Soft dosa with chutney

Ingredients

For dosa

1.Raw rice==3 cup

2.Cooked rice==1 cup

3.Urad dal==1 tbsp

4.Fenugreek==1/2 tsp

5.Salt==as required

6.Yeast==1/2 tsp

7.Sugar==1 tbsp

8.Water==2 1/2 cup

For chutney

grated coconut-1 cup

green chilly-4

roasted chickpea-2 tbsp

ginger

shallots

curry leaves

salt

water

curd-1 tbsp

oil

mustards

curry leaves

dry red chilly

Preparation

Wash rice,urad dal and fenugreek well, then add other all ingredients into it,then mix it all, and add water, then soak it for4-8 hrs. Now grind this to fine batter, and rest this for 1 hour, then cook soft dosas.

For chutney, grind coconut with other ingredients, add 1 tbsp of curd, and temper with mustard, curry leaves and dry red chilly.

soft wheat flour putt tips

Ingredients

wheat flour-1 cup

Hot water

salt

coconut oil-2 tsp

Preparation

Take wheat flour in a bowl, add salt , and knead it with hot water, then transfer to a mixie jar, blend it for a minutes by adding coconut oil. And now you can make soft putt as usual.

Ingredients

rice flour-1 cup

water-1 1/2 cup

Onion-1

garlic-3

chilly powder-1/2 tsp

turmeric-1/2 tsp

cumin powder-1/4 tsp

hing powder-1/4 tsp

salt

oil for frying

Preparation

Boil water in a pan, add masalas and onion ginger paste, add salt, next add rice flour, mix well, keep the flame low. Knead the dough well and make soft. Take small portions, roll it and make ring shape, then fry it.

Ingredients

tamarind- soaked

Preparation

Heat oil in a pan, crack mustards and fenugreek, next add onion,ginger garlic crushed and curry leaves, saute it well, next add masalas, cook until it become dark color,now add tomato puree and salt, once the oil separates from curry add tamarind and required water, allow it to boil well, next add fish, cook it well, finally add hing powder,curry leaves and raw coconut oil.

Ingredients

Peanuts 1 cup

Jagerry 1 cup

Water 1/4 cup

Ghee 1/2 tsp

Preparation

Dry roast peanut,then remove peels, Melt jaggerry with water, add ghee, then add peanut mix well, and transfer to a plate, shape it and cut into your desired shape after cooling well.

Maida ,chicken snack

ginger,garlic paste-2 tbsp

chilly powder-1 tbsp

turmeric -1/2 tsp

garam masala-1/2 tsp

cooked chicken ( cooked with salt,turmeric and pepper)

Maida-1 cup

egg-1

salt

water

cheese slices

Preparation

Heat oil in a pan, add onion, saute well,next add ginger,garlic paste and salt, saute again, next add masalas,cook until the raw smell gone,then add cooked chicken, cook until it become dry. Now turn off flame. Break one egg in a bowl, add maida, salt and required water, mix well and make a perfect batter, cook small dosas, fill with cheese and chicken masala, fold from both sides, shallow fry it.

Palakkadan Special Idly powder

Ingredients

Idli rice :½ cup

Chana Dhal/Kadala paruppu : Little bit more than ½ cup

Uzhunnu Parippu/Urud Dhal : Little bit more than ½ cup

Dry Red chillies : 7-8 numbers.

Jeera : ½ Spoon

Kurumulaku/Pepper corn : ½ spoon

Curry Leaf : A Few

Kaya podi/ Asafoetida : A pinch

Salt : To Taste

Preparation

Dry Roast Each Ingredient individually till brown. Mix all together and powder it when cool down. Idli Podi is ready to be served.
