Rice Paal paayasam

Ingredients

 

1: Broken mutta rice 1/2 cup

2: sugar 1/2 cup

3: milk 2 cup

4: water 2 cup

5: salt 1 pinch

Preparation

Cook rice by adding water. once the rice cooked then add 1 pinch salt ,mix well .cook for few minutes, then add milk ,cook for few minutes in medium flame, after that add sugar ,mix well .boil it.  then switch off the flame and allow to cool. now our paalpayasam is ready to serve..

Sadya special sambaar

Ingredients

drumstick-1

salt

tamarind

ladies finger-200 gm

tomato-2

green chilly-2

curry leaves

daal cooked-3/4 cup

hing

water-1/2 glass

sambar powder-1/2 glass

jaggerry-1 small piece

coconut oil

mustards-3 tsp

dry red chilly-3

Preparation

In a pot, cook drum stick, then add ladies finger and tomato, allow it to cook well, then add tamarind juice, cooked daal and salt, boil it well, then add sambar powder, allow it to boil well, turn off the flame after adding some hing powder. Heat a pan, add coconut oil, pop mustards, dry red chilly and curry leaves, add to sambaar.

Sadya masala curry

Ingredients

• Potato – 2 no’s

• Soya chunks — 50 grams

• Green peas – ½ cup

• Grated coconut — 1 cup

• Small onion –8 no’s

• Onion – 2 no’s

• Tomato – 1

• Geen chilli – 3 no’s

• Ginger — 1 tablespoon

• Garlic – 1 tablespoon

• Turmeric powder — ½ teaspoon

• Coriander powder – 2 teaspoon

• Chilli powder – 1 ½ teaspoon

• Garam masala – ½ teaspoon

• Coconut pieces

• Coconut oil

• Curry leaves

• Salt

• Water

Preparation

Heat a pan, add oil , roast coconut and shallots until it become golden brown, then add masalas, mix well , then grind it into fine powder without water. Soak soya chunks in hot water, then wash it in cold water. Heat a pan, add oil, saute potato well, then transfer to a plate, in the same pan add ginger,garlic,onion,green chilly, and curry leaves and coconut pieces, saute this well, then add tomato, next add soya, green peas and potato, mix well, add water, cook well. After cooking well add coconut , mix well, cook until it become thick, add garam masala. Heat a pan, add oil, fry shallots and curry leaves, add to curry.

Traditional Rice Paayasam

Ingredients

Pachari (soaked for 1 hour) – 2 cup

Jaggery – 500 gms

Coconut milk (3 coconut) – 2 Ltr (3rd extract)

Coconut milk. – 1 Ltr(2 ND extract)

Coconut milk. – 1 1/2 cup(1st extract)

Fresh coconut chopped. – 3 tbs

Ghee. – 2Tsp

Cumin powder. – 1/2 Tsp

Cardamom powder. – 1/2 Tsp

Cashew Kismis

Salt 1 pinch

Preparation

Boil 3rd extract of coconut milk in a pan, add rice into it, cook it well. Once it cooked, add second extract of coconut milk 2-3 times, next add jaggerry, boil it well, next add cardamom powder,cumin powder, stir it well, then add thick coconut milk, just heat it and turn off flame. Heat ghee in a pan, roast cashews,kismis and coconut pieces, and add to the paayasam.

Sadya masalakkari

Ingredients

Potato – 2 medium sized

Frozen green peas – 1/2 cup

Carrot – 1

Turmeric powder – 1/4 tsp

Water – 1/2 cup

Salt – as needed

Onion, sliced – 1 medium

Green chillies – 2

Curry leaves

Garlic, crushed – 1 tsp

Ginger, crushed – 1 tsp

Coriander powder – 2 tsp

Kashmiri chilli powder – 1 1/2 tsp

Turmeric powder – 1/4 tsp

Pepper powder – 1 tsp

Garam masala powder – 1 tsp

Tomato – 1 small

Coconut oil – as needed

Grated coconut – 3 tbsp

Shallots / Kunjulli – 2 tsp

Curry leaves

Preparation

Heat a pressure cooker, add coconut oil, add carrot and potato, saute it well, next add salt and turmeric, next add green peas, add water, cook for 1 whistle. Heat a pan, add oil,  onion, chilly, curry leaves, ginger, garlic, saute it well, next add masalas, cook well, now add tomato, cook until it become mushy, next add cooked vegetables, cook it for 2 minutes, now add water, allow it to boil, cook until it become thick. Heat a pan, add coconut oil and grated coconut, fry it well, then grind it and add to curry, cook for 2 minutes. Heat a pan, add oil, fry shallots and curry leaves, and add to curry.

Sadya pink paalada

Ingredients

Milk -3 litres

Ada – 400 gms

Sugar – 1 cup + 4 tbsp

Preparation

Add 2 litres of milk to a pressure cooker and add 4 tbsp of sugar. Boil the milk and let the sugar melt. Close the lid of the pressure cooker and let it cook on low for 1 and half hours.

Meanwhile clean the ada and cook it in 1 litre of milk plus half cup water. It will take 15-20 mins to cook. Don’t add sugar until ada is cooked.

Add the cooked milk to the cooked add and let it cook together for another 15-20 mins. When it is 80% done add sugar. Add 1 to 1 and half cups depending on your taste. Turn off the flame a few mins before it reach the desired consistency. After half an hour the payasam will get to the right consistency.

Sadya special Olan

Ingredients

ash gourd-1/2 piece

cow beans-1 cup(soaked)

coconut-3/4

coconut milk thick

second extract of coconut milk

green chilly-1-2

curry leaves

raw coconut oil

Preparation

Cook cowbeans in a pressure cooker. Add ash gourd, chilly, second coconut milk and salt, cook it well.Once it cooked well add thick coconut milk, just heat it. Finally add some curry leaves and raw coconut oil.

Ingredients

elephant yam-350 gm

raw banana-300 gm

cumin-1 tsp

coconut oil

Preparation

In a pan, add vegetables with masalas, salt and required salt, then cook it well, next add cooked chickpea, mix it well. Grind coconut with cumin then add to curry. Heat coconut oil in a pan, add mustards,dry red chilly and coconut, roast it well and add to curry, mix all well.

Preparation

In a claypot add fruits, green chilly, curry leaves, turmeric, chilly powder, curry leaves, green chilly and salt, cook it well by adding water. Grind coconut with mustards,cumin, green chilly and water, add to curry, next add curd, next sugar, mix well and turn off flame.Heat a pan , add oil, splutter mustards, add dry chilly and curry leaves, then add to curry.

Preparation

Take cauliflower in a bowl, add turmeric,chilly powder, salt and corn flour, mix well, then fry it until it become crispy. In the same oil add onion, chilly, salt and curry leaves, saute it well, now add masalas, cook until it become soft, next add tomato paste, cook it well, now add pepper powder and garam masala, mix it well, next add cauliflower, mix it with masala, add some water, cook until it become thick. Finally add some coriander leaves.
