Pumkin paayasam

Ingredients

pumkin-1 kg

sago rice-1/4 cup

melted jaggerry-1 1/2 cup

cashew, kismis

cardamom powder-1 tbsp

rice flour-1 tbsp

Thick coconut milk-1 cup

second extract of coconut milk-1 1/2 cup

ghee

Preparation

Cook pumkin and sago separately. Heat a pan add ghee and roast cashews and kismis, and keep aside, then add mashed pumkin into the pan, next add jaggerry, next cooked sago rice and mix well, then add second coconut milk, rice flour, cook well, and stir continously, finally add coconut milk, cashew, kismis and cardamom powder.

Honey cake

Ingredients

for cake base

Maida-1/2 cup

baking powder-1/2 tsp

baking soda- a pinch

sugar-1/4 cup

egg-2

vanilla essance-1/2 tsp

sunflower oil-1/4 cup

honey-2 tbsp

for caramalised almonds

almonds-10-12

sugar-2 tbs

butter-1/2 tsp

for Honey syrup

sugar -2 tbsp

water-1/2 cup

honey-3 tbsp

yellow food color

other ingredients

whipping cream -1 cup

white compound-300 gm

Preparation

Mix dry igredints together and strain 3 times, blend egg with vanilla essance, sunflower oil, honey and powdered sugar, then mix all, and make a perfect cake batter. then cook it in a pre heated pan.

Roast badam and crush it, then spread with caramalised sugar, and keep aside.

For making honey syrup, boil sugar, water and honey together.

Beat whipping cream

For cake setting, cut the cake into 3 layers, then soak in honey syrup, then place 1st layer in a cake top, then spread some honey syrup, next apply whipping cream, and spread crushed badam, repeat this for second layer, finally cover the cake with whipping cream. Keep cake in fridge.

For decoration, take a bubble wrapper, cut like the cake shape, then melt white compound with yellow color, then fill this in the wrap, and place this above the cake, then keep the cake in freezer for 10 minutes, then remove the wrap.Make honey bee shapes, and put this over the cake. Finally pour honey above the cake.

Watermelon drink for ramadan

Ingredients

Watermelon

sugar-4 tbsp

milk-1 1/2 cup

sabja seeds- soaked

Preparation

Remove seeds from watermelon and mash with a whisk, add sugar, mix again, then add milk, and sabja seeds, mix well, and serve it.

Ifthar/ summer drink

Ingredients

Milk-1 ltr

sugar-1/2 cup

custard powder-2 tbsp

kaskas-1 tbsp

almonds-10

apple

carrot

banana

ice cubes

Preparation

Boil milk with sugar, add powdered almonds, next add custard powder ( make a paste), and stir well, cook for 1 minutes and turn off flame, then refrigirate it, then add grated apple, kaskas, banana chopped, carrot grated, and ice cubes mix all well and serve it.

Nadan unniyappam(instant)

wheat flour-1/2 cup

semolina- 1 1/2 tbsp

jaggerry-400 gm

water-1 1/2 cup

sugar-1 1/2 tbsp

cardamom-4

banana-1

baking soda

Preparation

Roast coconut pieces in ghee, keep aside. Mix all dry ingredients together, then melt jaggerry and add into rice flour mix, then mix well, add more water and make a perfect batter, then add sugar and cardamom in a mixie jar, grind well and add into the batter, next add banana smoothie, and mix well, next add coconut pieces, next baking soda and mix well, and fry unniyappam in hot oil.

Iftar special juice

Ingredients

ice cubes-3-4

freezed banana-1

cooked carrot-2

sugar-3 tbsp

chilled milk-1 cup

Preparation

Add all these ingredients in a mixie jar, blend well, then serve in a glass, put some almonds on top.

Meen mulakittath

Ingredients

Sardine fish-1 kg

Preparation

In a clay pot, saute garlic, shallots, ginger, chilly, and  curry leaves, then add kashmiri chilly, pepper powder, and turmeric, next tamarind with juice, add more water and salt, once it boil add fish, cook well. Finally temper with above said ingredients.

Pink paalada

Ingredients

milk-1 ltr

ada-1/2 cup

water-1/2 cup

sugar-1 cup

ghee-1 tsp

salt-1 pinch

Preparation

Boil milk with water, now add 1/4 cup sugar and ghee, cook for 15 minutes, stir well, then add 1/2 cup sugar again, cook another few minutes. In another pan boil water, add ada and turn off flame, rest this for 15 minutes, then remove from water and add to the milk, add salt, cook for 15 minutes.

Tharikkanji (ifthar special)

Ingredients

Milk-1 ltr

water-1 cup

ghee-2 tbsp

semolina-5 tbsp

cashew

raisins

shallots-4

coconut pieces

salt- a pinch

cardamom-3-4

vermicelli-2 tbsp

Preparation

Mix water and milk and boil it, next roast cashews, raisins, shallots , semolina and coconut in ghee , set aside. Add cardamom, salt into boiled milk, next add semolina, and stir well, then add vermicelly, cook well, once it become thick consistensy, add roasted ingredients into it.

Masala dosa( restaurant style)

Ingredients

dosa batter

green peas

green chillies-2

ginger-small piece

curry leaves

coriander leaves

bengal gram-1/2 tsp

mustard

red chillies-3

pepper-1/4 tsp

salt

oil

Preparation

Chop all vegetables, boil potato with salt, and turmeric. Heat oil in a pan, add mustard, gram, curry leaves, red chilly, and ginger , fry well, then add onion, saute well, next add green chilly, green peas, carrot and salt, cook this well, next add mashed potato, and pepper powder, add some water and mix well, finally add coriander leaves, then turn off the flame. Make dosa with this filling.
