Plum cake in tea pot

Ingredients

orange juice-1/4 juice

cashews and raisins

sugar-1/4 glass

water-1/4 glass

sugar-3/4 glass

water-3-4 tsp

water-1 glass

sugar-3 tsp

cloves-2

cinnamon

nutmeg

cardamom seeds

vanilla essance-1/2 tsp

egg-2

maida-1 1/2 glass

baking powder-1/4 tsp

baking soda-1 pinch

salt-1 pinch

sunflower oil-1/4 glass

Preparation

Melt sugar with water in a pan, add orange juice, cashew and kismis into it, boil it well then keep aside. Caramalise sugar in another pan, add dry fruit mix into it, once it become slightly thick, turn off flame and set aside for cool. Grind spices with 3 tsp of sugar, add egg,oil and vanilla essance, blend it well. Sieve dry ingredients to a bowl, add egg mix and fruit mix, combine all well, thenpour the cake batter to a tea pot , after tapping it well, cover it with a plate. Heat a pan , place the tea pot above it, bake it for 40 minutes in low flame.

Chicken stew

Ingredients

chicken-1/2 kg

salt

pepper powder-1/4 tsp

turmeric-1 pinch

onion-2

green chilly-3

ginger

garlic

curry leaves

potato-2

carrot-2

coconut milk thick-1/2 cup

second extract of coconut milk-1 1/2 cup\

ghee

bayleaf, cardamom,cinnamon,cloves

pepper powder-1/2 tsp

garam masala-1/2 tsp

cashew paste

cashew and kismis

Preparation

Marinate chicken with salt,pepper and turmeric, and keep aside.Heat ghee in a pan, add spices, just roast it, next add ginger and garlic, roast it well, then add onion, chilly and curry leaves, saute it well, add salt, next add potato and carrot , saute it for 2-3 minutes, next add marinated chicken, combine all well, next add pepper powder and garam masala, saute until the raw smell gone, next add cashew paste, after mixing well add second coconut milk, cook it for 15 minutes, next add thick coconut milk, after heating it well turn off flame, finally add roasted cashews and kismis.

Poha,banana halwa

Ingredients

poha-1 cup

banana small-6

coconut milk-1 cup+1 cup+1 cup

ghee

cashews and badam

kismis

cardamom powder

jaggerry-300 gm

Preparation

Heat poha in a pan, then grind it into fine powder, add coconut milk into the powder then mix it well. Grind banana into fine paste, add poha paste and coconut milk, then blend it well, pour this to a pan, add jaggerry juice, stir well, cook it until it become thick and non sticky, you can add ghee too, finally add roasted peanut and badam, then pour the halwa mix to a mould, set it with a spoon, allow it to cool before cutting it.

Eggless plum cake

Ingredients:

2/3rd Cup Sugar

2/3 Cup Water

1/2 Cup Orange Juice

1 Cup Dry fruits

1/4 Cup Milk

1/4 Cup Oil

1/2 TSP Vanilla Extract

1 Cup Maida

3 Tsp Milk Powder

1 Tsp Cardamom,Cloves, Cinnamon Powder

1 Tsp Baking Powder

1/2 Tsp Baking Soda

1 Pinch Salt

Preparation

Soak dry fruits and nuts in orange juice for 1 hour. Caramalise sugar, add water, after mixing well keep aside. In a bowl add milk, oil, dry ingredients, caramalised sugar mix, soaked fruits and nuts , mix all well, pour this to a cake tin, bake it well.

Thick Gravy chicken curry

Ingredients

Chicken – 1 kg

Coconut oil / Oil

Shallots – 100g

Onion – 3 ( medium size )

Sliced ginger – 1 tsp

Sliced garlic – 1 tsp

Curry leaves 2 tbsp

Crushed ginger – 1 tbsp

Tomato – 2 ( medium )

Chilli powder – 3 tbsp ( kashmiri chilli + normal chilli )

Coriander powder – 2 tbsp

Pepper powder( crushed)- 1 tsp

Turmeric powder – 1/4 tsp

Hot water – 2 1/2 cup (1/2 cup +1/4 cup + 1 cup + 3/4 cup )

Salt

* For grinding;

Fennel seeds – 3/4 tbsp

Cloves – 4

Cardamom – 4

Cinnamon – 2

Star anise 1/2 piece

Half portion of sauted items

Preparation

Heat a pan, add oil, once it heat well add onion, shallots, ginger garlic, and curry leaves, saute it well, now add tomato, saute until it become soft, then divide this into two portion, grind one portion, keep another portion in the pan, add masalas into it, mix well, add water, boil it well for 5 minutes, now add chicken and salt, mix with masala, add water for cooking, cover the lid.Take a mixie jar add spices, and sauted masala, grind it into fine paste, add to chicken curry, cook it for 10 minutes. For seasoning, roast coconut pieces in oil, add shallots and dry red chilly, roast it well , and add to curry.

Potato masala for poori

Ingredients

potato-4 boiled

onion-2

chilly-4

ginger

curry leaves

coconut oil

mustards-1 tsp

dry red chilly-3

salt

turmeric

Preparation

Heat oil in a pan, add mustards, pop it well, then add dry red chilly, roast it well, now add onion, ginger and chilly, add salt and saute it well, add turmeric, mix well, next add potato crushed, mix all well, cook for 5 more minutes, you can add hot water to become the masala become gravy.

Ginger Candy

Ingredients

Ginger 100gm

Sugar 1.5 cup

Water 1/2 cup

Maida 4Tbsp

Preparation

Cut ginger into small pieces,then crush it in a blender. Melt sugar with water, add ginger crushed into the syrup, mix all well, cook in low flame until the raw smell go away, now add maida in batches, stir well, cook until it become thick. Set butter paper in a plate, pour the ginger mix into it, set it with a spoon, then allow it to cool, then you can cut it.

Ingredients

honey-2 tbsp

sugar-1/4 cup

water-1/2 cup+2 tbsp

butter-100 gm

cinnamon. cloves,cardamom,nutmeg,dry ginger

Preparation

In a pan, add dry fruits,nuts and juices, cook until the juice absorbs, then add honey, mix well and keep aside.In another pan, caramalise sugar, then add hot water, after mixing well set aside.In a striner add dry ingredients, sieve it for 3 times, take 2 tbsp from it and add to cooked fruit mix, combine it well.Blend sugar,egg,butter and vanilla essance in a mixie jar, then pour it to a bowl, add caramalised sugar mix, dry ingredients and fruit mix, fold it with a spatula, then transfer it to a cake tin, now you can bake it.

Preparation

Cut potato into long thin shape, add turmeric,chilly powder and salt, mix well , then keep aside. Heat oil in a pan, add onion and curry leaves, saute it well, add salt, cook until the onion become fry, now add potato, mix well, and cook well.

Milk sip-up

Ingredients

milk-5 glass

sugar

cardamom powder-1/2 tsp

wheat flour-5 tsp

Preparation

Boil milk with sugar, mix wheat flour and milk, remove lumps then add to boiling milk, add cardamom, stir well, once it become thick, turn off flame and aalow it to cool, after cooling well, blend it in a mixie jar, then fill this mix in small plastic bags look like sip up cover, seal the cover then keep in freezer until it become thick.
