Beef Cutlet

Ingredients

beef cooked with salt and turmeric

oil

ginger garlic crushed-1 tbsp

onion-1

green chilly-1 tbsp

salt

turmeric-1/2 tsp

pepper powder-1 tsp

beef masala-1 tsp

kashmiri chilly-1 tsp

boiled and mashed potato-1

coriander powder

garam masala-1 tsp

sugar

bread crumbs

maida

egg

oil for frying

Preparation

For making masala, heat oil in a pan, add ginger garlic paste, saute it well, next add onion and green chilly, add salt and green chilly, saute it well, then add masalas, mix well, next add potato and crushed beef, mix all well, next add coriander leaves, bread crumbs and garam masala powder, after a mix turn off flame. After cooling it make small cutlet with your hand, after that coat it in maida, next dip in egg mix, then coat with bread crumbs, after doing this for all, fry it in hot oil.

Amrutham podi sweets

Ingredients

semolina-1/2 cup

amrutham podi-1/2 cup

milk-2 cup

sugar-1 cup

water-3/4 cup

ghee-2 tsp

salt-2 pinch

cardamom powder-1 tsp

desicated coconut

Preparation

Grind rava into fine powder, then add it to a bowl, add amrutham podi into it, then add milk, mix it well and keep aside for soaking. Melt sugar with water and keep aside. In a pan add amrutham mix, and turn on flame, stir it well, once it become thick, add sugar syrup, combine all well, add ghee, continue mixing, add salt and cardamom powder, once it become non sticky and thick turn off flame and let it cool, after that make finger shape small pieces, finally coat it with desicated coconut.

Tasty Beef Curry

Ingredients

beef-600 gm

garlic chopped-15

ginger chopped

onion-1

tomato-1

salt

curry leaves

turmeric-1/2 tsp

chilly powder-1 1/2 tsp

garam masala-1 tsp

coriander powder-3 tsp

coconut oil-2 tsp

Preparation

In a pressure cooker, add beef, masalas, onion, garlic, ginger, salt, curry leaves, tomato, raw coconut oil and enough water for cooking, then cook it for 5-6 whistle. Heat a claypot, add coconut oil, let it heat, then add curry leaves and shallots, saute it to turn golden brown, now add pepper powder and fennel powder, give a mix, next add cooked beef, mix well, once the gravy become thick add splitted green chilly and turn off flame.

Prawn Curry

ingredients:

Prawns / Shrimp – 250g

Shallots – 3 big (Sliced)

Garlic – 6 fat cloves (Sliced)

Ginger – 1 big piece (Sliced)

Curry leaves

Turmeric powder – ½ tbsp

Kashmiri red chilly powder – 2 tbsp

Pepper powder – ¼ tbsp

Fenugreek powder – 2 pinches

Kudampuli – 4 pieces (Cleaned and soaked in water)

Salt

Oil

For tempering:

Coconut Oil

Shallots – 2 sliced

Mustard seeds – 1 tbsp

Dried red Chillies

Turmeric powder – ¼ tbsp

Curry leaves

Preparation

Heat oil in a claypot.Add ginger, garlic, shallots and curry leaves.Once they start to turn brown, lower the flame and add turmeric powder. Sauté till the raw smell goes away.Add red chilly powder and sauté till the raw smell goes away.Add kudampuli along with the water.Add water to cook shrimp.Increase the flame. Add salt.Cover and bring gravy to boil.Once it boils, add pepper powder and fenugreek powder.Add shrimp.Cover and cook for 10 minutes or till the shrimp gets cooked.

Heat oil in a pan for tempering.Add mustard seeds and let it splutter.Add dry red chilly, shallots and curry leaves.
Add turmeric powder and red chilly powder and roast on low flame.Switch off and add this to the curry.Leave it covered for a minute.Serve with hot rice.

Preparation

Cook mutton with pepper powder, fennel powder, salt and required water in a pressure cooker, after that add potato and carrot to the mutton cook it again. Crush garlic,ginger, chilly and shallots in a mixie jar and keep aside. Heat a pan, add coconut oil, once it heat well add spices, roast it well, next add onion and salt , saute it well, next add crushed items, mix it well and cook until the raw smell gone, next add cooked mutton, mix with masala, add coconut second milk, boil it well, then add coconut thick milk and cashew paste, heat it well and turn off flame, finally add fried shallots and curry leaves with oil.

Peanut Candy

Ingredients

Peanut – 1 cup

jaggery – 1 cup

cardamom powder – 1 tsp

Ghee – 1 tbp

water – 1/4 cup

Preparation

Heat a bottom thick pan, add peanut, roast it well, then remove peels. Melt jaggerry with water, then strain it, again add it to the pan, add cardamom powder and ghee, mix well, stir it until it become one string consistency, now add peanut, mix well, now transfer it to a plate or oiled surface, roll it to make shape, cut it desired shape after cooling it.

Preparation

For egg masala, heat oil in a pan, add ginger garlic paste, saute it well, then add onion and salt, saute until it become golden brown and soft, now add masalas, cook it to turn aromatic, add tomato, mix it with masala, now add some water boil it well, next add eggs, mix with masala, cook until the gravy become thick and turn off flame.

For rice, heat oil in biriyani pot, add spices, roast it well, then add ginger garlic and onion, saute it for a minute, then add soaked and washed rice, after heating it for a while add water, then add salt and lemon juice, cook the rice well. For dum the biriyani, add 1/2 of the rice to a pan, add fried onion,cashews and kismis, coriander and mint leaves, milk and essence mix above the rice, then add 1/2 of egg masala, then add second layer, repeat the same, finally keep it in low flame for 20 minutes.
