Tender jackfruit Curry

Ingredients

tender jackfruit-1/2

cumin-1/2 tsp

hing-2 pinch

green chilly-2

coriander powder-1 tsp

turmeric-3/4 tsp

chilly powder-1 tsp

fennel crushed-1/2 tsp

tomato-3

salt

water-1 1/2 cup

garam masala powder-1 1/2 tsp

curd-1 cup

coriander leaves

oil

Preparation

Fry jackfruit pieces in oil and keep aside. Heat a pan, add oil , then add cumin, chilly and hing, roast it well, then add masalas and fennel crushed, mix well, then add tomato, mix with masala, when oil separates add fried jack fruit, combine all well, add water, let it boil, add garam masala powder, salt , and curd, once the gravy become thick add coriander leaves and turn off flame.

Duck Biriyani

Ingredients

Mixed paste:

1/2 kg onion

1/2 kg tomato

Curd -250 ml

other ingredients

Salt for taste

Duck meat -2 kg

Basmati rice -2kg

Garam masala -1tsp

Turmeric powder 1tsp

Ginger paste-50 gm

Green chilly paste

Garlic paste-50 gm

Kashmiri chilly powder -2 tsp

duck masala- 2 tsp

Fried coconut paste of 1 coconut

Mint for taste

Coriander leaf for taste

Preparation

Heat a pan, add coconut oil, allow it to heat well, then add onion, curd and tomato paste, add salt, then mix it about 5 minutes, then add duck meat , mix it with masala, then cover the lid and cook it well, after that add ginger garlic paste, chilly paste and masalas, combine all well, next add coconut paste, mix it well, cook it for 2 minutes then turn off flame.

For rice, heat a biriyani pot , add oil, then add sliced onion, whole spices, mint leaves and coriander leaves, saute it well, then saute it well, then add water, let it boil, add salt and rice, cook it well, for dum the biriyani,set rice and masala layer bye layer in a pot, add ghee in between the layers, add mint and coriander leaves on the top , then seal the pot, keep it for 5 to 10 minutes in low flame.

Ingredients

wheat flour-2 cup

salt

water-2 cup

onion-1

garlic-6

green chilly

carrot-1

coconut-1/2 cup

egg-2

turmeric-1/4 tsp

Preparation

Take wheat flour in a bowl, add salt, mix well, then add water, mix it for remove lumps, next add chopped vegetables, combine all well, then add egg and turmeric, again mix it. Heat a tawa, spread oil into it, pour 1 laddle of the batter, spread over the tawa, cook both sides, then transfer it to a plate.

Cow beans Masala curry

Ingredients

cow beans

green chilly-4

turmeric-1/4 tsp

salt

ginger garlic crushed-1 tbsp

coconut oil

Preparation

Soak cow beans for 6 hrs, then add it to a pressure cooker, add green chilly, turmeric, salt , ginger garlic paste and water, then cook it for 3 whistle. Heat a pan, add coconut oil, let it heat, then add onion, saute until it become soft, then add green chilly, curry leaves, ginger garlic and tomato, mix all and saute it well, then add masalas, after mixing well add water, then cover the pan, cook until it become soft and mushy, now add cooked cow beans, mix all well, add salt and garam masala, combine all, then boil it until the gravy become thick.

Coconut Cookies

Ingredients

Butter / ghee – 1/2 cup

Powdered sugar – 1/2 cup

Maida -1 cup

Desiccated coconut – 1/2 cup

Baking powder – 1/2 tsp

Milk – 1 or 2 tbsp

Preparation

Mix ghee with powdered sugar in a bowl, add maida, baking powder and coconut, knead it well, add milk to make a soft dough, then divide the dough into equal small balls, make all balls into cookie shape, finally bake it in oven.

Watermelon Juice

sabja seeds

Preparation

Cut water melon into small pieces, add apple pieces into it, next add sabja seeds soaked, then add condensed milk for sweet, mix it with a laddle, then serve it.

Soft Unniyappam

Ingredients

jaggerry-3

water-1/2 glass

oil

coconut pieces

raw rice soaked-1 cup

cardamom-4

cumin-1/4 tsp

maida-3 tbsp

salt a pinch

baking soda-1/4 tsp

black sesame seeds-1/2 tsp

Preparation

Melt jaggerry with water and let it cool. Roast coconut pieces until it turns golden brown and keep aside. Add soaked rice in a mixie jar, next add cardamom, cumin and melted jaggerry, then grind it into coarse batter, transfer it to a bowl, then add salt, baking soda, maida, sesame seeds and roasted coconut, mix all well. Rest the batter about 1/2 hrs. After that heat oil in a unniyappam pot, pour batter to the holes, fry both sides in low to medium flame.

Nool Porotta

Ingredients

Maida-1 kg

sugar-2 tbsp

Milk-200 ml

oil

salt

water-400 ml

Preparation

Take maida in a bowl, add salt and sugar, mix with a spoon, then mix milk and water and pour it to the maida, knead it well with your hand, cover the dough with a wet cloth for 10 minutes, then transfer the dough to a counter top, knead it about 10 minutes continously, spread oil above the dough, cover with a cloth, then rest the dough for 3 hrs.After that take the dough and knead it again, then divide it into equal balls, flat the balls with a chapathi roller or hand, pour oil into it and make maximum thin layer, then spread maida above it, then cut it with a dough cutter, next set all layers and roll it, again flat it, after the making is done cook porota in a tawa, finally tap porotta with heat.

Sesame Laddu

Ingredients

black sesame seeds-1 cup

white sesame seeds-1/4 cup

jaggerry-4

water-1/4 cup

cardamom powder

Preparation

Heat a kadai, add both sesame seeds together, dry roast it well, then transfer it to a plate. Melt jaggerry in a pan, once it completely melt add cardamom, after mixing well add roasted sesame seeds, mix all well until it become thick, now turn off flame, let it cool, then make small laddus with your hand.
