Special Fish Masala

Ingredients

fish-1/2 kg(marinated with salt,turmeric and chilly powder)

ginger garlic crushed-2-3 tbsp

tomato-3

salt

turmeric-1/4 tsp

chilly powder-1 1/2 tbsp

coriander powder-1 tbsp

garam masala powder-1/2 tsp

fennel powder-1/2 tsp

fenugreek-1/4 tsp

green chilly-2

curry leaves

onion-2

salt

coriander leaves

Preparation

Heat oil in a pan, add fish, fry it well, then keep it aside. In the same pan add ginger garlic paste, mix it well until the raw smell gone, then add tomato, cook it until it become soft, next add masala powders and salt, mix all well then transfer the masala to a blender, blend it after heat is gone. Heat oil in a pan, add fenugreek, curry leaves and green chilly, mix well, then add finely chopped onion, saute it well, then add tomato masala, combine all together, add more water, then boil it well, now add fish, cook it for 5-10 minutes, finally add some coriander leaves and turn off flame.

Cotton Candy

Ingredients

ghee-1 tbsp

maida-1 cup

sugar-1 cup

water-1/2 cup

lemon-1 tsp

Preparation

Heat ghee in a pan, add maida, mix well and heat it well, then keep aside. Heat another pan , add surar,water and lemon juice,caramalise sugar and pour it to counter top after spreading ghee, once it become thick, fold it with a spoon, then take it in your hand and start stretching, add maida little bye little, stretch it until the candy become perfect consistency.

Black Halwa

Ingredients

Rice Flour – 1 cups ( 150 g- approx. )

Jaggery – 500 g ( minimum – 300 g. )

Coconut milk – 7 Cup ( 1-1/2 Coconut )

Cow Butter – 8 Tbs

Cashew nuts – 1 Cup

Cardamom powder – 2 Tsp

Ginger powder – 1/2 Tsp

Cumin Powder – 1 pinch

Preparation

Melt jaggerry with water.Once it melts completely drain it to another bowl.Add coconut milk in a pan, add rice flour and mix well, then pour jaggerry juice,combine it well, then turn on flame, start stirring, add ghee after heat it well,once it become thick add cardamom, ginger and cumin powder, mix again and continue stirring, add more ghee, mix it again, continue this until the halwa become black and non sticky, now transfer this mix to a plate, set it with a spatula, add some cashews, then keep aside for 12-20 hrs, then cut it in desired shape.

Crispy Potato Bites

Ingredients

Potato boiled-2

onion-1

ginger

curry leaves

green chilly

rice flour-2 tbsp

turmeric-1/4 tsp

chilly powder-1/2 tsp

salt

oil for frying

Preparation

Take boiled potato in a bowl, mash it well, then add onion, curry leaves, green chilly, ginger, rice flour, turmeric, chilly powder and salt, knead it with your hand and make soft dough, after that make small bites out of the dough, then fry it all in hot oil.

Mutta Thilappichath

Ingredients

thick coconut milk

second extract of coconut milk

vinegar

Preparation

Heat oil in a pan, add onion, green chilly, curry leaves, ginger and garlic, saute it all, next add masala powders, once it turns aromatic add second coconut milk and 1/2 of thick coconut milk, add vinegar and salt along with it, now break 2 eggs, dont mix it for 2-3 minutes. Once one side is cooked mix it slowly, finally add thick coconut milk and turn off flame.

Preparation

Take a small pan, add 4 tsp rice flour and 1 cup water, mix well, then transfer this to a stove top,stir it until it become thick, then turn off flame. Take rice flour in a bowl, add salt, then add prepared rice flour mix, knead it well and make a perfect putt dust,add water if required. Take putt maker add coconut, then fill with rice flour mix, then steam it well.

Preparation

Take a claypot, add tamarind,salt and water, then heat it. Heat oil in a pan, add mustard and pop it, next add chopped shallots, ginger,garlic,curry leaves and green chilly, saute it well, now add masala powders, after mixing well pour tamarind water, mix it well and transfer the masala to clay pot, add more water if required, salt to taste, then boil it well, next add chicken pieces, cook it well, finally add fenugreek powder and turn off flame.

Preparation

Heat a clay pot, add coconut oil, once it heat well add fenugreek, next add mustard, let it pop, then add dry chilly and curry leaves, mix well and add onion and green chilly, saute it well, next add ladies finger, mix all, once it sauted enough add tomato, then cover the pot and cook until it become soft. Grind coconut with masala powders, shallots and water, then add it to the curry, add more water and salt to taste, boil until the gravy become medium thick.

Preparation

cook potato in a pressure cooker with salt,turmeric and water, once 5 whistle come out turn off flame and let the pressure gone. Take potato in a bowl, mash it well , add chilly powder, salt, chicken masala and powdered poha, knead it well and make cylinder shaped bites, finally fry it all in hot oil.
