Raw Papaya Halwa

Ingredients

Raw papaya-2

Sugar-1cup

Milk-1cup

Corn Flour-3tbsp

Cardomom powder-1tsp

Ghee-5tbsp

Nuts

Preparation

Peel off papaya, then grate it. Heat ghee in a pan, add grated papaya into it, saute it well, once it become soft and transparent add sugar, let it melt completely. Mix milk with corn flour, add to papaya mix, combine all well, add cardamom and more ghee, mix it well, add ghee frequently, continue mixing until it become thick and non sticky, add nuts, after a mix transfer the halwa to a glass mould, set it with a spoon, once it cooled down, cut it into desired shape.

Tips to grate coconut easily

We keralites add coconut in most of the curries, the process of grating coconut is little time consuming one. This is the most helpful tips to grate coconut easily and very useful for home makers.

Tip 1: Wrap full coconut with a plastic cover , then freeze it overnight, next morning, take it from freezer and put it in water for a few minutes, then break it and remove coconut from shell, cut it into small pieces and pulse it.

Tip 2: Take half piece of coconut, heat the shell for 2-3 minutes, thee pulp separates from shell itself, then cut it and crush it in a blender.

Potato Fry

Ingredients

Potato-2

curry leaves

green chilly-2

coconut oil-2 tsp

mustard-1 tsp

dry chilly-2

salt

turmeric-1/4 tsp

kashmiri chilly powder-1/2 tsp

Preparation

Take 2 potatoes, peel off, then cut it into square shape pieces. Heat oil in a pan, add curry leaves and mustard, after crack it, add dry chilly, mix it for a minute, then add potatoes, add salt, turmeric,and chilly powder, mix well then cover the lid and cook it well, once the potatoes become soft turn off flame.

Chicken Tikka Biriyani

Ingredients

Basmati rice-3 cup

cinnamon-3

cloves-6

shajeera-1 tsp

cardamom-4

salt

oil

chicken-1 kg

chilly powder-1 tbsp+2 tsp

fennel powder-1 tsp

pepper powder-1 tsp

turmeric-1 tsp+ 1/2 tsp

garam masala-1 +1 1/2 tsp

lemon juice-1 tbsp

yogurt-1 +3 tbsp

oil

onion-3

green chilly-8

ginger garlic paste-3 tbsp

tomato paste-2

coriander leaves-1 cup

mint leaves-1 cup

Preparation

Marinate chicken with chilly powder, turmeric, fennel powder, pepper powder, ginger garlic paste, curd ,oil and salt, mix well and keep aside for 20 minutes. Then fry the chicken in a pan and keep aside. Add onion in to the pan, next add green chilly and ginger garlic paste, saute it until it become golden brown, next add chilly powder and turmeric, mix well, next add tomato paste, cook until it become oil separates, now add mint and coriander leaves, and curd, mix well, then add water, boil it well, next add chicken, combine all well, add salt, garam masala, mix well and cook until it become thick, then turn off flame.

For rice, boil water with whole spices, salt and oil, add rice and cook it well, then strain rice from water. Take half of rice from it, then add chicken masala, spread evenly above the rice, add coriander and mint leaves, then add another portion of rice, again add mint and coriander leaves, pour saffron milk, then seal the pot with aluminium foil, cover it with a lid, cook it in low flame for 15 minutes, then serve it.

Tomato Bread Toast

Ingredients

Preparation

In a mixie jar, add tomato, onion, garlic, turmeric,chilly powder,egg and salt, then blend it well, pour the paste to a bowl. Heat a tawa, spread oil, take bread slice, dip it in tomato paste, then add to the tawa, toast both sides well.

Add tender coconut pulp to a mixie jar, add coconut water and grind it into fine paste, add sugar, cardamom and more coconut water, blend it again, then serve it.

Jackfruit Idiyappam

Ingredients

• Rice flour – 1 cup

• Ripe jackfruit pulp – ½ cup

• Grated coconut – ½ cup (optional)

• Coconut oil – 1 teaspoon

• Water – ½ cup

• Salt

Preparation

Grind jackfruit into fine paste. Boil water with salt ad oil, then add rice flour, mix well, then add jackfruit paste, knead it well and make soft dough. Take idiyappam mould, brush oil, then fill the dough, squeeze it to idli plate, add coconut, then steam it well.

Yam Curry

Ingredients

Preparation

Cook yam with salt,turmeric and water, then keep it aside.Heat oil in a claypot, add mustard, allow it to pop, then add fenugreek, ginger, green chilly, shallots, curry leaves and garlic, saute it well, then add masala powders after turning off flame, mix well, then on flame again, add water and tamarind, add salt if required, then boil it well, now add cooked yam, boil it again for 5 minutes, finally add hing powder and jaggerry.

Rice Flour vada

Ingredients

rice flour-1 cup

green chilly-2

ginger

salt

water-1 1/2 cup

oil

pepper powder

shallots chopped

curry leaves

Preparation

Take a pan, add rice flour, salt, ginger, green chilly and water, mix well, then transfer it to a stove top, cook it in low flame, mix well, once it become thick and non sticky, turn off flame. After cooling it well add shallots, curry leaves and pepper powder, knead it with your hand and make soft dough. Take small portions from it and make vada shape and fry it in hot oil.

Rice Poori

Ingredients

raw rice- 1 1/2 glass

shallots-4

fennel-1 1/2 tsp

water

semolina-5 tbsp

salt

oil for frying

Preparation

Soak rice for 4 hrs, then grind it with shallots , fennel, salt and required water, then grind it into fine batter. Heat a pan, pour the batter, mix well, cook it in low flame, once it become thick and non sticky turn off flame and transfer it to a bowl, knead it well by adding oil, make a soft dough, divide it into equal balls, then flatten it in a presser, then put it in the hot oil, once the bubble comes out, flip it and cook both sides. Cook whole pooris.
