Rava-1 cup

jaggerry-3/4 cup

desicated coconut-1 cup

water-2 cup

Preparation

Melt jaggerry in 2 cup water, then transfer it to a pan into a strainer, then boil the jaggerry juice, add semolina into it, mix well, once it become thick add ghee, just mix it, then transfer to a plate, once the heat is gone, knead it well, add desicated coconut, knead again to mix well, then divide this to equal portions, flatten it into medium thin , then cut it in round shape, finally fry all snacks in oil.

Flatten Rice Laddu

Ingredients

Flatten rice-2 cup

grated coconut-1 cup

jaggerry-250 gm

nuts

cardamom powder

ghee

Preparation

Dry roast poha and coconut separately, then grind it together and make a powder.Melt jaggerry, then strain it to a pan, boil it well, add poha powder, nuts , cardamom powder and ghee into the pan, mix all well, then turn off flame. Once the heat is gone make small laddu.

Preparation

Add all these ingredients in a mixie jar or a stone mortar, use a pestle to crush it, add some coconut oil, then serve it with rice or kappa puzhukk.

Red Halwa

Ingredients

maida-1 cup

salt

water

sugar-2 cup

red food color

crushed badam, pista

ghee-1/4 cup

coconut oil-1/4 cup

cardamom powder-1 tsp

Preparation

Add maida in a bowl, add salt and mix well, then add water gradually to make a soft dough, then add 4 cup more water to soak the maida, after 2 hrs, take the bowl, then mix it with your hand and transfer the juice to a bowl into a strainer, again keep this for 2 hrs, then remove the water above the juice, add 4 more cup of water and transfer it to a pan, add food color, then stir it well, add sugar and ghee  in batches, continue stirring,add cardamom powder, once the mix separates oil, add crushed nuts, mix it with halwa and transfer it to a plate or mould, allow it to cool well, then cut it into desired shape.

Putt Ice cream

Ingredients

 • Vanilla ice cream – 2 scoop

• Chocolate ice cream – 2 scoop

• Butterscotch ice cream – 2 scoop

• Pistachio ice cream – 2 scoop

• Strawberry ice cream – 2 scoop

• Cornflakes

• Cashew nut

• Badam

• Black raisins

• Tutti Frutti

• Cherry

• Pistachio

Preparation

Freeze putt kutti for 1/2 hr. Take corn flakes, raisins, chopped cashew, badam, cherry,pista,and tutty fruitty, mix all and keep aside. Take putt kutti, add corn flakes, then add one of the ice cream , add corn flakes mix again, add second flavour  ice cream, repeat this until the putt kutti full, finally add corn flakes mix above , and keep in freezer for 5 hrs, then push the putt ice cream to a corn flakes mix plate.

Banana ada

Ingredients

banana-4

grated coconut-1/2cup

sugar-1/4 cup

cashews -10-12

Preparation

Peel off banana, then remove the black seeds from the centre, then stem it until cook well. Mash it in a bowl with a spoon, then heat a pan, add coconut and sugar, roast until the color become golden brown, then add it to the banana, add some roasted cashews, mix all well, take a banana leaf, add the mix, then just spread it, then fold the leaf, heat a pan, and put the ada, cook both sides well.

Buttermilk Curry

Ingredients

curd-1 cup

coconut-1/4 cup

ginger

garlic-4

green chilly(kanthari)

cumin-1/4 tbsp

fenugreek powder-1/4 tbsp

curry leaves

salt

mustard

shallots

dry red chilly

turmeric-1/4 tbsp

Preparation

Crush cumin, garlic and chilly together, then add coconut, and grind into fine paste. Heat oil in a pan, add mustards, allow it to pop, then add shallots and ginger, saute it well, next add curry leaves and dry red chilly, mix well, then add turmeric, and coconut paste, cook it well, next add curd, add salt to taste, next add fenugreek powder,heat it well, then turn off flame.

Dry Prawn Ularth

Ingredients

pot tamarind-5-6

dry prawn-1 cup

coconut pieces-1/2 cup

water-2 cup

salt

chilly powder-1/2 tsp

coriander powder-1 tsp

turmeric-1/4 tsp

curry leaves

kashmiri chilly-1 tsp

oil

mustard-1/2 tsp

shallots-3-4

chilly flakes-1/2 tsp

Preparation

In a pan, add soaked pot tamarind, dry prawn, coconut pieces and water, mix well, then allow it to boil, then add masalas, and salt, boil again , once the prawns absorb water remove tamarind from it, and set the prawns aside of the pan, then add oil, add mustards, pop it well, then add shallots and curry leaves, fry it well then add chilly flakes, mix it well, then combine all, add curry leaves, cook it until the prawns become fry.

Kerala Beef stew

Ingredients

beef-250 gm

ginger garlic chilly crushed

curry leaves

cardamom, cloves, bay leaves, star anise , fennel, cinnamon and pepper

garam masala-1/2 tsp

salt

water

potato and carrot-1 each

coconut oil-2 tbsp

onion-1

ginger garlic chilly crushed

garam masala

maida-1 1/2 tbsp

second coconut milk

thick coconut milk

cashew nut, raising roasted in ghee

Preparation

Take a paressure cooker add beef, ginger garlic chilly crushed, curry leaves, spices, salt , garam masala and water, then cook it for 5 whistle, once the pressure gone add potato and carrot pieces, cook again for 1 whistle.Heat a pan, add coconut oil, then add onion, ginger, garlic,chilly crushed, saute it well, add garam masala and maida, mix well, then add second coconut milk, mix gently, then add cooked beef, boil it for 2-3 minutes, finally add thick coconut milk, allow it to heat well, then add roasted raisins and cashews.

Instant Idli recipe

Ingredients:

• White rice – 2 cups

• Urad dal – 1/2 cup

• Fenugreek – 1 teaspoon

• Cooked rice – 1/4 cup

• Salt to taste – 1teaspoon

• Sugar – 1 teaspoon

• Yeast – 1/2 teaspoon

Preparation

Wash rice, urad dal and fenugreek, then add sugar, yeast, cooked rice and water, soak it for 8 hrs, then grind it with salt and required water, keep the batter aside for 1/2 hrs, now cook soft idli.
