Easy evening snack

Ingredients

maida-1 cup

curd-2 tbsp

sugar

salt-1 pinch

turmeric-1/4 tsp

water

baking soda-1 pinch

Preparation

Add all these ingredients in a bowl, mix well to become a thick batter. Heat oil in a pan. pour the batter by using your hand, cook well.

Wheat halwa(instant)

Ingredients

wheat flou-1 glass

water-4 glass

sugar-1/2 glass

water-2 tsp

cashews-100 gm

ghee-1/2 glass

sugar-1 1/2 glass

cardamom powder-1 tsp

Preparation

mix water and wheat flour, then drain this and remove dusts, mix again, caramalise sugar and set aside. Roast cashew nuts in ghee and keep aside,then add wheat flour mix into it, stir continously, add ghee frequently, after 10 minutes add sugar caramel, next add sugar, next cardamom powder, next cashews, cook it again, once it become thick and non sticky turn off flame, transfer this in a mould, cut it after cooled.

Roasted popcorn

Ingredients

butter-3 tbsp

salt

turmeric

Preparation

Heat a pressure cooker, add butter, salt,and turmeric, once it melts, add dried corn into it, then cover the cooker, keep the flame in low to medium, you can hear poping sound, when the sounds end, turn off flame and serve it.

Varutharacha egg curry

Ingredients

Eggs – 6 boiled

Coconut oil – 1 tsp

Mustard seeds – 1 tsp

Onion – 1 (big)

Green chillies – 2

Curry leaves

Tomato – 2 (small)

Roast & Grind :

Coconut oil – 1 tsp

Shallots – 4-5 (big)

Cumin seeds – 1/2 tsp

Fennel seeds – 1/4 tsp

Cinnamon stick

– Cloves – 4

Cardamom – 3

Coconut – 1 cup

Ginger – 1 big pcs

Garlic pods – 8

Turmeric pdr – 1/2 tsp

Coriander pdr – 2 tsp

Red chilly pdr – 1 tsp

Pepper pdr – 1 tsp

Egg masala pdr – 1 tsp (optional)

Preparation

Roast and grind the listed items. Heat a clay pot, add oil, mustards,onion,green chilly and curry leaves, saute well, next add grinded masala with required water, cook until separates oil, now add boiled eggs, cook for 1-2 minutes, finally add some curry leaves.

Banana snack(sughiyan)

jaggerry grated-3 spoon

cardamom , dry ginger powder

wheat flour-1 cup

rice flour-2 spoon

Preparation

Heat coconut oil in a pan, add coconut, roast it to turn aromatic, next add jaggerry, cardamom powder and banana cook until it become thick, then turn off flame and allow it to cool. Prepare a thick batter with wheat flour,salt,rice flour and turmeric. Once the banana mix cooled, take small portion from it and make round shape,dip in the batter,then cook in unniyappam pot.

Preparation

Grind ingredients in the list, then heat oil in a claypot, add the grinded ingredients, saute well,next add green chilly,onion, salt , saute for 3 minutes,next add tomatoes, once it become soft add masalas, mix well,next add crab,mix it well, add salt,tamarind juice and curry leaves, cook it well. Finally add roaster shallots, dry red chilly and curry leaves with hot oil.

Sadya special Inchikkari

Ingredients

ginger-200 gm( cut into thin round shape)

shallots-10

chilly-2

jaggerry

curry leaves

tamarind-lemon size

mustards

dry red chilly

chilly powder-1 1/2 tsp

turmeric-1/4 tsp

fenugreek powder- 1/4 tsp

coriander powder-1/2 tsp

 

Preparation

Heat a kadai, add coconut oil, add ginger, roast it until it become crispy, then transfer to a mixie jar. In the same oil, add shallots and chilly roast it until it turn golden color,then add curry leaves, also transfer to mixie jar, just dry grind this. In the same oil, add mustards. dry red chilly, curry leaves, next add masalas, and mix it well, now add tamarind juice, saute it well,next add hot water ,salt , and jaggerry, allow it to boil, next add grinded ginger, stir well , cook until it become thick.

Preparation

Boil 1 cup of water in a pan, add ingredients for masala, cook 5 minutes, after cooled, grind well. Heat a clay pot, add oil, fenugreek,dry red chilly , curry leaves and onion, saute it well, next add masala, saute 2-3 minutes again, next add salt and second coconut milk, allow it to boil,next add fish, cook well, then add thick milk and turn off flame,finally add some raw coconut oil.

Preparation

Heat oil in a pan, crack mustards, add dry red chilly and curry leaves, roast it, next add onion and chilly saute it well, then add water, once it starts boiling, add salt and corn flour , mix it and cook well.

Yellow tea rusk

Ingredients

maida-2 cup

salt-1/4 tsp

sugar-1/2 cup

yiest-1 tsp

cumin seeds-1 tsp

butter-2 tbsp

yellow food color

luke warm milk

tutty fruty

Preparation

In a bowl , add maida,sugar,salt,yiest and cumin seed, mix all well. Add yellow food color to butter, mix it and add into maida, knead it well by using milk, knead atleast 5 minutes, add tutty fruity, knead again, grease the dough and cover it, rest this for 2 hrs. Divide the dough into 4 parts, roll it , then fold it, rest 1/2 hrs more, then bake this , cut the bread into slices again bake this.
