Chicken with Curry Leaves Recipe

Ingredients

Chicken – 1 kg, cut into medium pieces.

Oil – as required.

Curry leaves – 1 bowl.

Ginger and garlic – crushed 2 tbsp.

Onion – One sliced.

Green chilli – 5 no.

Salt to taste.

Turmeric powder – 1/2 tsp.

Chilli powder – 1 tsp.

Pepper powder – 1 tbsp.

Garam masala – 1 tsp.

Preparation:

Heat some oil in the sauce pan. Add curry leaves and fry them on a medium flame. Then add crushed ginger-garlic, onion, green chilli, and salt to taste. Mix it well until the raw smell fades away. Now we can add turmeric powder, chilli powder, pepper powder, and garam masala. Saute well until the raw smell fades away. Finally add chicken pieces and mix it well. Cook it over a low flame for 15 to 20 minutes. You can open the lid and give it a good mix in the meantime. Our chicken curry leaves is ready. Serve hot with rice, tapioca, or any indian bread of your choice.

Vattayappam

Ingredients

rice flour-1 kg

sugar-1/2 kg

coconut-2

toddy sweeten-1/2 ltr (or 1 1/2 tsp yiest)

cardamom-12

salt

Preparation

Grind coconut with cardamom and water, then take coconut milk. In a vessel add rice flour,sugar , toddy and coconut milk, mix all well or grind it, then ferment for 4-6 hrs.Add salt to taste, then cook vattayappam in steamer.

Mango mousse

Ingredients

mango-1

whipping cream-1 cup

sugar-2-3 tbsp

Preparation

Grind mango into fine paste.Beat whipping cream with sugar, then transfer it to a piping bag. Mix whipping cream with mango puree, transfer it to a piping bag, take the serving glass, serve it by layer, decorate with mango pieces.

Amrutham podi cake

Ingredients

amrutham podi-1 cup

salt

baking powder-1/4 tsp

egg -2

sugar-1/4 cup

vanilla essance-1/2 tsp

oil-1/4 cup

cocoa powder-1 1/2 tbsp

milk-1/4 cup

Preparation

Strain dry ingredients 2 times. Beat egg, with sugar, oil and vanilla essance, then pour it to a bowl, add amrutham mix, fold it with a spatula, add milk and cocoa powder, mix all well, then pour it to a cake tin, then steam cook cake.

Preparation

Heat oil in a tawa , add chilly, ginger garli and onion, saute it well, next add tomato and masalas, cook it until it become soft, next add egg pieces, mix all well,next add porotta pieces, after mixing well add some coriander leaves.

Mango pudding

Ingredients

coconut-1

condensed milk

china grass-6-7 gm

sugar

mango essance

Preparation

Soak china grass for 1/2 hrs, then melt it in low flame and keep aside. Grind mango with condensed milk, coconut milk, sugar and mango essance, then mix it with melted china grass, after mixing it well, transfer it to a glass tray, keep in fridge for cooling, then serve it.

Chicken Kondattam

Ingredients

for marinate chicken

Chicken -1/2 kg( breast pieces)

chilly pwder-1 tbsp

coriander powder-1/2 tbsp

turmeric-1/4 tsp

ginger garlic paste-1 tbsp

lemon juice-1 lemon

salt

for frying

oil

curry leaves

chilly flakes

shallots-20

salt

ginger garlic paste-1/2 tbsp

chilly powder-1 tsp

coriander powder-1 tsp

garam masala-1/2 tsp

tomato sauce-1/4 cup

water

Preparation

Marinate chicken with above mentioned ingredients, keep in fridge for 1 hr. Heat oil for frying, add chicken, fry it well, then transfer it to a plate, add chilly flakes to the pan, roast it, next add shallots and salt, saute it well, then add ginger garlic paste, masalas, sauce and water one bye one, cook it well, next add chicken, mix with masala, close the lid, cook for 10 minutes.

Orange Popsicle

Ingredients

corn flour-1 tbsp

water-2 cup

sugar-1/4 cup

orange food colour

orange essance-2-3 drops

Preparation

Boil water with sugar and orange food color, after boil it well add corn flour and water mix, stir it well , once it become light thick turn off flame and add orange juice, orange essance and orange peel, after mixing well allow it to cool. Then strain it, then transfer to ice mould, add stick, then keep in fridge for 8 hrs.

maida mix-1 1/2 tsp

Preparation

Heat a pan, add coconut oil, heat it well, then add onion , chilly and ginger garlic paste, saute it well, next add masalas and salt, after mixing well add chicken, next add potato and water, cook it well, then add maida paste, boil it well, next add thick coconut milk, just heat it then turn off flame, now add lemon juice, add coriander leaves and curry leaves.

Chicken roll

Ingredients

maida-2 cup

sugar-1 tsp

salt

yiest-3/4 tsp

oil-1 tsp

water

oil

onion-1

ginger,garlic, chilly

garam masala

chilly powder

turmeric

capsicum

chicken cooked pieces

coriander leaves

salt

egg

bread crumbs

oil for frying

Preparation

Add maida,sugar,salt, oil, yiest to a bowl, knead it with water and make a soft dough, rest this for 1 1/2 hrs. For filling, heat a pan, add oil, then add vegetables, saute it well, add masalas, mix well, then add chicken , coriander and salt, cook it for 5 minutes then turn off flame. Take the dough, knead it in counter top, divide it into small balls, flattern it, then add masala, fold it like rolls, after done this for all, dip in egg mix and coat bread crumbs, finally fry in hot oil.
