Mutta maala

Ingredients

Egg : 15

Sugar : 1 cup ( 250 ml cup)

Water – 1 1/2 cup

Milk Powder – 1 tbsp

Cardamom Powder- 1/4 tsp

sugar – 6 tbsp

salt – one pinch

Preparation

Break eggs and separate yolk and white into 2 bowls. Mix both with a fork. For sugar syrum , melt sugar with water, pour 1 tsp of egg white into it, then remove it after it become thick.Once the syrup become thick, pour egg yolk with
a holed wooden laddle, round it for making mutta maala, take it from syrup after become thick.Prepare whole yolk like this.

Take a mixie jar,add egg white, then add sugar, cardamom and salt, blend it well, then steam it in small bowls, serve it with muttamaala.

Instant Oats Appam

Ingredients

Oats – 1 cup (Dry Roast)

Small Banana – 4

Egg – 1

Cardomom Powder – 1tsp

Sugar – 2 tbsp

Warm milk – 1 and 3/4 cups (First add 1 cup)

Yeast – 1/2 tsp

Salt to balance the taste

Preparation

Heat a pan, add oats, roast it until it become aromatic, then transfer it to a mixie jar, then add sugar, egg,banana, milk, yeast, salt and cardamom powder, grind it into fine batter, keep this batter aside for 15 minutes, then make soft appam in tawa.

Lemon Pickle

Ingredients

lemon-20

garlic

ginger

green chilly

gingelly oil

mustard-1 tsp

fenugreek-1/4 tsp

curry leaves

chilly powder

turmeric-1/4 tsp

hing powder-1/2 tsp

fenugreek powder-1/4 tsp

salt

vinegar-1/2 glass

sugar-1 tsp

Preparation

Take a steamer, add lemon, then steam it for 10 minutes, after that cut it into small pieces. Heat oil in a pan, add mustard and fenugreek ,let it crack, then add curry leaves,chopped ginger , garlic and chilly, saute it well, then lower the flame and add masala powders, mix well, then add lemon pieces, mix it with masala, add salt and vinegar, add sugar, mix all well until it become thick, then allow it to cool and store in an air tight container.

Bread ball snack

Ingredients

bread slices-5-8

coconut-1 cup

sugar

raisins

Preparation

Take a mixie jar, add bread slices, blend it well and make powder, then transfer it to a bowl, add coconut and sugar, knead it well and make small balls by adding raisings.

Chicken Roast

Ingredients

Chicken – 500 grams

Red chilli powder – 1 tbsp

Turmeric Powder – 1/2 tsp

Salt as required

Lemon juice – 1 tbsp

For masala powder

Cinnamon stick – 4 inch piece

Cloves – 10 no’s

Cardamom – 8 no’s

Bay leaves- 2

Funnel seeds – 3 tbsp

For masala

Cinnamon – 1 inch

Cardamom – 2 no’s

Garlic chopped – 15 no’s

Ginger chopped – 1 tbsp

Onion sliced – 2 big

Tomato – 1 big

Red chilli powder – 1/2 tsp

Coriander powder – 1/2 tsp

Prepared Garam masala – 1 tbsp

Soya sauce-1/2 tbsp

Preparation

Take Chicken in a bowl, add kashmiri chilly, turmeric, salt, and lemon, marinate well, then rest it for 1/2 hrs.After that shallow fry chicken pieces in a pan.

For masala powder, heat a pan, add whole spices, dry roast it well, then turn off flame, after cooling it well grind it into fine powder.

Heat oil in a pan, add spices, then add ginger garlic chopped and curry leaves, saute until it become aromatic, next add onion and salt, saute it again, then cover the lid cook it for 5 minute, then add tomato, cook it until it become soft, next add masala powders, once the raw smell gone add soy sauce, mix it well, now add chicken, mix with masala, cook it for 5 minutes, then turn off flame.

Ingredients

cooked rice-2 tbsp

jaggerry-2-3

baking soda-1/4 tsp

cardamom powder

oil-2 tbsp

coconut pieces-2 tbsp

Preparation

Take a mixie jar, add rice flour, salt, cooked rice and enough water, then grind it to fine batter, then pour it to a bowl, add jaggerry juice, baking soda and cardamom powder into it, mix well. Heat oil in a cooker, add coconut pieces and chopped shallots, roast it well, then pour the batter, cover the cooker, keep the flame low and cook it about 15 minutes without whistle, kalathappam is ready.

Preparation

In a mixing bowl, add curd and cheese, mix well, then add sugar, mix it again, after that add egg, mix again, finally add corn flour , after mixing well keep aside.Take a cake tin, put a butter paper on bottom, pour cake batter, then bake it, soft and spongy cake is ready.

Instant Snack recipe

Preparation

Chop potato , carrot and capsicum into small pieces , after washing well take in a bowl. Break 4 eggs and separate yolk and white, add salt, pepper powder and soy sauce to egg white, beat well and add it to the vegetables, add maida and mix well. Heat a pan, spread oil, then add the mix , and make a hole , pour yolk to the hole, add some white sesame seeds and oil, cook both sides well and serve it.

Instant sambar mix

Ingredients

coriander seeds- 3 tsp

urad dal- 1 1/2 tsp

chana dal- 1 1/2 tsp

cumin-1 tsp

fenugreek-1 tsp

rice-1 tsp

sambar dal-1/2 kg

dry red chilly-10-12

curry leaves-1 handful

turmeric-1 tsp

hing-1 tsp

salt

oil

mustard

curry leaves

Preparation

Heat a pan, add dry red chilly, after roasting it well,keep aside, next add dal, heat it well and set aside, next add other ingredients together, roast it well, then turn off flame. In a mixie jar, add dry red chilly, grind it into fine powder, then add other spices, grind it again, then transfer it to a mixing bowl. Grind dal separately, then mix it with the masala powder, add hing powder and turmeric, mix well, season it with mustard, dry chilly and curry leaves, then let it cool, then store in a air tight container.

For sambar, cook vegetables in a pan, add tamarind water, then add the sambar powder with required water and boil it well, done.
