Duck Biriyani

Ingredients

Mixed paste:

1/2 kg onion

1/2 kg tomato

Curd -250 ml

other ingredients

Salt for taste

Duck meat -2 kg

Basmati rice -2kg

Garam masala -1tsp

Turmeric powder 1tsp

Ginger paste-50 gm

Green chilly paste

Garlic paste-50 gm

Kashmiri chilly powder -2 tsp

duck masala- 2 tsp

Fried coconut paste of 1 coconut

Mint for taste

Coriander leaf for taste

Preparation

Heat a pan, add coconut oil, allow it to heat well, then add onion, curd and tomato paste, add salt, then mix it about 5 minutes, then add duck meat , mix it with masala, then cover the lid and cook it well, after that add ginger garlic paste, chilly paste and masalas, combine all well, next add coconut paste, mix it well, cook it for 2 minutes then turn off flame.

For rice, heat a biriyani pot , add oil, then add sliced onion, whole spices, mint leaves and coriander leaves, saute it well, then saute it well, then add water, let it boil, add salt and rice, cook it well, for dum the biriyani,set rice and masala layer bye layer in a pot, add ghee in between the layers, add mint and coriander leaves on the top , then seal the pot, keep it for 5 to 10 minutes in low flame.
