Beef Dry Fry

Ingredients

Beef – 1 kg

Turmeric Powder – ½ + ¼ Teaspoon

Chilli Powder – ½ Tablespoon

Crushed Pepper – 1 Teaspoon

Salt (ഉപ്പ്) – 1 + 1¼ Teaspoon

Water – ¼ Cup (60 ml)

Ginger-Garlic Paste – 2 Tablespoons

Corn Flour – 3 Tablespoons

Red Chilli Flakes – 1 Tablespoon

Kashmiri Chilli Powder – 1½ Tablespoon

Garam Masala – ½ Teaspoon (OR) Meat Masala – 1 Teaspoon

Crushed Fennel Seed – ½ Teaspoon

Lime Juice / Vinegar – 1 Tablespoon

Cooking Oil – For deep fry

Green Chilli – 5 Nos

Curry Leaves – 4 Sprigs

Preparation

Cook beef with masalas, salt and water in a pressure cooker.After cooling it cut it into long slices.Marinate beef with, ginger garlic,corn flour,chilly flakes,kashmiri chilly powder,turmeric, garam masala, crushed fennel , lemon juice ,salt and beef stock, mix it well and rest for 1/2 hrs. Heat oil in a pan, fry beef in this oil.

Special Fish curry

Ingredients

coconut-1 cup

shallots-3

chilly powder-2 1/2 tbsp

turmeric -1/2 tsp

coriander powder-1 tbsp

fennel-1/4 tsp

tomato

curry leaves

green chilly

salt

coconut milk-2 cup

pot tamarind

coconut oil

fennel-1/4 tsp

shallots chopped

curry leaves

Preparation

Grind coconut with masalas and shallots.Take a clay pot add tomato, green chilly and curry leaves, mix well, then add coconut paste, required water and salt, mix well, then add coconut milk and tamarind, boil it well then add fish, cook it well. Finally add fried onion and fenugreek into it.

Masala Peanut

Ingredients

Peanut-2 cup

garlic paste-1 tsp

gram flour-1/2 cup

rice flour-1/4 cup

turmeric-1/4 tsp

kashmiri chilly powder-2 tsp

chilly powder-1 tsp

hing-1/2 spoon

fennel powder-1/4 spoon

curry leaves

oil

water

salt

Preparation

Wash peanut, then add garlic paste, salt and turmeric, after mixing well add other masalas and flours, mix well,then add water with a spoon, mix it well. Heat oil for frying, add some curry leaves, after frying it keep aside, then fry peanuts, finally mix all, add some chilly powder, mix all well.

Chana Masala Curry

Ingredients

garlic-5-6

ginger

water

coriander powder-1 tsp

Preparation

Cook soaked chana with onion, garlic,ginger, chilly, salt and water in  a pressure cooker. Mix masalas in a bowl.Heat coconut oil in a tawa, add onion, saute it well, then add masalas, mix well, then grind it into fine paste, then add to a pan, add water, then add cooked chana, boil it well, cook until the gravy become thick.

Dates Halwa

Ingredients

dates-200 gm

cashew nut-5-6

ghee

corn flour-2 tsp

water-1/2 glass

Preparation

Soak dates , then grind it into fine paste. Fry cashew nuts in ghee and keep aside. Add dates paste into the pan, stir well, add more ghee, then add corn flour , water mix into it, stir it well, add ghee again, cook it until it become thick and non sticky, add cashew nuts, mix it well, then transfer this to greased tin, allow it to cool, then cut it into desired shape.

Uzhunnuvada

Ingredients

urad dal-200 gm

water

shallots-7

green chilly-4

ginger

curry leaves

baking soda-1/2 tsp

salt

oil

crushed pepper

Preparation

Soak urad dal for 4 hrs, then grind it without water, add chopped veggies, crushed pepper, salt and baking soda, mix well, heat oil in a pan, take vada mix put hole, add to oil, fry well.

Instant Unniyappam

Ingredients

wheat flour-1 1/2 cup

semolina-1/2 cup

banana-4

cardamom powder-1/2 tsp

cumin powder-1/2 tsp

dry ginger powder-1/2 tsp

baking soda-3/4 tsp

salt-1 pinch

jaggerry-1 cup

coconut pieces-1/4 cup

oil for frying

Preparation

Mix all dry ingredients in a bowl. Melt jaggerry with water, then add to the bowl, mix well, add coconut pieces and banana paste, after mixing well, make spongy unniyappam.

Easy and tasty Chicken Biriyani

Ingredients

Chicken-1/2 kg

for marination

ginger garlic paste-1 tsp

curd-2 tbsp

chilly powder-3/4 tsp

coriander powder-1 1/2 tsp

Preparation

Marinate chicken with the above said masalas, then rest 15 minutes. Heat ghee in a pan, add spices, green chilly, and chopped herbs, saute it well, then add marinated chicken, add some water and cook it about half, now add rice and water,mix it well , add salt and lemon juice, then cover the lid and cook well, biriyani is ready.

Mango Cheese Cake

Ingredients

Arrowroot biscuit- 75 g

Butter –30-35 g

Cream cheese– 150 g

Condensed milk- 1/2 C

Mango puree –1/2 C

Whipping cream- 1/2 C

Gelatin — 1 1/2 tsp

Vanilla essence– 1 tsp

For Sauce

Mango puree– 1/2 C

Corn flour –1/2 tsp

Sugar— 1 1/2 tbsp or to taste

Preparation

For biscuit base, add biscuit to mixie jar, add butter,and grind it into fine powder, transfer this into a greased mould, set it well, then keep in fridge.For cream cheese layer, take gelatine, add water, boil it to melt gelatine.Beat whipping cream.Then beat cream cheese, then add condensed milk and mango puree into it, beat it again, add melted gelatin, beat again, then add whipping cream and vanilla essance, then fold it with a spatula, then pour it above the biscuit base, keep in fridge for 4 hrs. For sauce, add mango puree, corn flour, and sugar, make it a perfect sauce. Take the cake, demould it, then pour sauce above it, and spread over the cake.

Carrot sweet

Ingredients

carrot-2

gram flour-1 cup

sugar-1 1/2 cup

water-3/4 cup

ghee- 1 1/2 cup

Preparation

Strain gram flour once, then heat it in a tawa until it turn aromatic, then mix it with melted ghee and oil mix.Melt sugar in another pan, add grinded carrot, mix well, then add gram flour mix, mix all well and stir continously, add ghee frequently, cook it to become thick and non sticky, then transfer it to a greased mould, level it and keep aside.Once it cooled, cut it into desired shape.
