Special Chicken fry

Ingredients

 Chicken – 3/4 Kg -1 KG

Crushed Ginger ( Medium size),

Garlic (8 Cloves) and Green Chilly (2 Big)

Crushed Fennel Seeds -1/2 Tspn

Curry Leaves

GREEN CHILLY -2 Nos

Whole Spices

Crushed -Cinnamon (1 Medium piece),

Cardamom (2 Nos),

Cloves(4 Nos)

Eastern Chicken Fry Masala – 21/2-3 Tbs

Kashmiri Red Chilli Powder-11/2 Tbsp

Turmeric Powder -1/4 Tspn

Crushed Dry Red Chilli Powder -3/4 Tspn

Pepper Powder -3/4 Tspn

Garam Masala -1/2 Tspn

Chicken Masala – 1/2 Tspn

Salt

Oil

Water – 2 Tbsp

Preparation

Mix all ingredients in a bowl, then marinate chicken with this masala, rest chicken for 1 hour in refrigirator. Heat oil in a pan, add some curry leaves,spices and chilly, transfer to a plate, then fry chicken, finally mix all.

Easy Burger

Ingredients

Chicken:300g

Burger bun

Onion: 1/2 piece

Garlic: 2 cloves

Soy sauce:1 tspn

Redchilli:2 nos

Salt

Oil
For burger sauce 👇🏻

Tomato ketchup

Mayonnaise

Red chilli powder :1/2 tspn

Chilli flakes :1/4 tspn

Vegetables(tomato,onion ,lettuce,etc.)

Preparation

Grind chicken into coarse paste. Then grind onion,garlic,egg,dry red chilly, salt, and soy sauce, then add to chicken, mix well, add bread crumbs in to it, and knead it well, make it into cutlet shape, then dip it in egg maida mix, then coat in bread crumbs and fry it in hot oil. Take mayonaise in a bowl, add kechup, chilly powder,chilly flakes and oregano, mix well.

Take burger bun, just heat it, then spread sauce , add veggies, next put cheese and burger patti, finally close the burger with bun.

Chicken Dum biriyani

Ingredients

For marinate

Chicken – 750g

Onion – 2 ( big size)

Crushed ginger – 1 1/2 tbsp

Crushed garlic – 2 tbsp

Crushed green chilli – 3 tbsp

Tomato – 2 ( medium)

Chopped coriander leaves – 3 tbsp

Chopped mint leaves – 3 tbsp

Chilli powder – 2 tsp

Turmeric powder – 1/2 tsp

Biriyani masala – 1 tbsp

Curd – 2 tbsp

Lemon juice – 1 tbsp

Ghee – 2 tbsp

Oil – 1 tbsp

Salt

For preparing rice

Jeerakasala rice – 500 g (2 1/2 cup)

Water – 3 3/4 cup

Cinnamon – 2

Cloves – 6

Cardamom – 6

Javithri – 2

Star anise – 1

Ghee – 3 tbsp

Salt

For layering:

Fried onion – 1 ( medium)

Fried cashew nuts – 1 tbsp

Fried raisins – 1 tbsp

Coriander leaves

Mint leaves

Ghee – 1 tsp

Biriyani masala

2 tbsp milk + 1/2tsp turmeric powder

Preparation

Take biriyani pot, add onion, tomato crushed ginger,garlic and chilly, pudina and coriander leaves, masalas,curd,lime juice, ghee, and salt , mix all well, then add chicken, marinate chicken with this masala. Rest this for 1 hour.

For rice, boil water, add spice, next add ghee and salt, once it boils add rice, cook rice about 50 %. Pour 1/2 of the rice above the chicken, add herbs, fried onion and nuts, some garam masala powder, milk and turmeric mix and ghee, add second layer, repeat the same, then cover the lid then cook 15 min in low flame, then dum 1/2 hrs, now you can serve it.

Green gram, maida recipe

Ingredients

maida-1 1/2 cup

sugar-1 tbsp

turmeric

salt-a pinch

water

green gram cooked-1/2 cup

coconut grated-1 cup

sugar

Preparation

For dough, take maida,sugar,salt and turmeric in a bowl, add some water and knead it well, make a soft dough and keep aside. For filling, add coconut and sugar to cooked green gram, then cook it until it become thick. Divide maida dough into equal small balls, flattern it, then add green gram filling into it, after folding  flattern it again. after doing this for all balls , cook in a tawa.

