Onion Vada

Ingredients

Savola – Big Onion – 4 Medium thinly sliced

MAIDA – 7-8 Tbsp as required

KASHMIRI Red Chilli Powder – 11/2-2 Tsp

Green Chilly – 2 chopped

Ginger – A small piece chopped

Curry Leaves – 1 String chopped

Fennel seeds – 1/4 Tspn

Salt – 1/2 Tspn

Oil for frying

Preparation

Add onion in a bowl, add salt then mix with your hand, rest this for 10 minutes, then onion become soft, now add other ingredients, mix well. Heat oil in a pan, take the onion mix with your hand put it to the oil, fry both sides well.

Instant Rava Dosa

Ingredients

rava-1 cup

wheat flour-2 tbsp

gram flour-2 tbsp

salt

curd-1 cup

Preparation

Add dry ingredients in a mixie jar, grind well, then add other ingredients one bye one, add water, mix with a whisk, make a perfect dosa batter, add sugar, rest the batter for 1/2 hrs, now make crispy dosa.

Rava kesari

Ingredients

Rava – 1/2 cup

Sugar – 1/2 cup

Water – 1 1/4 cup

Ghee – 4tbsp

Cardamom Powder

Preparation

Heat a pan, add ghee into it, once it melt add cashews, then kismis, roast it well, then transfer to a plate, next add semolina, roast it for 8 minutes. Mix saffron and hot water then rest for 10 minutes. Heat a pan , add water, add semolina after boil water, stir well, once it cooked add sugar, mix well,next add saffron mix, next add roasted cashew and kismis,cardamom and ghee, mix well, cook until it become non sticky.

Wheat flour Paalappam and egg roast

Ingredients

for appam

 wheat flour–2 cup

semolina-2 tbsp

cooked rice-1/4 cup

sugar

salt

yiest-1 1/2 tsp

coconut milk-2 cup

For egg roast

ginger garlic crushed

onion-4

salt

tomato

green chilly-2

curry leaves

coriander-1/2 tbsp

chilly powder-1 tsp

turmeric-1/2 tsp

Preparation

For Paalappam , add all ingredients in a bowl, grind into fine paste, pour the batter to a bowl, rest for 1/2 hrs, then make soft paalappam.

For egg roast, heat oil in a pan, add ginger garlic crushed, after the raw smell gone add onion, saute it well, add salt, chilly and curry leaves, cook until it become soft, then add masalas, next tomato, cook it to become soft and mushy, finally add egg and mix well.

Dry roast wheat flour in medium flame, once it turns aromatic, turn off flame and transfer the dust to a bowl, add boiling water with salt and coconut oil, knead it well, make a dough. Take a idiyappam press, fill the dough, press to idli plate, add coconut, then steam cook idiyappam.

Egg -3+1

Red chilli powder-little

bread crumbs

red chilli flakes

Preparation

In a bowl add 3 eggs n mix it with chilli powder and salt,add this mix to another bowl and steam cook it for 10 min
once it is cooked well cut it into desired shapes, Now add a egg to a bowl n mix it with chilli flakes n saltput egg pieces first in egg wash n then roll it in bread crumbs,Fry it in oil until golden brown.

Mexican Toffee Cake

Ingredients

All purpose flour – 1 cup

[ 1 cup =250 ml ]

Baking powder – 1 tsp

Baking soda – 1/4 tsp

Egg – 4

Vanilla essence – 1 tsp

Sugar – 1/2 cup

Sunflower oil – 2 tbsp

Hot milk – 1/4 cup

Milkmaid – 200g

Peanut

White compound

Whipping cream – 1 3/4 cup

Preparation

For toffee, Melt milkmaid by use a cooker. Take 2 tbsp and add to a bowl, add hot milk, mix well and keep aside. Grease cake tin and keep aside. For dry ingredients, take a strainer, add maida, baking soda, and baking powder, mix with a whisk and store in a bowl. Beat eggs and vanilla essance, add powdered sugar 2-3 times, beat well, add oil, just mix it, next add dry ingredients, mix with a spatula, finally add toffee mix into it, fold it again, transfer this batter to a cake container, bake it in a oven or pan.

For topping, beat whipping cream, add toffee, beat in full speed and keep aside. For toffee cream, mix toffee and hot whipping cream, beat well and set aside.Take peanut, crush it with a roller.

Cut the cake into 3 layers. Put first layer in a cake top, spread sugar syrup, next add cream, spread over, add some peanut, add toffee cream too, repeat this for another layer, finally, cover the cake with cream, pour cream toffee mix, spread over the cake, then decorate as you can, keep in fridge for atleast 1 hour before using.

Preparation

Heat a pan, add coconut , tamarind and shallots, fry it until it turns golden brown, then grind it into fine paste. In a claypot add vegetables with required water to cook, then cook it well, next add coconut paste, boil it well, finally add mustards and dry red chilly after tempering.
