Broasted chicken

Ingredients

2 tablespoons light soy sauce

2 tablespoons ketchup

1 teaspoon ginger powder

3 cloves of garlic

Black pepper

4 chicken drumstick (~500g)

1 cup All purpose flour

1 cup corn starch

½ teaspoon salt

1 tablespoon garlic powder

½ teaspoon chili powder

1 teaspoon turmeric powder

1 tablespoon baking powder

Coat the chicken with flour

Soak in water

Coat with flour again

Fry the chicken

Fry each side for 4~5 minutes

Preparation

Take a bowl, add sauces, chopped garlic, ginger powder. salt and pepper powder, mix it well, then marinate chicken with this sauce mix, keep this aside. Take another bowl, add flours, ginger powder, garlic powder, turmeric, baking powder, chilly powder and salt, mix all, coat chicken stick with this flour, dip in water, coat flour again, then fry chicken well.

Liver Fry

Ingredients

beef liver-1 1/2 kg

chilly powder-1 tbsp

coriander powder-1 tbsp

salt

curry leaves

ginger garlic paste

turmeric

oil

mustard

ginger garlic crushed

green chilly

onion

salt

kashmiri chilly powder-2 tbsp

coriander powder-1 tbsp

meat masala-1 1/2 tsp

turmeric-1/2 tsp

garam masala-1/4 tsp

curry leaves

pepper powder-1 tsp

Preparation

Cook liver in pressure cooker with chilly powder, coriander powder, turmeric, ginger garlic, salt and curry leaves . Heat oil in a pan, add mustard to pop, next add ginger garlic and green chilly, add onion and salt, saute it well, next add masala powders, mix well, then add cooked liver, combine well, add pepper powder and garam masala, cook it until it become dry, then turn off flame.

Vegetable Kuruma

Ingredients

carrot-2

potato-1

cauliflower

beans

onion

green chilly

garlic

curry leaves

cashews

coconut milk

cardamom

water

salt

coconut oil

mustard

dry chilly

fennel powder

Preparation

Cook all vegetables in a pressure cooker with water and salt. Heat oil in a pan, add mustard, let it pop well, next add dry chilly, mix in oil, add onion, garlic and green chilly, saute it well, next add cooked vegetables, add coconut milk along with it, boil it well, add fennel powder and cardamom powder, once the water completely absorbed, add more coconut oil, heat it well, then turn off flame.

Apple Evening snack

Ingredients

sugar-2 tbsp

yeast-1 tsp

milk-1/2 cup

salt-1/4 tsp

oil-1 tbsp

maida-1 cup

baking soda-1/4 tsp

egg-1

vanilla essence-1 tsp

oil for frying

Preparation

Grind apple with sugar, then add to a bowl, add salt,oil, baking soda, yeast and milk, mix well, add maida, combine well, add egg and vanila essence, mix everything and make a thick batter. Heat oil in unniyappam pot, pour batter in each holes, then fry it well.

ginger paste-1 tsp

curry leaves

chilly powder-1 tsp

garam masala-1/2 tsp

pepper powder-1/2 tsp

chicken crushed-250 gm

coriander leaves

tomato ketchup-2 tbsp

egg-1

salt

pepper powder

bread crumbs

oil for frying

Preparation

Mix maida, salt and oil in a bowl, combine yeast, sugar and lukewarm water in a bowl, then add to maida, knead it well and make a dough, rest it for 1 hour. Heat oil in a pan, add onion, ginger garlic, green chilly and salt, saute it well, then add masala powders, combine all, add chicken, after mixing well, add coriander leaves and ketchup, mix well, then turn off flame. Take the dough after 1 hour, knead it again and make medium balls, flatten it , then cut it into 4 pieces, add filling in each piece, then fold it like triangle, after the process is done, dip the mix in egg, then coat it with bread crumbs, now fry it well.

Fish curry

Ingredients

coconut-1/2

chilly powder-3 tbsp

coriander powder-1 1/2 tbsp

turmweric-1/2 tsp

fenugreek-1/4 tsp

salt

tamarind-3-4 pieces

water

oil

ginger+garlic-1 tbsp

shallots chopped

curry leaves

Preparation

Heat a pan, add coconut, roast it until it become golden brown, then add masala powders, heat it well, then turn off flame, grind it after the heat gone, then add to a clay pot, add salt, water and tamarind, boil it well, now add fish, boil it until the thickness become correct, then turn off flame. Heat oil in a pan, add ginger garlic, saute it well, add shallots chopped and curry leaves, roast it well, then turn off flame.

Orange Halwa

Ingredients

orange-3

sugar-1 cup

corn flour-1/4 cup

lemon juice-1

nuts and white sesame seeds

orange color

ghee

Preparation

Take orange juice, add corn flour into it, mix well and keep aside. Take a glass tray, apply oil and spread nuts and sesame seeds, keep this aside. Melt sugar with water and food color, then add corn flour mix, stir it throughly add ghee accordingly, once it become thick and non sticky, turn off flame and transfer the mix to glass container, set it with a spoon, then keep this aside for setting halwa.

Arrowroot Powder Drink

Ingredients

arrowroot powder-2 tbsp

water

milk-250 ml

sugar

sabja

ice cubes

grated carrot

Preparation

Take a pan, add arrowroot powder, add a little water mix well to remove lumps, add more water, mix all, turn on flame, stir it well until it become thick, then transfer it to a mixie jar, add sugar and milk, blend it well, add ice cubes, grated carrot and soaked sabja, mix well, then serve it.

Mango seed Appam

jaggerry-3

raw rice-1 glass

ghee

Preparation

Dry mango seeds under sunlight, then remove the outer part, take the inner part of seed, peel off it, then soak in water for one day, then grind it with coconut and make fine paste, add rice flour and melted jaggerry, mix well and make thick batter. Take a plate, apply ghee, pour the batter, then steam it well.

Preparation

Heat oil in a pan, add fenugreek , let it pop, then add ginger and garlic, saute it well, add shallots and green chilly, mix well, next add carrot, cook it well, by sauting, next add masala powders, mix it well, then transfer it to a mixie jar,grind it into fine paste. Boil soaked tamarind, add masala paste and fish, add water and curry leaves, boil it well and turn off flame.
