Egg snack for Ifthar

Ingredients

Egg – 5

Chopped onions – 2

Chopped ginger – 1 tablespoon

Curry leaves – few

Chopped garlic – 1 tablespoon

Chopped tomatoes – 1/2

Coconut oil – 2 tablespoons

Mustard – 1/2 teaspoon

Cumin – 1/2 teaspoon

Turmeric powder – 1/2 teaspoon

Pepper powder – 1/2 teaspoon

Chilli powder – 3/4 teaspoon

Garam Masala – 1/2 teaspoon

All purpose flour / Wheat flour – 2 tablespoons

Chilli flakes – 1 tablespoon

Salt to taste

Puff pastry sheets – 4

Preparation

Chop boiled egg into small pieces. Heat oil in a pan, add mustard, allow it to pop, then add cumin, next add ginger, garlic, curry leaves, chilly and onion, add salt and saute it well, next add masala powders, mix it until the raw smell gone, next add tomato, mix it well, then add egg, combine well and turn off flame.

Take a plate, cut pastry sheets into small pieces to the plate. Prepare a maida + water mix. Divide egg mix into small balls, dip the balls in maida mix, then coat it with pastry pieces, then fry it in hot oil.

Unniyappam

Ingredients

•Grated coconut – 1/4 cup

•Sesame seed – 1 tablespoon

•Ghee – 1 tablespoon

•Roasted Rice Flour – 1 Cup

•Wheat Flour / maida – 1 Cup

•Rava – 2 tablespoons

•Salt – ¼ Teaspoon

•small Banana (Palayankodan /Kathali) – 2

•Sugar – 2 tablespoons

•Cardamom – 4 Nos

•Jaggery – 500 grams

•Water – 1 & ¼ Cup

•secret ingredient

•Coconut Oil – for frying

Preparation

Take a bowl, add rice flour, maida, salt and rava, mix well, keep aside. Heat ghee in a pan, add coconut, roast it until it become golden brown, then add sesame seeds, mix well and keep aside. Grind sugar with cardamom and banana and set aside. Melt jaggerry, then add to flour mix, add banana mix and coconut mix also, mix well, add baking soda, after mixing it well make small unniyappam.

Paalappam

Ingredients

Raw rice-2 cup

instant paalappam mix-4 tbsp

lukewarm water

cooked rice-1 cup

sugar-2 tbsp

Preparation

In a small bowl, mix lukewarm water and instant paalappam mix. Take a mixie jar, add soaked rice, paalappam mix, and cooked rice, grind it well by adding water, then make a fine batter, pour it to a bowl, rest the batter for 5-6 hrs, then make soft paalappam.

Vegetable Stew

Preparation

Cook vegetables with salt, water and turmeric. Heat oil in a pan, add whole spices, then add onion, saute it well, next add chilly powder, after a mix add cooked vegetables, mix all. Grind coconut with green chilly, garlic, ginger and fennel seeds, then add to curry, boil it well, finally add some coriander, then turn off flame.

Eid Special Fruit salad

Preparation

Take a small bowl, add custard powder and milk , mix well. Add milk to a pan, add sugar, vanila essence and custard mix, mix it well, then turn on flame, stir it without stopping until it become thick, then turn off flame. Then refrigerate it for 2-3 hrs, after that add chopped fruits and dates into it, mix well, now its ready to serve.

Dry roast fenugreek and hing together, then grind it into fine powder. Preparation

Add egg, cardamom, sugar and yellow color to a mixie jar, blend it well. Take a bowl, add maida, rava and egg mix, knead it well and make a soft tight dough, add ghee, knead it again, rest the dough overnight. Next morning, take the dough, knead it again and divide it into 4 pieces, flatten it into thick layer, then cut it like diamond, now fry it in hot oil.

Ragi dosa

Ingredients

Ragi flour 1 cup

Rava 2 tbsp

Rice flour 2 tbsp

Salt to taste

Ginger chopped

Preparation

Take a bowl, add ragi, vermicelli, salt and water, mix well and make a fine batter, add hing powder, chopped ginger, chilly, onion, carrot, curry leaves and coriander leaves, mix it well and make a loose batter, keep this aside. Heat a tawa, pour the batter, spread over the tawa, flip it if one side cooked, add ghee, cook both sides well.

For chutney, grind coconut with shallots, ginger, green chilly and salt, and make a fine paste, Heat oil in a pan, pop mustard and urad dal, then add curry leaves and dry chilly, mix well and add to chutney.
