Ingredients

green gram-1 cup

water-1 cup

coconut-1 cup

cardamom-3-4

sugar

maida-3/4 cup

rice flour-2-3 tbsp

turmeric-1/4 tsp

salt

oil for frying

Preparation

Cook green gram with water in a pressure cooker.For batter, add maida, rice flour, salt and turmeric in a mixing bowl, mix it well, add water and make a medium thick batter. Heat a pan, add cooked green gram , then add sugar, coconut and cardamom, mix it well, cook it until it become thick, then allow it to cool down, then make small balls, dip the balls in the batter, then fry in hot oil.

Kuttanad special duck curry and kallappam

Ingredients

•Duck – 1 kg

•Coconut oil – 6 tablespoons

•fennel seeds 1 tsp

•bay leaves -2

•cloves 5 nos

•cardamom 5 nos

•peppercorn – 5

•cinnamon stick 1 piece

•Crushed garlic – 1/2 cup

•Crushed ginger – 1/2 cup

•Crushed green chilli – 6

•curry leaves – handful

•Onion – 3 (sliced)

•salt to taste

•thin coconut milk – 2 cups

• thick coconut milk – 3/4 cup

•curry leaves – few

•garam masala – 1 teaspoon

Kallappam

•Coconut water – 2 cups +Sugar – 1 tablespoon

(Keep this overnight or 8 hours )

•Fried rice flour – 1 and 1/2 cups

•Shallot – 5

•Garlic – 2

•Cooked rice – 1/2 cup

•Grated coconut – 3/4 cup

•Sugar – 2 tablespoons

•Salt to taste

•Coconut oil – 1 tablespoon

•Cumin seeds – 1/2 teaspoon

Preparation

For duck curry, heat oil in a pan, add whole spices, roast it for 1 minute, next add ginger garlic crushed, saute it until the raw smell gone, now add onion, salt and green chilly mix it well, next add masala powders, mix it again, then add duck meat, combine all well, now add second coconut milk, then cook the duck meat for 45-50 minutes, then add garam masala and curry leaves,next add thick coconut milk, after heating it well turn off flame.

For appam, in a mixie jar add all ingredients, grind it into fine paste, keep this overnight for fermentation. next morning, cook small appam.

Jackfruit chips

Ingredients

raw jackfruit

salt

turmeric

oil for deep frying

Preparation

Cut raw jackfruit into long pieces. Mix turmeric, salt and some water and make a mix. Boil coconut oil, put 2-3 handful of chopped jackfruit , fry it until it become crispy, pour 1 tsp of turmeric mix into it, after mixing well take it from oil, crispy jackfruit chips is ready.

Orange Pickle

Ingredients

Coconut oil -1/4 cup

mustard-1 tsp

ginger-1 tsp

green chilly

curry leaves

orange pieces-2 cup

kashmiri chilly powder-2 tbsp

turmeric-1/2 tsp

salt

tamarind juice-1/4 cup

jaggerry-1/2 cup

hing-1/2 tsp

Preparation

Heat oil in a pan, add mustards, let it crack, next add ginger green chilly and curry leaves, fry it well, then add orange pieces, combine all well, then add chilly powder , turmeric and salt, mix it again, next add tamarind juice and jaggerry, boil it well and cook until it become thick consistency, finally add hing powder, after mixing well turn off flame.

Chicken Lasagna

Ingredients

for filling

sunflower oil-2 tbsp

garlic paste-1 tsp

onion-1

chicken-250 gm boneless chicken

salt

tomato paste-1 tomato

pepper powder-1 tsp

oregano-1/2 tsp

capsicum-1

kashmiri chilli-1 tsp

for white sauce

butter-2 tbsp

maida-1 tbsp

milk-1 cup

pepper powder-1/2 tsp

oregano-1/2 tsp

salt

other ingredients

bread slices

cheese grated

Preparation

For filling , heat oil in a pan, add garlic paste, roast it well, then add onion , saute it for 2 minutes, now add crushed chicken and salt, mix well and cook until the chicken is cooked well, next add tomato paste, pepper powder, oregano , kashmiri chilly and capsicum, mix well cook until the filling become dry, then turn off flame.

For white sauce, melt butter in a pan, add maida, mix it well, then add milk, stir well, once it become thick add pepper powder, oregano and salt, mix well and turn off flame.

