rice flour- 1 cup

Preparation

Melt jaggerry with 3 tbsp of water, add grated coconut, add cardamom powder, cumin powder and salt, finally add ghee and mix well. Boil 1 cup water in a pan, add salt, coconut oil, add 1 tsp of sugar, next add rice flour and mix well , make soft dough, divide into small balls, fill with coconut mix, cook in a steamer.

Ingredients

urad dal-1 cup

raw rice-3 cup

Preparation

wash urad dal only one time, wash rice 3-4 times, then soak for 4-5 hrs. Grind well by using soaked water, then mix by using hand about 10 min. Rest 8 hrs for fermentation. Then make soft idly

Classic mojitto cool drink

Ingredients

lemon-1 big

ginger- small piece

green chilly-1

mint leaves

sugar

salt

chilled water

sabja seeds

Preparation

Add all these ingredients in a mixie jar, blend well. Pour in a serving glass, add some kas kas, you can add soda water instead of water.

Meat cutlet/ meat cheese balls

Ingredients

beef-200 gm( cooked with turmeric , pepper and salt)

potato-2( mashed)

onion-1

ginger

green chilly

garlic

coriander leaves

turmeric powder-1/4 tsp

pepper powder

coriander powder

red chilly powder

garam masala

meat masala

egg white-2

cheese

bread crumbs-6 breads

salt

oil

Preparation

Heat oil in a pan , add chopped ginger, garlic, green chilly, onion, then saute well, next add masalas, then cook another few minutes, next add beef and potatoes, mix well, finally add coriander leaves, and turn off the flame. Take small portion of the mix, make shape like cutlet, then dip in egg mix and coat in bread crumbs.

For cheese balls, take beef mix , fill with cheese and make ball shape, then dip egg mix and coat with bread crumbs

Fry in hot oil.

Preparation

In a bowl , add grated carrot, green chilly, coconut, curry leaves and salt, mix well. Heat a pan , add oil, mustards, dry red chilly, next add carrot mix, cook well.

Intri appam(pesha appam)

Ingredients

raw rice-2 cup

urad dal-2/3 cup

cumin-3 tsp

garlic- 1/4 cup

shallots-1/4 cup

salt

mustards

oil

coconut -2( 1 for grinding, 1 for roast)

water

Preparation

Soak raw rice for 8 hrs, roast urad dal then soak for 8 hrs. Add coconut , cumin, garlic, and shallots in a mixie jar, grind slightly, then keep aside. Grind rice and urad dal. Cut coconut into small pieces. Heat oil in a pan , add coconut , roast until the color become golden brown, then transfer to a plate, next add mustards, shallots, roast well, then allow it to cool, then add all ingredients together, mix well. Then cook in a non stick pan

red cow beans(vanpayar)-250 gm

tamarind- amla size

chilly powder-2 tsp

coriander-2 tsp

turmeric-1/2 tsp

mustards-1/2 tsp

hing-1/4 tsp

curry leaves

salt

water

oil

Preparation

Soak beans in 4-5 hrs. Heat oil in a cooker, add mustards, onion, garlic, curry leaves, then saute well, next add masalas, next tomato, then add beans and mix well, next add water and cover the cooker and cook, finally add hing and tamarind .

Pesaha appam, pesaha paal

Ingredients

for appam

Rice flour(puttupodi)- 1 cup

Urad daal powder-1/4 cup

coconut-1 cup

cumin-1 tbsp

garlic- 1 tbsp

salt

water

for milk

coconut – 1 full coconut

water

dry ginger- 2 pieces

cumin

jaggerry-3/4 cup

rice- 3 tbsp

 

preparation

In a mixie jar add, garlic, cumin, and coconut and blend well, then transfer to a bowl, then add rice flour, and urad dal powder , mix with hand and knead well, take smalls from it, cover with a banana leaf, and steam well. Appam is ready.

For milk

Take 1st and second milk from coconut. Then add cumin and dry ginger in a mixie jar, blend well, add this to jaggerry, roast rice and make fine powder. Cook 2nd coconut milk in a pan, add jaggerry, next add roasted rice powder, and stir well, finally add thick coconut milk.

Carrot halwa

Ingredients

carrots grated-4 1/4 cup

ghee-4 tbsp

milk-3 cup

sugar-1 cup

cardamom powder

cashew and raisins

Preparation

Heat a pan , add ghee , then add carrot , and roast it for 10 min, next add milk, allow it to boil, then add sugar and cardamom, stir continously to become non sticky, next add roasted cashew and raisins, serve with some nuts and ice cream.
