Traditional Chicken Biriyani

ghee-3 tbsp

oil-2 tbsp



ginger,garlic and chilly crushed

turmeric-1 tsp


garam masala-1 tbsp

coriander leaves-1/2 cup

mint leaves-1/4 cup

curd-2 tbsp

chicken-1 1/4 kg

oil-1 1/2 tbsp


water-5 3/4 cup

rice-3 cup


cashews and kismis


Heat a biriyani pot, add ghee and oil together, after heating it well add onion, saute it well, next add ginger,garlic and chilly crushed, add salt too, then saute it until the onion become soft, next add tomato and turmeric, cook it well, next add garam masala and curd, after mixing well add chicken, mix with masalas, add herbs and cook it well. Finally add some herbs and garam masala.

For rice, heat oil in a pressure cooker, add herbs, roast it, then add water, boil it well, add salt , then add rice, cover the lid and cook for 1 whistle.

For dum biriyani, take half of chicken masala from it, then add rice above , add chicken masala above it, next cover it with rice, put fried onion, cashew and kismis, and herbs in between the layers, cover the pot keep low flame for 15 minutes.