Kappa chaala dish

Ingredients

Kappa (Tapioca)

Mathi (Sardine)

Preparation

Cook tapioca with salt and turmeric. Marinate fish with salt turmeric and chilly powder and cook with water in a claypot.Remove the thorns, then mix it with cooked tapioca, add some water and masalas, cook until it become thick, finally add some curry leaves,garlic and raw coconut oil.

Filled Chicken (kozhi Nirachath)

Ingredients

full chicken-1

turmeric-1/2 tsp

pepper powder-1 tsp

salt

cashews

oil

kismis

potato-1 1/2

onion-6

garlic,ginger,chilly crushed

curry leaves

coriander powder-5 tsp

chilly powder-2 1/2 tsp

turmeric-1/2 tsp

garam masala-3/4 tsp

Preparation

Marinate chicken with turmeric,salt and pepper powder, then cook in a pressure cooker without water. Fry onion,cashews and kismis, and potato separately. In the same oil saute ginger,garlic,and chilly paste and onion, then add masalas and tomato, after cooking it well pour chicken cooked stock, then add coriander leaves and fried ingredients, mix all well, fill this masala inside of the chicken, then put above in a banana leaf, add more masalas, then fold the leaf, heat it in a pan, before it serve.

Ash gourd curry

Ingredients

Ash Guard – 250 gms

Carrot – 1 No.

Green Chillies – 3 No.s

Curry Leaves – 3 to 4 springs

Cumin Seeds – 2 tsp

Garlic – 3 to 4 cloves

Grated Coconut – 1 heaped cup

Turmeric Powder – 3/4 tsp

Salt to taste

hallots – 3 to 4 No.s

Fenu greek – 1/2 tsp

Mustard Seeds – 1/2 tsp

Dried Chillies – 3 to 4 pcs

Preparation

Take a clay pot add ash gourd,carrot ,green chilly, turmeric and water, cook it well. Grind coconut with cumin,garlic,turmeric , curry leaves,salt and green chilly , and add to curry, boil it well. Finally temper it with fenugreek,mustards,dry red chilly and shallots and add to curry.

Kottayam toddy shop chicken curry

Ingredients

Chicken: 1 kg (chopped into small pieces)

Onion: 1 cup (thinly sliced)

Green chillies – 4-6 nos

Tomato: 1 nos

Lemon juice: half

Ginger garlic paste – 1 tspn

Chilli powder: 3 tspn

Turmeric powder: 1/2 tspn

Coriander powder: 3 tspn

Chicken masala – 2-3 tspn

Red chillies – 3-4 nos

Shallots – 1 tspn (chopped)

Mustard seeds- 1 tspn

Coconut slices – 1 cup

Oil – 1 cups

Curry leaves

Salt

Preparation

Take the chicken pieces in a bowl and add turmeric powder, chilli powder,chicken masala, lemon juice, salt, oil (2tspn) and curry leaves. Mix well and cover all the chicken pieces. Let it marinate for 30 mins. Heat a kadai and add 1 cup of oil and make it hot. Add curry leaves and ginger garlic paste, then saute well.Add 1 cup of chopped onions and saute till onion transparent. Add turmeric powder, chilli powder,chicken masala, then fry on medium flame.
Add chopped tomato, and saute till tomato turns soft. Add marinated chicken and fry till oil separates. Add enough water for the gravy and cook for 5 mins.Open the lid and add salt if required. Cook for another 5 Mins. Heat some oil in a pan, splutter mustard seeds, followed by red chillies, shallots,curry leaves and finally coconut slices. Then fry well and add to the curry. Serve hot.

Cotton Candy

Ingredients

ghee

maida-1 cup

sugar-1cup

water-1/4 cup

lemon juice-1 tsp

Preparation

Heat ghee in a pan, add maida, roast it well, then transfer to a plate. Caramalise sugar with water and lime juice, pour this to counter top, wait for 30 seconds, then stretch this by adding maida, do this until the candy become perfect.
