Ghee Rice

Required Items :-

Kaima Rice

Ghee

Salt

Cardamom

Cloves

Cinnamon

Onion

Cashew nut

Raisins

Coriander leaves

Preparation

Wash rice with rock salt for 5-6 times, then strain out water. Heat ghee in a pan, add onion, fry till color turn golden brown, then transfer to plate, next fry cashew and kismis and keep aside. In the same pan, add spices, roast it well, now add rice with salt, heat it well, then add boiling water and lime juice, cook well, finally add fried onion, cashew kismis and coriander leaves.

Cucumber Mango Curry

Ingredients

cucumber-1

raw mango-1

oil

mustards-1 tsp

urad dal-1 tsp

dry red chilly-4

curry leaves

hing-1 pinch

chilly powder-1 tsp

turmeric-1 tsp

salt

sugar-1 tbsp

Preparation

Peel off mango and cucumber and cut into small pieces. Heat a kadai, add oil, once it heat well add urad dal, mustards, dry red chilly and curry leaves, roast it well, then add mango, cucumber, salt , turmeric and water, cook it well, finally add sugar and chilly powder cook for 2 minutes. Mango curry is ready.

Orange jelly Pudding

Ingredients

orange juice- 1 1/2 cup

corn flour-2 tsp

orange food color-1/2 tsp

sugar

Preparation

In a pan, add orange juice , heat it well, now add orange juice+corn flour+food color mix into it, stir well, add sugar, stir until it become thick, then pour it to small bowls and allow it to cool, then serve it.

Chicken stew

Ingredients

Chicken : 500gm

Potato : 1 big

Carrot : 1 small

Onion : 1 big

Ginger crushed : 1 tbsp

Fennel seeds : 1/4tsp

Pepper powder: 1 tsp

Garam masala : 1/2 tsp

Salt : 1tsp

Thin coconut milk: 1.5 cup

Thick coconut milk : 3/4cup

Curryleaves

Green chilli: 3

Cashew nuts :10 (optional)

Coconut oil : 2 tbsp

Preparation

Heat coconut oil in a pan, add cumin, next add ginger chopped, next onion, saute it well, add salt, add chicken, mix well, next add pepper,curry leaves and chilly, saute it well, now add potato and carrot, then add coconut milk, cook it for 8 minutes, crush cinnaon,cloves and cardamom, add to curry, add thick coconut milk and cashews, mix well, cook in low flame for 2 minutes, finally add coconut oil and curry leaves.

Tomato curry

INGREDIENTS

Tomatoes -3

Chopped onion -2

Green chillies -3

Chopped garlic -1 tbsp

Fenugreek seeds -1/4 tsp

Cumin seeds -1 tsp

Curry leaves or Coriander leaves

Chilli powder -2 1/2 tbsp

Coriander powder -2 tbsp

Turmeric powder -1/2 tsp

Garam masala powder -2 tbsp

Salt to taste

Oil- 2 tbsp

Water (adequate)

Preparation

Heat a pan, add oil, add fenugreek and cumin, allow it to pop, next add chilly and garlic, saute it well , next add curry leaves and cinnamon stick, mix well,next add onion, mix all well, saute it for 2 minutes, now add masalas, mix until the raw smell gone, next add tomato, cook until it become soft , next add water, boil it well, now add thick coconut milk, finally add curry leaves and chilly.

Black Halwa( wheat)

Ingredients

wheat flour-4 laddle

salt

water

ghee

cashew nut

jaggerry

white sesame seeds

Preparation

Add wheat flour in a bowl, add salt and water, knead it well and make a dough, rest for 1 hour. Then add water into it, knead with your hand, then strain it, do this again and take wheat milk. Melt jaggerry, add wheat milk, stir well, once it turns to thick consistency add ghee and cashew nuts, stir again, add more ghee, cook another few minutes. In a glass tumbler grease with ghee spread sesame seeds and cashew, pour the halwa mix above it, set it with a spatula, allow it to cool, then cut it.

Tasty Potato Masala

Ingredients

Preparation

Add potato in a cooker, next add salt, masalas , onion , curry leaves and water, cook for 3 whistle. Heat a pan, add oil, after heating it well pop mustards, then add curry leaves and masala powders, mix well, then add cooked potato, mix well, mash half of them, make a thick gravy.

New easy Breakfast

Ingredients

lukewarm water-1/2 glass

yiest-2 tsp

sugar-1 1/2 tsp

maida-2 cup

salt

oil

for filling

chilly-1

curry leaves

Preparation

For activating yiest, mix yiest, sugar and lukewarm water, keep aside for 15 minutes. Take maida in a bowl, add salt and oil, then add activated yiest, mix well, knead it well and make a soft dough, rest for 1 hr. For filling, heat oil in a pan, add onion,chilly,tomato and curry leaves, saute it, then add salt and eggs, scramble it. Take the dough, divide into small balls, roll it , fill the egg mix and make a desired shape, brush egg yolk above and cook in a steamer.

Chayem Vadem – ചായേം വടേം

Idiyappam

Ingredients

rice flour-1 1/2 glass

salt

oil-1 tsp

hot water

cold water

Preparation

Take rice flour in a bowl, add salt, and oil, mix well. Boil water in a pot, add 1 glass of cold water and turn off flame, pour the water to rice flour, mix well, then knead it well, fill the dough in a idiyappam maker, add coconut, then cook it in a steamer.

Cherupayar paayasam

Ingredients (1 cup= 250 ml)

1. Cherupayar/Green Gram – 1 cup

2. Water – 4 + 3/4 cups

3. Milk – 2 cups

4. Sarkara/Jaggery – 300 gms

5. Cashews – 7 or 8

6. Raisins – 1 1/2 tbsp

7. Coconut Slices – 2 tbsp

9. Butter/Ghee – 2 tbsp

10. Rice Flour – 1 tbsp

11. Cardamom Powder – 1/4-1/2 tsp

12. Cumin Powder – 1/4-1/2 tsp

13. Dry Ginger Powder – 1/4-3/4 tsp

14. Salt – 2 pinch

Preparation

Melt jaggerry with water, then strain it.Heat coconut oil in a pan, roast cashews and kismis and raisins separately, roast coconut pieces too, and keep aside.Cook green gram with water, then mash with a laddle, next add jaggerry juice, mix well, now add butter, once it melted add milk, boil it for 2 minutes, add rice flour,milk mix for thickness, stir well, next add masala powders, finally add cashews, coconut and rising.