Take bread slices, remove the sides, then put it in a cake tin, cover the bottom of the tin with bread, spread white sauce above the bread, then add filling , next add white sauce again, add mozerella cheese , put second layer of bread and repeat the same process, finally bake it for 10-15 minutes in a frying pan.

Egg Stew

Ingredients

Preparation

Heat coconut oil in a pan, add pepper powder into it, then add boiled egg, fry it for 1 minutes then transfer it to a plate. Add onion, chilly, ginger garlic paste and cashews to the same pan, saute it for 1-2 minutes, then transfer it to a blender, then make smooth paste. Heat another pan, add oil, then add whole spices, roast it well, then add onion paste and peeper and garam masala powder, mix well, next add salt and second coconut milk, allow it to boil well, add tomato, and boiled eggs, once it boil well, add thick coconut milk, then heat it well, finally add curry leaves, cashews fried and ghee, then turn off flame.

Easy Ifthar Snack

Ingredients

oil-2 tbsp

onion-2

salt

turmeric-1/2 tsp

pepper powder-3/4 tsp

fennel powder-3/4 tsp

cooked and crushed chicken

potato boiled-2

curry leaves

coriander leaves

bread crumbs-4 tbsp

ginger garlic paste-1 tsp

samosa sheet

oil for frying

Preparation

For filling, heat oil in a pan, add onion and salt, saute it for 1 minute, then add masala powders, mix it until it turns aromatic, now add cooked and crushed chicken and mashed potato, mix all well, add coriander and curry leaves, once the masala become dry turn off flame and allow it to cool, then add ginger garlic paste and bread crumbs, mix well and make small unnakkaya shaped snacks. Take some samosa sheet cut it into small layers like noodles. Take snacks dip it in maida mix, then coat it with the samosa sheet noodles, after that deep fry it in hot oil.

Falafil small shawarma

Ingredients

for kubboose

lukewarm milk-1 1/4 cup

sugar-1 tsp

sunflower oil-1 tsp

yeast-1 tsp

salt

maida

For falafil

chana

cumin-1 tsp

garlic

coriander leaves

green chilly

lemon juice-1

bread crumbs-1 tbsp

baking soda -1/4 tsp

for mayonaise

garlic-3-4

salt

vinegar-1 tsp

egg-1

sun flower oil

vegetables

cabbage

tomato

cucumber

capsicum

lemon juice

coriander leaves

Preparation

For kubboose, In a bowl, add milk, sugar,salt, yeast, and oil, mix well and keep aside for 10 minutes, then add maida, knead it well and make a smooth dough, keep this aside for 1 1/2 hrs. Take the dough and knead it again, divide it into equal small balls, flatten it into perfect round shape, after that deep fry this in hot oil, once whole shawarma is fried well, cut each into 2 portions.

For falafil, add chana, salt, cumin, garlic, chilly, baking soda, lemon juice and bread crumbs into a mixie jar, crush it well, then make small balls, and deep fry it well.

For mayonnaise, add garlic, vinegar, salt, sugar and oil into a mixie jar, blend it until it become thick.

In a mixing bowl, add vegetables, crushed falafil and mayonnaise, mix all well, then fill this in shawarma pocket.

Sharjah Shake Recipe

Ingredients

Frozen milk half litre

Njali Poovan / Kadali Pazham – 1 Big ( 11/2 if the banana is small)

Boost or Horlicks – 21/2 Tbsp

Peanut or Cashew nut – 2 Tbsp crushed

Sugar- 3-6 Tbsp (As needed)

Preparation

In a mixie jar, add banana, sugar, peanut and boost, then grind it into fine paste, next add frozen milk, then blend it again, serve it with chill.

Arabic sweet Luqaimat

Ingredients

maida-1 cup

corn flour-1 tbsp

yeast-1 tsp

curd-2 tsp

sugar-1 tsp

oil-1 tbsp

water

sugar-1 cup

water-1 cup

lemon-1

cardamom powder

Preparation

Add maida to a strainer , sieve it to a bowl, then add sugar, curd, yeast , oil and required water, knead it well and make a slightly loose dough, keep aside for 1/2 hrs. For sugar syrup, melt sugar with water, boil it for 10 minutes add cardamom for flavour, then turn off flame. Take the maida dough, fill it in a piping bag. Heat oil in a pan, squeeze small  quantity of dough to the oil, fry it well, then soak it in sugar syrup for 10 minutes, then have the juicy sweet.
