Banana Snack

Ingredients

banana-1

jaggerry-1 cup

water-1/4 cup

cardamom-4

cumin-1/2 tsp

corn flour-1/2 cup

milk-1 cup

water-1 cup

ghee

Preparation

Boil banana well, then add it to a mixie jar, add jaggerry juice, cardamom, cumin, corn flour, milk and water, grind it well, then strain it to a pan, turn on flame, then stir it well, add ghee, once it become thick, turn off flame and transfer it to a ghee applied plate, level it with a spoon, and allow it to set well. Now its ready to serve.

Potato Masala

Ingredients

boiled and smashed potato – 4

carrot – 1

onion – 1

garlic – 4

ginger – 1/2 inch

green chilli – 2

curry leaves

coconut oil – 2 tbsp

ghee – 1 tsp

mustard – 1 tsp

turmeric powder – 1/2 tsp

salt as per taste

Preparation

Heat oil+ghee in a pan, add mustard, allow it to pop, then add ginger, garlic and chilly, saute it well, then add onion and cashews, saute until it become soft, now add carrot, after sauting 1 minute add turmeric and salt, mix it until the raw smell gone, now add mashed potato, combine all well, finally add some curry leaves then turn off flame. Now make masala dosa with this masala.

Mackerel Fish curry

Ingredients

Coconut oil-3 tbsp

fenugreek-1/4 tsp

green chilly-2

ginger garlic crushed-1 tbsp

garlic-5-8

shallots-10-12

turmeric-1 tsp

coriander-2 tbsp

red chilly powder-3 tbsp

fish masala-2 tsp

hing-1 pinch

fenugreek powder-1/4 tsp

water- glass

salt

pot tamarind

fish-1 kg

curry leaves

Preparation

Heat oil in a clay pot, add fenugreek, let it pop, then add ginger garlic crushed, then fry it, next add garlic and chilly, mix well, then add shallots chopped, saute all until the color become brown, now lower the flame and add masala powders, mix all, then pour water, after mixing well add tamarind and salt, let it boil well, then add fish, once it cooked enough, turn off flame and add curry leaves.

Chicken Curry

Ingredients

chicken-1 kg

ginger garlic paste-1 tbsp

salt

turmeric

chilly powder

coriander powder- 1 1/2 tbsp

curd-3 tbsp

onion-1

mint-1 handful

cumin-1 tsp

oil-2 tbsp

tomato-1

green chilly-2

water

pepper powder-1/2 tbsp

garam masala powder-1/2 tbsp

coriander leaves

coconut milk

Preparation

Marinate chicken with ginger garlic, masala powders, salt and curd, then keep aside. Grind onion with mint leavesand cumin and make a paste. Heat oil in a pan, add the onion paste, saute it well, then add tomato, mix it until it turns soft, now add green chilly and chicken, add a little water, cook it about 30 minutes, then add garam masala and pepper powder, combine well, finally add coconut milk, heat it then turn off flame, add coriander leaves, then cover the lid, wait for 5 minutes then serve the curry.

Leftover rice idli

Ingredients

cooked rice-2 cup

semolina-2 cup

water-1 cup

curd-1 cup

salt

baking soda-1/2 tsp

Preparation

Grind rice with water, then transfer it to a bowl, add semolina, curd and salt, then mix well, keep this aside for 15 minutes, then add baking soda, mix well and make soft idli as usual.

Egg samosa

Ingredients

Preparation

Prepare maida dough with maida, salt,oil and water, then keep aside. Heat oil in apan, add eggs, scramble it well and keep aside.In the same pan add oil, then add ginger, green chilly and curry leaves, saute it well, then add onion and salt, saute it well, then add masala powders, next add egg , mix all well, then turn off flame.

Divide the dough into balls, then flatten it, cut the chapathi into two, add filling in one side, fold it like triangle, finally fry it in hot oil.

cinnamon

cloves

bay leaf

pepper

shallots-150 gm

coconut pieces

curry leaves

garam masala-1 tsp

turmeric-1/2 tsp

tomato-1

sugar-1 pinch

Preparation

Marinate beef with the above said ingredients and keep aside. Heat oil in a clay pot, add whole spices, then add garlic, and green chilly, saute it well, then add shallots and coconut pieces, mix well, next add onion, saute until it become soft, now add masala powders, mix until raw smell gone , now add tomato and a pinch of sugar, then add beef, cook it well, add a glass of water for cooking. Finally season the curry with mustard, red chilly, curry leaves and shallots.

Chicken Biriyani

Ingredients

Chicken -600g. m.

onion -4nos.

oil- 3tbs

lemonjuice -1tsp.

turmericpowder- 1/2tsp.

redchillypowder- 2tsp

corianderpowder- 2tsp

pepperpowder- 3/4tsp.

salt -1/2+3/4 tsp

greenchilly- 4nos.

bayleaf -2nos.

cloves -3nos.

elachi -2nos.

garam masalapowder -3/4tsp.

Basmathirice -400g. m.(2 cup)

water -2 1/4 cup

salt- 1/2tsp

ghee -2tsp

cinnamon

cardamom -3nos.

limejuice -1tsp.

mintleaves- 1/2cup

cashewnuts &Raisins

Preparation

Marinate chicken with masala powders, lemon juice, ginger garlic crushed and salt then keep this in fridge for 1/2 hrs. Fry onions in a pan, and keep aside. Heat oil in a pan , add whole spices, after roasting it well add garlic and green chilly, mix well, then add onion and salt, saute it well, then add coriander powder, mix it with masala, next add chilly powder, mix again, next add pepper powder, then add marinated chicken and water, combine all, then cook it well.

Boil water with salt, lemon juice, fried onion, cinnamon, oil and bay leaf, once it boil well, add 1/2 hr soaked rice, cook it about 90 %.

Add fried onion to chicken masala, then mix it, add pudina leaves above the chicken, then add cooked rice, add fried onion, pineapple essence, and mint leaves above the rice, dum it for 20 minutes. Then serve it.

Preparation

Marinate papaya with the ingredients given in the list then keep aside. Heat oil in a pan, add cinnamon stick, then add shallots chopped, garlic, chilly and ginger, saute it until it turns golden brown, next add masala powders, after mixing it well add tomato, mix it with masala, once it become soft add papaya, pour water and cook it well. Grind coconut, cumin, shallots and water together, then add to curry, boil it again, finally season the curry with the ingredients given in the list.
