Tapioca Vada

Ingredients

tapioca-1/2 kg

water

salt

rice flour-3 tbsp

onion-2

green chilly-4

ginger

curry leaves

coriander leaves

salt

water -small quantity

oil for frying

Preparation

Cook tapioca with salt and water in a pressure cooker, then remove water and mash it well in a bowl, add salt, chopped vegetables, rice flour and some water, knead it well and make a soft dough, make vadas out of this dough and fry in hot oil.

AL-FAHAM FISH FRY

Ingredients

fish -1/2 kg

red chilly powder-1 tsp

coriander powder-2 tsp

turmeric-1 tsp

chilly flakes-2 tsp

kashmiri chilly-2 tsp

pepper powder-2 tsp

ginger garlic paste-2 tsp

oil-1/4 cup

salt

water-1/4 cup

shallots chopped

green chilly

curry leaves

Preparation

Take fish in a bowl, add masalas, salt, lemon juice, oil and water, marinate it well and keep aside for sometime. Heat oil for frying, add fish fry both sides well, then turn off flame and transfer it to a plate, in the same pan add chopped shallots and green chilly, fry well and add above the fish.

Bombai Halwa

Ingredients

corn starch-1 cup

water-2 1/2 cup

orange foor color-2 drops

sugar-1 1/2 cup

water-1 cup

cardamom-1/2 tsp

lemon juice-1 tsp

ghee

chopped nuts

Preparation

Mix corn starch and water and remove lumps, add food color, mix well and keep aside. Add sugar and water to a pan, and heat it well, add cardamom powder, let it boil, now add corn flour mix into it, stir it well, once it become thick add ghee, continue stirring, add more ghee until it become non sticky and thick, then add chopped nuts, mix well, then transfer the mix to a container, level it with a spoon, and allow it to cool, then cut it and serve it.

Fish Egg Fry

Ingredients

fish egg-150 gm

first marination

turmeric powder 2tsp

ginger garlic paste 2tsp

salt as needed

black pepper powder 1/2 tsp

second marination…

Kashmeeri chilli powder 2tsp

salt as needed

oil 1tsp

turmeric powder 1/4 tsp

Preparation

In a mixie jar add garlic, ginger and chilly, make fine paste, then add it above the fish egg, add turmeric, salt and pepper powder, marinate it well and keep aside for 1/2 hrs. After that, cook the fish by add water, then cut it into small pieces, then add chilly powder, salt, turmeric and coconut oil, marinate it again, after rest it 1/2 hrs again, fry it in hot oil.

Milk-1 1/2 glass

Cardamom-1

water-1 1/2 glass

Preparation

Boil water in a pan, add cardamom, ginger crushed, and let it boil for a few minutes, add tea powder, boil it for 2-3 minutes, now add milk, boil it for another 3 minutes, then turn off flame, and strain it to a cup, add sugar, mix with another cup, then have the tea.

Heat coconut oil in a pan, add ginger garlic paste, saute it well, next add shallots chopped, saute again for 2 minutes, now add onion, saute until it become soft, next add masalas, mix it , add tomato and curry leaves, saute until it become soft, now add coconut, mix it again, now add cooked chicken pieces, crush it with spoon, and mix masala, then turn off flame. Then cook putt as usual with chicken masala.

Overripe Banana pudding

Ingredients

Sugar – 4 tablespoons

Banana – 2

Egg -2

Cardamom – 3

Milk – 200ml

Preparation

In a bottom thick pan, add sugar and caramelise it, then transfer it to the pudding tray,then spread it gradually.Take a mixie jar, add banana, eggs, sugar and cardamom, grind it to fine paste , add milk, blend it well, then pour it to the pudding tray, then cook it in a steamer.

Boil milk in a pan, add sugar and corn flour, cook it well, after cooling it, transfer it to a mixie jar, add milk powder and vanilla essence, then blend it well, now transfer it to a container, then store in freezer for 8 hrs, tasty ice cream is ready.
