Hot chocolete

Ingredients

milk-2 cup

coffee powder-2 tsp

sugar-2 tsp

cocoa powder-2 tsp

corn flour-1 1/2 tsp

milk-2 tsp

chocolete bars

Preparation

Take a sauce pan, add milk, coffee powder and cocoa powder, mix it with a whisk, then add sugar, after mixing well transfer the pan to stove top, then stir it well, add chocolete bars, continue stirring, once it melts add corn flour and milk mix, cook it again, once it become medium thick, turn off flame, then serve it with hot.

Ottada

Ingredients

raw rice-2 1/2 cup

coconut-1 handful

cooked rice-2 handful

shallot-2

cumin-1 tsp

salt

water

Preparation

Take a mixie jar , and add rice, cooked rice, coconut, shallots and cumin, then add required water and grind it into fine batter, transfer it to a bowl, then add salt and mix well. Heat a clay pan, pour the batter with a laddle, and just round it, once the bubbles come out, cover the pan and wait for 1 minute, then transfer it to a plate.

Potato Murukk

Ingredients

Potato – 1

Gram flour / Besan – 1 cup

Fried rice flour – 1/2 cup

Turmeric powder – 1/2 teaspoon

Asafoetida Powder – 1/4 teaspoon

Salt to taste

Baking soda – 1/4 teaspoon

Warm oil – 1 tablespoon

Preparation

Take a bowl, add rice flour, gram flour, masala powders, salt and baking soda, mix all together, next add oil, and potato paste, knead it well and make soft dough. Take idiyappam maker with star mould, fill the dough, then press to hot oil, then fry it well.

Veg Biriyani

Ingredients

ghee-2 tbsp

cashew and kismis

whole spices

onion-2

ginger ,garlic, chilly crushed

tomato-2

salt

chicken masala-2 tbsp

potato

green peas

curd-3 tbsp

coriander leaves-1 cup

mint leaves-1 cup

basmati rice-3 cup

water-6 cup

Preparation

Heat ghee in a pan, add cashew and kismis, after roasting it well add whole spices, roast it again, then add onion, saute it for 3 minutes, next add ginger , garlic and chilly crushed, mix it well, once the raw smell gone add tomato, add salt and saute it again, next add potato and green peas, mix it well, add masala powder and mix with masala, now mint and coriander leaves, and curd, after mixing well add rice, then add water, cover the lid and boil it, mix it frequently, once it cooked well turn off flame.

Ingredients

mustard-1/2 tsp

urad dal-1/2 tsp

hing powder-1/4 tsp

gram flour-1 tsp

Preparation

Heat oil in a pan, add mustard and urad dal, roast it for a minute, then add hing powder,green chilly, ginger, curry leaves and onion, saute it well, add turmeric, mix it with masala, then add carrot and green peas, combine all well, then cook it for 5 minutes, now add water, next add gram flour paste into it, mix it again, once it boil well add potato, after mixing well cover the lid and cook for 2 minutes, then turn off flame.

Egg Puffs

Ingredients

maida-2 cup

salt

oil-2 tbsp

water

for masala

oil-3 tbsp

onion-2

ginger garlic paste-1 tsp

turmeric-1/4 tsp

coriander powder-1/2 tsp

chilly powder-1/2 tsp

garam masala-1/2 tsp

chicken masala-1/2 tsp

pepper powder-1/2 tsp

boiled egg-4

Preparation

For dough, add maida, salt and oil to a bowl, mix well, then add water, knead it well and make soft dough, spread oil above it and rest it for 1/2 hrs. For masala, heat oil in a pan add onion and salt, saute until it become soft, now add ginger garlic paste, after mixing well add masala powders, once the raw smell gone turn off flame.

Take maida dough, knead it again, then flatten it as much as you can, then spread oil and dust with maida, after that, fold it from sides, again roll it and repeat the same, then cut the sheet to 8 equal parts, put masala in each pieces, then add 1/2 piece of boiled egg, then fold it to the centre from corners, brush egg above the puffs, then bake it.

Tea Cake

Ingredients

maida-1/2 cup

baking powder-1/2 tsp

egg-4

powdered sugar-3/4 cup

vanilla essence-1 tsp

milk essence-1/2 tsp

Preparation

Take a bowl, put a strainer above it, then add maida and baking powder, sieve it to the bowl and keep aside. Break eggs and separate egg white and egg yolk. Beat egg white for a minute, then add powdered sugar in batches, beat it until it become stiff, then add vanilla essence and milk essence, then add egg yold, after beating it well add maida flour, mix it well, then take a cake mould with butter paper, pour the batter, after tapping it , bake it in oven.

Beef Roast

Ingredients

beef-1/2 kg(marinated with salt,turmeric and chilly powder)

onion-1

tomato-1

ginger

garlic-5-6

green chilly-4

salt

pepper powder

garam masala powder

curry leaves

garlic crushed

coconut oil

coconut pieces

Preparation

Take a pressure cooker, add onion, tomato, ginger,garlic, green chilly and marinated beef, mix all well, add salt and small quantity of water, mix it again and cook it for 10 whistle.once the pressure is gone, open the cooker and transfer beef to iron kadai, turn on flame and boil it, add pepper powder, garam masala , and curry leaves, combine all, then cook until it become dry, add garlic crushed into it, after 5 minutes add roasted coconut pieces with coconut oil, mix well and turn off flame.

Mango Frooti at home

Ingredients

ripe mango-2

raw mango-1

sugar-1/3 cup

vinegar-1 tsp

Preparation

Peel off mangoes and add to a mixie jar, grind it into fine paste, then add sugar, grind it again, then transfer it to a pan through a strainer,after straining heat the pan and keep flame low, stir mango puree with  a spoon, boil it for 5 minutes, then turn off flame and let it cool, add 1 spoon of vinegar and store in fridge.

Mango Delight

Ingredients

corn flour-2 tbsp

mango fruit-2

sugar-1/4 cup

desicated coconut

ghee

Preparation

Cut mango into small pieces, then add it to a mixie jar, grind it into fine paste, then transfer it to a pan, cook it in medium flame, add sugar and continue stirring, take a bowl, add corn flour and water, mix well and remove lumps then pour it to the pan, stir it again, add ghee frequently, once it become thick and non sticky, turn off flame and transfer it to a glass tray, wait until it become set, then cut it into small cubes and coat desicated coconut.
