Preparation

Heat a pan, add masala powders, heat it well, then grind it with coconut and tamarind soaked water, make a fine paste. Heat oil in a pan, add mustard, let it pop well, then add dry chilly and curry leaves, saute it well, then add onion, chilly and othe chopped vegetables, mix all, add salt and some water, cook it well, then add coconut paste, boil it again, add more water and salt if required, boil for 1 more minute, then turn off flame.

Chilly Chicken

Ingredients

for marination

chicken

ginger garlic paste

pepper powder

corn flour

chilly powder

kashmiri chilly powder

salt

for sauce mix

water

vinegar

soy sauce

chilly powder

tomato sauce

corn flour

ginger garlic chopped

onion

capsicum

pepper powder

Preparation

Marinate chicken with the items in the list, then keep this aside for an hour. Fry chicken after marination. Take a bowl, add sauces, water, vinegar, chilly powder and corn flour, mix well and set aside. Heat oil in a pan, add ginger and garlic chopped, saute it well, then add onion and capsicum, mix all together, pour the sauce mix, add chicken into it, mix all well, cook it until it become thick, finally add some pepper powder, mix well and turn off flame.

Bread Snack

Ingredients

1. Bread- 6 Slices

2. Onion(small)- 1

3. Green Chilli- 3

4. Ginger- Small piece

5. Curry Leaves

6. Rava(unroasted)- 1/4th cup

7. Curd- 1tbsp

8. Asafoetida-1 pinch

Preparation

In a bowl add bread after cutting it into small pieces, then add semolina, chopped vegetables, and salt, mix all well, spread a little water, then mix it again, add rice flour to adjust consistency, make this mix a sticky dough. Make small holed vada from this mix, then fry it in hot oil.

Egg Curry

Preparation

Heat oil in a pan, add mustard to pop, then add onion, green chilly, ginger garlic and curry leaves, saute all well, then add tomato, after sauting it well add masala powders, mix it well to remove the raw smell, pour hot water, let it boil well add salt to taste, once it become thick pour coconut milk, then add boiled egg, combine all well, then turn off flame.

Tapioca Vada

Ingredients

Tapioca-2 large pieces

Preparation

Grate tapioca in a bowl, then squeeze it to remove the starch, then add onion, ginger, chilly powders, hing, salt and curry leaves into it, knead it with your hand, then make small vada from this mix, then fry it well in hot oil.

Preparation

Boil tomato in a sauce pan, then cut it into small pieces. Heat oil in a pan, add onion, green chilly, ginger and garlic, saute it well, then add masala powders, and salt, mix until the raw smell gone, then add tomato, combine all, add scrambled egg, combine all well, add some curry leaves then turn off flame.

Grape sweet

Ingredients

grapes-300 gm

sugar-1/2 cup

corn flour-1/4 cup

Preparation

Wash grapes well then add to a mixie jar, grind it well and take 300 ml of grapes juice. Add corn flour and sugar into it, mix well, then add to a pan, turn on flame, stir it well, once it become thick transfer it to a container, after the heat is gone keep it in fridge, 2 hrs later cut it in desired shape.

Kaaykari Paayasam

Ingredients

rice- 1/4 cup

raw rice -1/4 cup

gram dal-1/4 cup

rice flour

coconut milk thick

second extract of coconut milk

banana-1

sugar-1/4 cup

ghee

cashews

Preparation

Soak raw rice, rice and gram dal separately for 2-3 hrs. Grind rice with less water and make a thick paste, add rice flour to the batter and knead it well, make a soft dough, divide it into equal tiny parts, then steam it. Grind raw rice and make a loose batter. Cook dal in a pressure cooker. Take a pan, add second coconut milk, sugar and loose rice batter, mix well, then cook it, stir continously, add banana, cook it well , once it become thick add cooked dal, mix well, cook again for 2-3 minutes, now add thick coconut milk, after mixing well, turn off flame, finally add roasted peanut.

Rava, Banana snack

Ingredients

banana – 2

rava – 1/4 cup

coconut – 1/2 cup

ghee – 1 tbsp

egg – 4

sugar – 1/4 cup

salt

cardamom powder – 1/2 tsp

cashew nuts

Preparation

Heat ghee in a pan, add cashew, after roasting it well keep aside, then add rava to the ghee, roast it until it become golden brown, then add coconut, mix all, next add banana pieces, mix all, then turn off flame. Break eggs to the mixie jar, add sugar and a pinch of salt, blend it well, then pour above the rava mix, add nuts, mix all well. Take a sauce pan, apply oil, then pour the mix. Heat a pan, put the sauce pan above the pan, close it with a lid, then cook it in low flame.

Masala Bonda

Ingredients

oil

urad dal-1/4 tsp

mustard-1/2 tsp

turmeric-1/4 tsp

chilly powder-1/2 tsp

boiled and mashed potato-2

coriander leaves-1 handful

gram flour-1/2 cup

rice flour-1 tsp

chilly powder

salt

turmeric-1 pinch

hing-1 pinch

water

oil for frying

Heat oil in a pan, add urad dal and mustard, let it pop well, then add onion, ginger, green chilly and curry leaves, saute it all well, then add masala powders, mix until the raw smell gone, next add potato combine all together, add some coriander leaves, then turn off flame.

For batter, add flours, masala powders and salt in a bowl, pour water, then mix it well, make a thick batter.

Divide potato into equal small balls, dip all in batter, then fry it in hot oil.
