Preparation
Whisk together eggs, turmeric powder, black pepper powder, Kashmiri chili powder, and salt in a bowl. Heat oil in a pan and cook the egg mixture in two batches until lightly browned. Cut the cooked eggs into long strips. Saute chopped onions, garlic, green chilies, and tomatoes in the same pan.Add soy sauce, tomato ketchup, and a cornstarch slurry to the pan and cook until thickened. Add the egg strips to the pan and mix well.Garnish with cilantro and serve.
