Eid Special Biriyani

Ingredients

For rice

Ghee

pepper corn

cinnamon

cloves

cardamom

green chilly

jeera rice

water

fried chicken masala

ghee

chicken stock

Preparation

Cook rice with spices, salt, green chilly and required water, then strain it. Prepare chicken masala with fried chicken. In a biriyani pan, melt chicken stock with ghee , add cooked rice, mix well, then add chicken masala, add coriander and mint leaves, fried cashew and kis mis, dum for 5 minutes.

Beef Biriyani

Ingredients

For rice

jeera rice-1 kg

water

spices

salt

For masala

oil

onion-1

cashews, kismis

Other ingredients

Beef biriyani gravy mix

Beef ( cooked with salt and turmeric)

water

coriander leaves

mint leaves

ghee

Preparation

Boil water for cooking rice, add salt and spices, add rice after boiled , then cook for 80 % then strain it. Heat a pan , add oil fry onion and roast cashew and kis mis, keep aside. In the same pan add biriyani gravy mix along with cooked beef , add some water and allow it to boil, add fried onion, mix well. cook until it become thick. For dum, set rice masala in layers by adding coriander and mint leaves, cashew and kismis, add ghee, then keep low flame for 10 minutes.

Paneer Butter masala

Ingredients

Paneer – 200 gms

Butter – 1 tbsp

Bayleaf – 2

Red chilly pdr – 1/2 tsp

Garam masala – 1 tsp

Kashmiri red chilly pdr – 1 tsp

Sugar – 1/2 tsp

Kasurimethi – 1 tsp

Fresh cream – 3 tbsp

Coriander leaves

Salt

To Grind:

Oil – 1 tbsp

Onions -2

Garlic pods – 8

Ginger – 3 (small medium pcs)

Dry red chillies – 5

Cashewnuts – 10- 12

Tomatoes – 3

Preparation

Saute ingredients for grinding in a pan, then grind into fine paste.In the same pan add butter,bay leaf and chilly powder, mix well next add grinded ingredients with garam masala, kashmiri chilly,sugar and salt, mix all well and cook for 10 minutes in low flame. Finally add kasoori methi, fresh cream and paneer.

Coconut Pathiri

Ingredients

water-1 1/2 cup

rice flour-1 cup

cumin-1/2 tsp

coconut grated-1/2 cup

Preparation

Heat a pan, add water , salt and oil, allow it to boil, next add shallots chopped, then add rice flour, mix well, add cumin and coconut grated, knead it well and make a soft dough. Take tomato size dough, flattern it by using your hand or roller, make thick pathiri and cookin a tawa.

Preparation

In a Pressure cooker, add potato, onion,chilly, salt,curry leaves,masalas and required water, and cook well, then add coconut paste, boil it well. Finally splutter mustards and red chilly and add to the curry.

Green gram Payasam

Ingredients

green gram-150 gm

jaggerry-350-400 gm

coconut milk-400 ml

cardamom-1/2 tsp

Preparation

Dry roast green gram in a pan, then pulse it in a mixie jar, then cook in second extract of coconut milk, add jaggerry and cardamom, stir well, finally add thick coconut milk.

Preparation

In a pressure cooker, heat oil, add onion , saute it by adding salt, next add crushed chilly,garlic and ginger,then add tomato, mix all and saute well, then add masalas and curry leaves, roast masalas, then add potato, mix well, next add coconut milk and water together ,mix well and cover the lid, cook for 2 whistle, mash potatoes, finally add some curry leaves and coriander leaves.

Tasty Mango Pudding

Preparation

In a pan add milk and mango puree, mix it well, next add custard powder and milk mix, stir all well and cook in low flame until it become thick. In a pudding tray, add bread after soaking milk, and set first layer then pour the mango milk mix, again set another layer of bread, next milk mix , finally add some mango pieces, then allow it to cool, and serve it.

Soft idly tips and tricks

Ingredients

raw rice-3/4 cup

boiled rice-3/4 cup

urad dal-1/2 cup

fenugreek-1/4 tsp

Preparation

Wash rice 2-3 times, urad dal only one time, then soak this for 5-8 hrs in refrigirator. Then grind all with salt using soaked water of urad dal, then pour the batter to a bowl, mix well by using your hand for 5 minutes, rest the batter for 8 hrs. Then you can make soft idly in idly pot.
