Preparation

Prepare a maida dough with maida, salt and water, then add oil dalda mix, knead it well and make sit soft, rest the dough for 15 minutes, then take it, knead it again then divide it into equal 9 balls, flatten each ball into thin layers, cut it with a kniefe and make thin long layers, stretch it with your hand , then roll it, after done this process, flatten it again with your palms, then cook it in tawa.

Preparation

Chop brinjal into medium thick slices. Add masala powders, salt and lemon juice in a bowl, mix well and make a paste, marinate brinjal with this masala. Heat oil in a frying pan, add curry leaves and crushed garlic, then put brinjal one bye one, fry both sides.

Egg Butter Masala

Ingredients

boiled egg-4

sunflower oil-2 tbsp

whole spices

garlic-6

chilly powder-1 tsp

kashmiri chilly powder-1 tbsp

Preparation

Heat oil in a pan, add whole spices, roast it for a minute, then add onion, ginger and garlic, saute it until it become soft, now add masala powders, mix all, next add salt, tomato and cashews, cook it well, then grind the masala mix. Heat oil in another pan, add a little chilly powder, turmeric and salt, mix it well, then add eggs after cutting it to two pieces, roast both sides well, then turn off flame. Heat butter in a pan, add tomato ketch up, then add masala paste, let it boil well, add milk into it, boil it again, add kasoori methi and coriander, next add egg, mix well, then turn off flame.

Mutton Roast

Ingredients

For Marination

Mutton : 1 kg

Chilli powder: 2 tsp

Ginger garlic paste : 3 tsp

Coriander powder : 2 tsp

Garam masala : 3/4 tsp

Turmeric powder :1tsp

Curry leaves : 2-3 sprigs

Coconut oil : 3tbsp

Lemon juice : one full lemon

Green chilli : 2

Pepper powder : 1tsp

Salt : as per your taste

For masala preparation

Onion : 5 big

Coconut pieces : 10-12

Chilly powder: 2 tsp

Ginger garlic crushed : 3 tbsp

Coriander powder : 2 tsp

Garam masala : 3/4 tsp

Turmeric powder :1tsp

Curry leaves : 2-3 sprigs

Coconut oil : 7tbsp

Lemon juice : one full lemon

Cumin powder : 1/2 tsp

Green chilly : 4

Tomato : 1

salt : as per your taste

Preparation

Mix all ingredients to mutton and marinate it for 2 hrs in refrigerator. Now pressure cook mutton with 3/4 cup of water up to 4 whistles.

Heat a pan, add coconut oil .When oil is hot add coconut pieces and saute until it slightly turns golden in colour. Now add ginger garlic and saute until golden brown.to this add thinly sliced onion and mix well until onions are golden in colour. Add curry leaves and green chilly and mix well.Now add turmeric powder, chilly powder,coriander powder,garam masala, pepper powder and saute well.Now add tomato and saute until it is fully cooked.Now add the cooked mutton and reduce the gravy in high flame.When oil starts oozing out move the mutton pieces to the corner of the pan add coconut oil, 1 tsp pepper powder, 1/2 tsp fennel seeds,1/2tsp garam masala and saute.Now combine everything and saute for 10-12 minutes until mutton is fried.Add 1/2 tsp cumin powder ,a sprig of curry leaves and 2 green chilly for extra flavour. Delicious mutton roast is ready now

Soak rice for 3-4 hrs, then dry grind it with cumin and cardamom and make coarse powder, take this in a bowl, pour melted jaggerry juice with hot, mix well, add maida, combine well, add banana paste, mix it again, add salt and baking soda, after mixing it well add sesame seeds and fried coconut, mix everything. Heat oil in unniyappam pot, pour batter in each holes, fry it well.
