Ingredients

For Aapam

raw rice-1 cup

urad dal-3-4 tsp

fenugreek-1/2 tsp

cooked rice-1/2 cup

coconut, sugar

For urad dal chutney

urad dal-3 spoon

coconut-1 cup

dry red chilly-6-8

salt

curry leaves

coconut oil

for Roasted gram dal chutney

roasted gram dal-1 handful

coconut- 1 1/2 hand ful

green chilly-3-4

ginger

curry leaves

salt

mustards-1 tsp

dry red chilly-1-2

coconut oil-3 tsp

Preparation

soak rice, urad dal and fenugreek for 5-6 hrs, then grind with cooked rice , coconut,sugar and salt, rest the batter for 12 hrs for fermentation, then cook aapam.

For urad dal chutney, heat a pan, add oil, roast urad dal, next add coconut, curry leaves and roast it well, then grind with water and salt. Pop mustards,chilly and curry leaves, add chutney, just heat it.

For coconut chutney, grind all ingredients together with water, heat oil, crack mustards, red chilly and curry leaves, add chutney, heat it.

Semiya Payasam

Ingredients

Ghee

cashews

kismis

vermicelli

milk-1 ltr

cardamom

salt

sago rice soaked

sugar

milk powder-2 1/2 tbsp

Preparation

Heat ghee in a pan, roast cashews and kismis, and set aside, then roast vermicelli and transfer to a plate. In the same pan add milk, cardamom and salt, boil it well, then add soaked sago rice and vermicelli, cook well, add sugar and milk powder mix, cook well ,finally add roasted cashews and kismis.

Sadya special kootukari

Ingredients

for making the Koottucurry Masala

Coconut oil – 2 tablespoon

Cumin Seeds – 1 table spoon

Black pepper – 2 table spoon

Dry Red Chilies – 5 numbers

Preparation

Stir well the above mentioned ingredients together in a Pan , until the color changes into natural black. Black Pepper will start sprout due to the heat from the pan. Add six seven curry leaves along with them and turn off the flame. Wait for some minutes and grind well in a Mixer.

Ingredients for Koottucurry

White Chenna – 150 gm

Yarm – 150 gm

White Gourd – 150 gm

Snake Gourd – 150 gm

Pumpkin – 150 gm

Raw Green Banana – 150 gm

Turmeric Powder – 0.5 Teaspoon

Kashmiri Chilly Powder – 2.5 Teaspoons

Salt – 1.5 Teaspoons

Jaggery – 20 gm

Asafoetida – 20 gm

Water – As required

Grated Coconut – 1 Cup

Preparation

Place a Pan on flame as per your requirement, and boil all the ingredients mentioned above. Add water according to the quantity to which all the ingredients are boiled well. Add Asafoetida and a bunch of curry leaves. In the time being, fry the grated coconut along with two table spoon of coconut oil. Fry until the color turns into golden brown. Switch off the flame, and grind a small portion of fried coconut in a mixer. Again switch on the flame, mix all the boiled vegetables with the grated coconut well, along with the grinded coconut paste in the same pan where all the coconut is being fried. Add the masala towards the mix, stir well for 5 minutes. Add curry leaves accordingly. The Koottucurry is ready to serve.

Ingredients

Bitter melon( soaked in tamarind water)

raw mango

oil

green chilly-2

curry leaves

ginger

shallots-5-8

onion-1

turmeric -1/2 tsp

chilly powder- 1 1/2 tsp

tomato-1

salt

coconut milk-1 1/2 cup

Oil

mustards-1/2 tsp

dry red chilly-2

curry leaves

onion chopped

chilly powder-1/4 tsp

Preparation

Heat oil in a pan, add bitter melon, saute well, then add mango, chilly,onion,ginger and curry leaves, saute until change color of bitter melon, then add masalas, salt , next coconut milk, mix well and cook for 1 more minutes, for seasoning, heat oil, crack mustards , chilly and curry leaves.then add onion, roast it well, add some chilly powder , then add to curry.

Preparation

Crush idiyappam by your hand. Boil milk with water, then add idiyappam,next add jaggerry and cardamom, cook well, finally add roasted cashews and raisins.

Easy Idiyappam and stew

Ingredients

For Idiyappam

rice flour-2 cup

salt

water-3 1/2 cup

sun flower oil-1 tbsp

For stew

Potato

carrot

onion

ginger

green chilly

sun flower oil

spices

salt

water-1 glass

cow milk-1 cup

rice flour-1 tsp

curry leaves

pepper powder

Preparation

In a non stick pan, add rice flour, salt , water and oil together, mix well and remove lumps, turn on flame stir well, once it become non sticky and thick. The you can make idiyappam as usual.

For stew, in a cooker, heat oil , add spices and onion saute it well,then add vegetables, cook well, add salt, then mash some patatoes,next add cow milk,then add rice flour milk mix,cook well, finally add some curry leaves.

Parippuvada and a side dish

Ingredients

gram dal-1/2 cup

tuvar dal-1/2 cup

green chilly-4-5

red chilly-4-5

ginger 1 piece

shallots

curry leaves

coriander leaves

hing powder-2 pinch

salt

oil for frying

Preparation

Grind all ingredients in a blender without water( keep small quantity of all aside). Then mix all together, and make shape then fry it.

For chammanthi, grind coconut with, roasted gram dal,coconut,green chilly and salt.

Green gram kinnathappam

Ingredients

green gram -1 cup( soaked)

water-1 cup

egg-1

corn flour-4 tbsp

coconut milk-1 1/4 cup

sugar-3/4 cup

salt-2 pinch

cardamom powder-1/2 tsp

cumin powder-1/4 tsp

ghee-1 tsp

Preparation

Grind soaked green gram with water then pour to a bowl into  a strainer. Add the mix to a kadai, add 1 egg, mix well, then cook until it become thick, mix coconut milk with corn flour and add to the kadai, stir well, add sugar,cardamom,salt, cumin powder and ghee, mix well, once it become non sticky, turn off flame and transfer to a plate, cut into desired shape after cooling it well.

Preparation

In a mixie jar, add green chilly,garlic,onion,ginger and curry leaves, grind it and add to chicken, next add masalas, corn flour,egg, curd and salt, marinate chicken with all masalas, rest for 3-4 hrs, then fry in hot oil.
