Rice flour vattayappam

Ingredients

Rice powder (pathiri podi)-1 1/2 glass

Grated coconut-3/4 glass

cooked Rice-3/4 glass

Salt-

Sugar-3 tsp

Coconut water-1 glass

dry yiest-1 tsp

Preparation

Add all the ingredients in a mixie jar, grind it into fine paste, then transfer it to a vessel, mix it with a laddle, rest the batter for 4 hrs, take a greased plate pour the batter, then steam cook this.

Easy Plum cake without oven

Ingredients

cherry-1/4 cup

raisins-1/4 cup

kismis-1/4 cup

tutti fruity-1/4 cup

sugar-1 cup

water-1 cup

egg-2

nuts-3/4 cup

vegetable oil-3/4 cup

wheat flour-1 1/2 cup

baking powder-1 1/4 tsp

nutmeg powder-1 tsp

cloves powder-1/2 tsp

cinnamon powder-1 tsp

ajjwain seeds powder-1 tsp

salt-1/2 tsp

Preparation

Caramalise sugar in a bottom thick pan, then add water into it mix it well, next add nuts and fruits, cook it for 5 minutes, then allow it to cool, then add beaten egg and oil, mix well. Take a strainer add dry ingredients, sieve it to the fruit mix, mix it well, then pour it to a cake tin, then bake it in a pan.

Crispy egg rolls

Ingredients

for dough

maida-2 cup

salt

water

oil-2 tbsp

black cumin-1 tsp

for potato masala

boiled potato-1

chilly flakes

garam masala-1/2 tsp

coriander leaves

for onion masala

oil

ginger,garlic, chilly chopped

Preparation

For dough, add maida,oil,salt and black cumin to a bowl, after mixing well add water , knead it well and make a soft dough, then keep aside.

For potato masala, mix all in a bowl.

For onion masala, saute onion,ginger,garlic and chilly in a pan, add masalas into it cook until it become aromatic.

Dicide boiled egg into 2 portions. Take a ball sized potato masala, then put onion masala, add egg half, then cover it, wrap it with maida sheet, finally deep fry it in hot oil.

Preparation

Take a baking tray , put some veggies . Take a full turkey, marinate it with sauces, stuff it with vegetables, put it in the baking tray, wrap it well, then keep in fridge for 2 hrs, then take back from fridge, then bake it for 1.5 hrs in 180 degree.

Preparation

Cook mutton with spices, onion,  salt and water in a pressure cooker. Heat a pan, add cooking oil, then add onion saute it well, add chilly and ginger garlic paste, saute until the raw smell gone, next add masalas, mix all well , add yogurt, tomato puree and salt, boil it well, add mutton , mix well, add cooked water of meat, then add soaked basmati rice, cook rice well with this masala.

Yam curry

Ingredients

mustards-1 tbsp

dry red chilly

Preparation

In a pressure cooker add yam, then add onion,tomato,salt,turmeric, garlic,green chilly, soaked dalt and required water, cook it for 2-3 whistle. Grind coconut with cumin, shallots and water, then add to curry, boil it well. Finally , for seasoning, pop mustards in coconut oil, add curry leaves and dry red chilly, roast it well and pour it to curry.

Creamy chicken curry

Ingredients

Chicken – 500 grams

Oil – 1 1/2 tbsp

Onion – 2 medium

Cashew nuts – 10 nos

For marination

Turmeric powder – 1/2 tsp

Red chilli powder – 1 tsp

Coriander powder – 1 tsp

Salt – 1 tsp

Ginger garlic paste – 1 1/2 tsp

Green chilli – 2 nos

Fresh cream – 1 tbsp

Coriander leaves – 3 tbsp

Lemon juice – 1 tbsp

For curry

Cloves – 3 nos

Cardamom – 3 nos

Bay leaves – 2 nos

Water – 1/2 cup

Salt for taste

Preparation

Marinate chicken with yogurt, masalas, salt, lemon juice, chilly,ginger garlic paste,coriander leaves and fresh cream, then smoke it with a charcol for 30 minutes. Saute onion with cashews, then grind it into fine paste. Heat oil in a pan, add spices, then add onion paste and chicken, after mixing it cook it well.

Beef cutlet

Ingredients

beef-1 kg

water

Preparation

Cook beef and potato with water and salt, then take potatoes from it and mash it well. Crush beef in a mixie jar.Heat a pan, add oil, then add onion, after sauting it well add ginger garlic, chilly and salt, cook well, then add masalas, mix well, then add mashed potato and beef, combine all well, after 2 minutes turn off flame. Allow it to cool, then make cutlets using a mould or your hand, dip it in egg mix and coat bread crumbs, finally fry it in hot oil.

Ingredients

Banana-2

Wheat flour -3 laddle

Jaggery-2

cardamom powder

Coconut

Ghee

Cashew nut

Raisins

Salt

Preparation

Mix wheat flour with salt and keep aside. Melt jaggerry with water, set aside. Fry cashew and kis mis in ghee, then add banana into it saute it until color change, now add coconut, mix well, next add cardamom powder, next add jaggerry juice, mix well, add wheat flour, mix well to make a batter, add water, again mix it well, then pour it to a greased tin, add more cashews and kismis, then steam cook this kinnathappam.

Chicken vattayappam

Ingredients :

Raw rice – 1 cup ( 200 g)

Grated coconut – 1 1 /2 cup

Fresh coconut water – 3/4 cup

Cardamom – 2

Cumin seeds – a pinch

Active dry yeast – 1/4 tsp

Cooked rice – 1/4 cup

Sugar – 2 tbsp

Salt – 1/2 tsp

For filling :

Boneless chicken – 200g

Onion – 2 (big size)

Crushed ginger – 1 tsp

Crushed garlic – 1 1/2 tsp

Green chilli – 1

Tomato – 1/2

Curry leaves

Chilli powder – 1 tsp

Coriander powder – 1 tsp

Garam masala – 1 tsp

Meat masala/ Chicken masala – 1 tsp

Turmeric powder – 1/4 tsp

Pepper powder – 1/4 tsp

Fennel seeds powder – 1/2 tsp

Hot water – 1/2 glass

Salt

Oil

Preparation

Soak rice for 4 hrs. Grind coconut with coconut water, take coconut milk and keep aside. Grind rice with, cumin, cardamom,yiest and coconut milk, pour the batter to a vessel, mix well, keep it 8 hrs for fermentation. For filling masala, heat oil in a pan, add onion, green chilly, ginger, garlic,and curry leaves, saute it well, add tomato, mix all well, next add masalas, mix it well, once the masala become dry add minced chicken, mix well, then saute it with hot water, cook chicken, once it become thick turn off flame. Take a plate, pour the batter about 1 1/2 laddle, steam it for 5 minutes, add filling above it, spread over, pour batter above, then steam it well.
