A special Mango Recipe

Ingredients

raw mango-2

chilly powder-3 tbsp

fenugreek powder-1.5 tsp

hing powder-1/2 tsp

salt

gingelly oil

Preparation

Cut mango into long pieces without peel off. Heat oil in a pan, add mango, fry it well, then transfer it to a plate. In the same pan, add chilly powder, salt, fenugreek powder, and hing, heat it well, then add fried mango, mix all well, cook it for 5 minutes, then turn off flame. After cooling well keep in air tight glass jar.

Puffed rice dosa

Ingredients

puffed rice-1 1/2 glass

raw rice-1 1/2 glass

water

salt

for chutney

coconut-4 tbsp

roasted chickpea-2 tbsp

coriander leaves

green chilly-4

tamarind

salt

water

mustard

curry leaves

dry red chilly

coconut oil

Preparation

Soak rice for 4 hrs, then grind it with puffed rice after washing well, then make a fine batter, and transfer it to a bowl, keep overnight for fermentation. Next morning , take the batter, add salt, make soft dosa in tawa.

For chutney, grind coconut with, green chilly, roasted chickpea, tamarind, coriander leaves , salt and required water. For tempering the chutney, pop mustard in coconut oil, add curry leaves and dry red chilly, after roasting it well pour it to the chutney.

Anchovy(Netholi) fish curry

Ingredients

for marination

anchovy fish-1/2 kg

salt

turmeric-1/4 tsp

chilly powder-1 tbsp

for curry

tomato-1/2

green chilly-4-5

salt

turmeric-1/4 tsp

tamarind juice

water

crushed garlic

raw coconut oil

curry leaves

Preparation

Marinate fish with salt , turmeric and chilly powder then keep it aside. In a claypot add tomato, green chilly, salt,turmeric, chilly powder, tamarind juice and required water, boil it well then add fish, lets cook it, finally add some curry leaves, garlic crushed and coconut oil, then turn off flame.

Fish Masala

Ingredients

fish -1/2kg

oil

ginger garlic paste

tomato-3

salt

turmeric-1/4 tsp

chilly powder-1 1/2 tbsp

coriander powder-1 tbsp

garam masala-1/2 tsp

fennel powder-1/2 tsp

fennel powder-1/4 tsp

curry leaves

green chilly-3-4

onion-2

coriander leaves

Preparation

Marinate fish with salt,turmeric and chilly powder, keep aside for 1/2 hrs. After that, heat oil in a pan, add fish pieces then fry it well, transfer fish to a plate and keep aside. Then add ginger garlic paste to the pan, saute until the raw smell gone , then add tomato, mix well, then cook until it become soft and mushy, now add masalas and salt, mix well and cook it again for another 3 minutes, then transfer it to a blender, and blend it well. Heat oil in a pan, add fenugreek seeds, then add curry leaves and green chilly, saute it well, then add onion, add salt and saute it for 2-3 minutes, then add masala paste and required water, allow it to boil, now add fish, combine well, boil until the gravy become thick, finally add coriander leaves.

Carrot juice

Ingredients

carrot-2

lemon-2

basil seeds-11/2 tsp

cold water-2 cup

ice cubes

sugar

preparation

Soak basil seeds in water and keep aside. Peel off carrot and cut it into small cubes, then add it to a mixie jar, add ginger too, then blend it well, then add sugar, water and ice cubes, blend again, then strain juice, serve it with soaked kaskas.

Milk Ice bars

Ingredients

milk-2 cup

milk powder-1/2 cup

condensed milk-1/4 cup

sugar-1/2 cup

corn flour-2 tbsp

water

vanilla essence-1 tsp

Preparation

Boil milk in a sauce pan, add milk powder, condensed milk, and sugar, stir it well, once it starts boiling add corn flour and water mix, continue stirring, once it turns thick add vanilla essence, mix again, then turn off flam, then let it cool, then transfer it to popsicle mould, put sticks into each hole, then keep in refrigerator for overnight or 8 hrs, then demould it.

Ragi appam for breakfast

Ragi is rich in fibre minerals and amino acids which make it a good choice for diabetics. It also has more polyphenols than the commonly used grains like rice, wheat, and corn which help control blood sugar levels.This is the best breakfast choice.

Ragi flour – 2 cup

urad dal – 2 tablespoon

Coconut water – 2cup

sugar 1 tablespoon

salt to taste

Preparation

Mix coconut water and sugar and keep aside for 1 day for fermentation, soak urad dal for 2 hrs, then mix urad dal, coconut water and ragi, grind it into fine paste then keep aside for fermentation for 4 hrs. After that, pour this batter to small greased bowls, then steam cook it.

Banana Side dish for appam and idiyappam

Ingredients:

Milk 2 cup

ghee 1 tablespoon

raisins few

banana 1

cardamom powder 1/4 teaspoon

sugar 1 tbsp

rice flour 2 tablespoon

Preparation

Heat a pan, add ghee, once it melts add kismis, roast it well and transfer it to a plate, next add banana pieces to the pan, saute it well and keep aside. Boil milk in a sauce pan, then add banana and kismis roasted into it, mix well. Take rice flour in a small bowl, add water mix well to remove lumps then add to milk, add sugar and cardamom too, then stir it well, once it become thick turn off flame.

Preparation

In a clay pot, add pumkin and cowbean, add masalas, salt and water, cook it for 15 minutes, grind coconut and other ingredients for grinding in the recipe, crush it well and add it to curry, mix all well, cook it for 2-3 minutes. Finally, for seasoning heat oil in a pan, pop mustards, then add dry red chilly, shallots and curry leaves, roast it well, then add coconut, roast until it turns golden brown, then add it to the curry, mix all well.
