Preparation

Grind all these ingredients in a mixie jar, then serve it with rice.

Use salted mango instead of mulberry to prepare mango chammanthi. Its a very good side dish for rice.

Carrot Coconut Ball

Ingredients

carrot

sugar-2 tbsp

corn flour-1 tbsp

cardamom-2-3

fried coconut-1/2

milk-3-4 tbsp

Preparation

Heat a pan, add grated carrot, add sugar, mix until sugar melts completely, then add corn flour, mix well, add coconut, combine all until it become thick, then turn off flame, make balls from this mix, then coat it with the coconut.

Banana Snack

Ingredients

banana-2

ghee

coconut-1/4

sugar

salt

poha-4 tbsp

rice flour-2 tbsp

sesame seeds-1 tsp

oil for frying

Preparation

Cut banana into small pieces. Heat ghee in a pan, add coconut, saute it well, then add banana pieces, mix both well, add sugar and salt, mix well, then turn off flame. Prepare a batter with banana, sugar, maida and water. Take banana mix, knead it well and take small portions from it, dip it in the batter, then fry it.

garlic, ginger and green chilly crushed

coriander leaves

chilly flakes-1 tsp

Preparation

Grind chicken in a mixie jar, then add to a bowl, add crushed ginger, garlic and chilly, salt, masala powders and gram flour, knead it well then make kebab as you like, then fry it in hot oil.

Rava snack

Ingredients

rava 1 cup

cardamom powder 1/4 tspn

sugar 1/2 cup

salt

water-1 cup

corn flour

Preparation

Boil water with sugar, salt and cardamom in a pan, then add semolina into it, mix it well until it ecome thick and non sticky, then transfer it to a plate, knead it after the heat gone, then add corn flour, mix well and make a dough, flatten it into medium thick layer, then cut it into diamond shaped small pieces, then deep fry it in hot oil.

Vanilla Ice cream

Ingredients

1. Milk – 1 cup

2. Sugar – 5 tbsp

3. Heavy Cream – 1cup

4. Vanilla Essence – 1 tsp

Preparation

Add milk to a pan, add sugar, let it boil well, continue stirring until it become slightly thick, now turn off flame, then cool it enough, then refrigerate it. Beat cream in a bowl, add icing sugar while whip the cream, add vanila essence, cold milk mix into it, beat it until it become stiff, then pour it to the container, then freeze it for 8 hrs, then serve ice cream.

Pesaha Appam

Ingredients

Raw rice-4 glass

urad dal-1 1/2 glass

coconut-1/2

coconut pieces-1/2

garlic-3

cumin-1 tsp

shallots- 25-30

curry leaves

coconut oil

Preparation

Soak rice for 3-4 hrs, then grind it with salt, cumin and garlic and make fine batter. Wash urad dal well, then dry roast it until the color become brown, grind it into fine powder, then add to the batter, mix both well. Heat oil in a pan, add curry leaves, roast it well, then set aside, roast coconut pieces and shallots separately, then add all to the batter, add coconut also, mix everything well. Heat a pan, apply oil, then make dosas with this batter.

Vattayappam

Ingredients

•white rice -1 cup

•Salt to taste

•Sugar – 6 tablespoon

•instant yeast – 1/4 teaspoon

•lukewarm water

•coconut oil-1 tsp

Preparation

Add soaked rice, soaked poha, sugar, yeast, oil and lukewarm water to a mixie jar, grind it well and make a perfect batter. Rest the batter for 3-4 hrs. Mix raised batter , take a plate, apply oil, pour the batter 3/4 part, then steam it well.

Ada Dosa

Ingredients

Idli Rice (Idli ponni rice) / Raw rice – 2cups

Whole urad – ½ cup

Tur dal – ½ cup

Water – ¾ cup

Salt to taste

Curry leaves – 2 sprigs

Shallots – 15 no’s

Asafetida – ¼ tsp

Dried red chillies – 4

Black peppercorns – 10 no’s

Gingelly oil

Preparation

Soak rice, urad dal and gram dal together, then grind it with salt and water and make a thick batter. Crush curry leaves, shallots, pepper corns and dry chilly together, and add to the batter, add hing powder, mix well. Heat a pan, pour the batter, spread it over the pan, cook both sides well, then serve it with coconut chutney.

Preparation

Prepare a maida dough, keep aside. Heat oil in a pan, add onion, saute it well, then add masala powders, mix it well, then add crushed chicken, mix all and cook it well, add green chilly and chilly flakes, mix it again, then turn off flame. Mix eggs, pepper powder, salt and tomato together, add chicken mix into it, combine all. Make small chapathis with the dough, add filling, then fold it from all sides, then cook it in a pan.
