Fish egg roast

Ingredients

Sardine egg – 250 grams

Chilli powder – 1 teaspoon

Turmeric powder – 1/2 teaspoon

Pepper powder – 1/2 teaspoon

Salt to taste

Onion – 1 ( finely chopped)

Finely chopped Ginger – 2 tablespoons

Green chilli – 3 finely chopped

Few Curry leaves

Garam masala – 1/2 teaspoon

Pepper powder – 1/2 teaspoon

Preparation

Marinate cleaned fish egg with turmeric, chilly powder, salt and pepper powder, then rest it for 1 hour.Heat oil in a pan, add marinated fish egg then fry it, after that keep this aside.Then add onion, ginger, green chilly and curry leaves to the pan, saute it well, then add garam masala and pepper powder, after mixing well add fried egg, then combine all well and turn off flame.

Banana fingers

Ingredients

banana-2

rice flour-1 cup+1/4 cup

sugar-1/4 cup

cardamom powder

ghee-1 tsp

salt

milk

Preparation

Steam banana in a steamer, after removing peels, mash it well, then add sugar, salt, cardamom, rice flour and ghee, knead it well, add milk, and make a soft dough, divide this into equal small portion and make finger shape, then fry it in hot oil.

Vegetable Kuruma

Ingredients

Carrot -2

Potato- 3

Beans -10

Green peas -one handful

Onion -1 small

Curry leaves- one string

Salt- 1/2 tsp

Water above vegitable level

Coconut

Cashew 5

Fennel seeds 1/2 tsp

Cinnamon 1 small

Cardamom 2

Clove 3

Garlic 2

Ginger small 1 piece

Turmeric powder 1/4 tsp

Green chilli 1

Coriander leaves

Curd 2 tbsp

Preparation

Take a clay pot, add all vegetables, curry leaves and salt, then add water, then cook it well.Grind coconut with cashew, chilly,turmeric,whole spices,garlic,and ginger, and make a fine paste, then add it to cooked vegetables,mix it well then allow it to boil.Finally add some coriander leaves and curd.

Channa kuruma curry

Ingredients

1 glass kadala / channa / white chickpea

onion 2 big sized

green chilli

ginger

garlic

curry leaves

oil

cloves

cinnamon

pepper

fennel seeds

cardamom

potato

turmeric powder 1/2 tsp

coriander powder 1 1/4 tsp

fennel powder 3/4 tsp

salt

coconut

cashews

coriander leaves optional

curry leaves

mustard

dry red chillies

shallots

Preparation

Heat a pressure cooker, add oil, let it heat, then add whole spices, roast it well, then add ginger and garlic, saute it for a minute , next add onion and green chilly, add salt and curry leaves too, mix all well and saute it for a minute, now add potato, channa, and turmeric, mix all well, add water, then cover the lid and cook it for 4-5 whistle.

Grind coconut with cashew and green chilly and make a smooth paste.

Once the pressure is gone, open the lid and boil it again, now add coriander powder, fennel powder and coconut paste, mix well and boil it again, finally season it with mustard, dry chilly and shallots.

Take a bowl add egg pieces, onion, green chilly, ginger,curry leaves, salt, sauce and chilly powder, mix it with a spoon, then add flours, after mixing well add water, and knead it well then make dough consistency, heat oil in a pan, put small portions from the dough, fry well.

Thick Curd in half hrs

Ingredients

full cream milk-1/2 ltr

curd-2 tsp

hot water

Preparation

Boil milk in a pan, then allow it to lower the heat, then pour it to another bowl, add curd, mix it well. Take a pressure cooker pour hot water, put the milk vessel into the cooker, cover it with a plate,then close the lid, keep this aside for 1/2 hrs, now the milk become thick curd.

Home made Ghee

Ingredients

milk

curd

turmeric-1 pinch

Preparation

Boil milk in a pan, dont stir it, once heat gone keep in refrigerator for 6-8 hrs, now the thick layer is formed on the top of the milk, keep this in a container, repeat this process on daily , keep the container in fridge. Once it become enough quantity, take this from fridge and add milk and curd into it, after mixing well, keep this in room temperature for 2 days, after that blend it well in mixie jar, now the butter separate from the mix, transfer it to another bowl, wash it with cold water, then melt it in a pan, once the ghee is cooled, store in a glass container.

Crispy Banana Snack

Ingredients

Ghee – 2 tbsp

Shredded Coconut – ½ Cup

Sugar – 1/2 Cup

Cardamom Powder – 1tsp

Cumin Powder – 1tsp

Banana – 1 ½ nos

Wheat Flour – ¾ Cup

Water – ½ cup

bread crumbs

Preparation

Heat ghee in a pan, add coconut, saute it well, next add sugar, mix well, then add cardamom and cumin powder, mix all well, next add banana, saute it until it become soft, then add wheat flour, mix it again, then turn off flame. Once the heat is gone , make small balls from this mix, then coat it in bread crumbs, finally fry in hot oil.

Ingredients

jackfruit

grated coconut

sugar-3 tsp

cardamom powder-1/2 tsp

gram flour

rice flour-3 tsp

water

oil for frying

maida paste

Preparation

Heat ghee in a pan, add grated coconut , roast it for 2 minutes, then add sugar and cardamom, mix well, once the sugar melts completely turn off flame and keep aside. Take a bowl add gram flour and rice flour, add salt and water and make a thick batter. Then prepare a thick maida paste. Take jackfruit, remove seeds, then add filling, take maida paste and cover the filling then dip it in gram four batter, finally fry it in hot oil.
