Ration rice putt

Ingredients

Rice-1 cup

coconut grated

salt

cumin

shallots crushed-2-3

Preparation

Wash rice and soak overnight, then strain out from water , keep 1/2 hr, then grind this rice like putt podi consistency, then add coconut, cumin, mix well, then cook putt in a steamer, put the shallots in the boiling water.

Putt podi idly(instant)

Ingredients

Roasted Putt podi-1 cup

yogurt-1 1/2 cup

water-1/2 cup

salt

eno fruit salt-1 tsp

Preparation

Mix all ingredients together, make a thick batter, then rest for 5 minutes, then cook idly in a steamer.

Chickpea curry

Ingredients

chickpea-2 cup

onion-2

garlic crushed-1 tbsp

ginger crushed-1 tbsp

turmeric-1/2 tsp

salt

water-6 cup

coconut oil- 1 tbsp

mustards-1 tsp

curry leaves

coriander powder-2 tbsp

red chilly powder-1 tbsp

garam masala-1/2 tsp

hing-1/4 tsp

Preparation

Soak chickpea for 10 hrs, then cook in a pressure cooker with onion, ginger garlic, turmeric, salt , and 6 cup of water. Then heat a pan, add coconut oil, mustards and curry leaves, next all ,masalas, roast in low flame, then add to the curry, and cook until it becomes thick.

Beef macaroni masala

ingredients

macaroni- 2 glass

cooked beef- 1/4 kg

oil

garlic

onion-2

pepper powder-1 tsp

turmeric powder-1/4 tsp

kashmiri chilly-2 tsp

garam masala-1 tsp

tomato puree- 2

water

oregano

coriander leaves

Preparation

Heat a pan, add oil, then ginger garlic, onion, pepper powder and turmeric, saute well, next add cooked beef and other masalas, cook for 5 minutes, then add other masalas and tomato puree, mix all well, next add cooked macaroni, finally add coriander leave, then serve with hot.

Ingredients

For pav baji masala powder

coriander seeds- 1 tbsp

cumin-1/2 tsp

fennel-1/2 tsp

kasoori methi-1 tsp

dry red chilly-3-4

( dry roast all these ingredients in a pan , and make fine powder)

butter-1 tsp

cumin-1/2 tsp

capsicum-1/2

tomato-1

turmeric powder-1/2 tsp

chilly powder-1 tsp

garam masala-1/2 tsp

pav baji masala-2 tsp

kasoori methi-1/2 tsp

coriander leaves- 2 tbsp

Preparation

Heat a pan, add butter, next cumin, onion ,capsicum, and tomato, saute this well,then add all masalas into it, cook for a while, finally add some coriander leaves, butter, and kasoori methi, and mix well.

fenugreek-1 1/2 tsp

hing- 1 1/2 tsp

mustards- 1 1/2 tsp

dry red chilly-3-4

gingelly oil-300 ml

garlic

Preparation

Cut mango into small pieces, add salt , mix well, and keep 1 hr in sunlight. Also heat mustard, fenugreek, and chilly, then grind it. Saute garlic, keep aside. Finally add all ingredients into mango and mix well. Keep in a air tight jar

Preparation

Heat a clay pot, add oil, next add ginger and roast well, next add garlic and green chilly, and saute this well, then add coriander powder, red chilly powder, turmeric and salt , mix well, next add tamarind juice and jaggerry, boil it until become thick, finally season with mustards, dry red chilly and curry leaves.

Black halwa

Ingredients

maida-1 1/2 cup

rice flour-1/2 cup

water-4 cup

jaggerry-1/2 kg

water-2 cup(for melting jaggerry)

ghee- 4 tbsp

cashews

cardamom- 1 1/2 tsp

Preparation

Mix maida with rice flour, then add water and mix well, keep aside. Melt jaggerry. In a pan add melted jaggerry and flour mix together, stir cintinously, once it become thick add 1 tbsp ghee, cook some more time, again add ghee, add cardamom powder, turn off flame when it become non sticky. Transfer to a greased plate. Allow it to cool, then cut halwa.
