Idiyappam from batter

Ingredients

1 fried Rice flour – 1 cup

2 coconut oil – 1 tablespoon

3 normal water – 1 1/4 cup

4 salt to taste

5 grated coconut – 1/2 cup

Preparation

In a pan, add rice flour, water, salt and coconut oil, then mix it well and make lumps free batter, then put it in a stove, and cook in low flame, stir it continuously , once it become thick and non sticky, turn off flame and let it cool, after some times, knead a little and make idiyapam as usual.

Easy Milk Bun

Ingredients

lukewarm milk-3/4 cup

yeast-3/4 tsp

maida-2 cup

salt-1/2 tsp

sugar-4 tbsp

oil

Preparation

Add yeast to luke warm milk, keep aside for raise. Take maida in a bowl, add salt and sugar, after mixing it well add milk, then knead it well, add oil, and knead it until the dough become soft, then keep aside for fermentation, once the dough become double, take it from bowl, and knead it in counter top, then divide the dough into equal small sized balls, then make bun shape, put it in a cake tin, then bake it in a pan.

Kannur special Beetroot Pickle

Ingredients

beetroot -1

carrot-1

dates-30(remove seeds and chop it into small piece)

garlic

ginger

green chilly

curry leaves

oil

mustard seeds

salt

kismis

chilly powder

vinegar

Preparation

Heat oil in a pan, add mustards, pop it well , then add green chilly,curry leaves,ginger and garlic, roast it well, then add beetroot and carrot, saute it well, add salt, once it cooked, add dates and kismis, mix all well, cook until it become soft, now add chilly powder, mix all together, finally add vinegar, cook it for 2 more minutes, then turn off flame.

Heat oil in a pan, add mustards, pop it well, then add dry red chilly, roast it for a minute, next add onion and salt, saute it well, next add masalas,  mix all well, then add tamarind paste and water, mix well, then boil it, finally add fenugreek powder.

Raw banana stir fry

Ingredients

Raw Banana – 2 Nos

Onions – 2 medium

Green Chilli – 1

Curry Leaves – 3 to 4 springs

salt to taste

Turmeric Powder – 1/4 tsp

Coriander Powder – 1 tsp (optional)

Kashmiri Chilli Powder – 1 /2 tsp

Cardamom Powder – 2 pinches

Coconut Oil – 2 1/2 tbsp

Mustard Seeds – 1/2 tsp

Preparation

Peel off banana, then cut it into small pieces and put in water. Heat oil in a pan, add mustards, pop it well, next add onion, salt, saute it well, add curry leaves and green chilly, mix it well, next add masalas one bye one, mix it until the raw smell gone, now add chopped banana, mix it with masala, cover the pan, and cook it in low flame for 8-10 minutes, mix it frequently, add salt, cook it again for 5 minutes, then turn off flame.

Butter Chicken

Ingredients

for marination

kashmiri chilly-3/4 tsp

ginger garlic paste-1.5 tsp

salt

butter-1 1/2 tbsp

cashews

kashmiri chilly powder-1/2 tsp

garam masala-1/2 tsp

kasoori methi

fresh cream

Preparation

Marinate chicken with kashmiri chilly, ginger garlic paste and salt, keep aside for 1/2 hrs, then fry it in a pan. Heat another pan, add coconut oil, once it heat well add onion, then add butter, saute onion, then add tomato, ginger garlic paste, capsicum, coriander stem and salt, saute all well, then add cashews. and water, and masalas cook it well, then turn off flame and allow it to cool, then blend it into fine paste. Heat butter in a pan, add onion paste, add kasoori methi, cream and chicken, cook it in low flame for 7-8 minutes, butter chicken is ready.

Fish Ada

Ingredients

for masala

fish-4(ayala) marinate it with tamarind, chilly powder and salt

tamarind juice-1 tbsp

turmeric-1/4 tsp

chilly powder-4 tsp

curry leaves

for dough

raw rice soaked

rice flour

Preparation

For masala, heat a pan, add coconut oil, allow it to heat well, next add onion, saute it well, next add ginger garlic, green chilly and tomato, saute it all, next add masalas and tamarind juice, mix all together, add water and salt boil it well, next add fish, cook it well, once the gravy become thick turn off flame.

For dough, grind soaked rice with coconut, fennel, masalas, onion, salt and water, then pour it to a bowl, add rice flour, knead it well and make a soft dough, take a banana leaf, brush it with oil, add the dough, spread over the leaf with your hand, add filling, then fold it, after doing this steam fish ada in a steamer.

Ingredients

horse gram-1 cup

onion-1

mustard seeds-1 tsp

dry red chilly-2

green chilly-2

chilly powder-1/2 tsp

salt

coconut oil-2 tsp

grated coconut-1 cup

Preparation

Cook horse gram in a pressure cooker, then strain water. Heat a pan, add coconut oil, pop mustard seeds, then add onion, red chilly , green chilly, chilly powder, and salt, saute it well, then add cooked horse gram, mix well, then add coconut, combine all well, then turn off flame.

Tuna Fish curry

Ingredients

fish-1/2 kg

grated coconut-1 1/4 cup

coconut oil-2 tsp

fennel-1/2 tsp

pepper-1 tsp

curry leaves

tamarind-gooseberry size

turmeric-1/2 tsp

‘chilly powder- 1 1/4 tbsp

coriander powder-1 tsp

garam masala-1/2 tsp

coconut oil-2 tbsp

fenugreek-1/4 tsp

shallots-20

ginger

garlic-3

green chilly-3

curry leaves

tomato-1

water-3 cup

Preparation

For roasting coconut, heat coconut oil in a pan, add coconut, pepper , curry leaves and fennel seeds, mix well and roast it until the color become golden brown, then add tamarind and masalas, mix well and heat it for 1 minute, then turn off flame, allow it to cool, then grind it with water and make a smooth paste. Heat a clay pot, add coconut oil, once it heat well add fenugreek seeds, after poping it well add shallots and curry leaves, saute it well, then add tomato , mix well, let it soft , now add coconut paste and required water, add salt, and boil it well, now add fish , cook it until the oil separates from curry, finally add some coconut oil, and turn off curry.
