Mango Pickle

Ingredients

Mango – 500 grams

Salt as required

Chilli powder – 2 teaspoons

Turmeric powder – 1/2 teaspoon

Fried mustard seed powder – 1/2 teaspoon

Fried fenugreek seed powder – 1/2 teaspoon

Asafoetida – 2 small pieces

gingelly oil – 3 tablespoons

Preparation

Cut mango into small pieces, marinate with salt and rest for 2 hrs.Heat oil in a pan, add hing, roast it well, then transfer it 1/2 cup water, then melt it.Take mango, add masala powders, mustard and fenugreek powder and hing,mix all well, finally add oil.

Vegetable Stew

Ingredients

Potato-1

green beans-1/2 cup

carrot-1

soaked green peas-1/2 cup

turmeric-1/2 tsp

water-1 cup

coconut oil-2 tbsp

cardamom-2

cloves-2

cinnamon-2

pepper-1/2 tsp

fennel-1/2 tsp

onion-1

garlic and ginger

green chilly-2

cashews-8

tomato-1

coriander powder-1/2 tsp

turmeric-1/4 tsp

coconut-1/4 cup

coriander leaves

Preparation

Take a pressure cooker, add vegetables, turmeric, salt and water, cook it for 2 whistle in medium flame. For grinding, heat il in a pan, add whole spices, after roasting it well add onion, ginger and garlic, saute it well, add cashews and tomato, mix it for a minute, then add masala powders, after a mix transfer it to a mixie jar, add coconut , then grind it into fine paste, transfer this to a pan, add more water,then add cooked vegetables, boil it until it become thick, finally add coriander leaves and turn off flame.

ABC Juice

Ingredients

honey

cold water

Preparation

Peel off apple, beetroot and carrot, then cut it into small pieces, add it to a mixie jar, add honey and cold water, grind it into fine juice, then serve it.

Easy Chickpea curry

Ingredients

chickpea-2 cup

onion-1 cup

ginger garlic crushed-1+1 tsp

turmeric-1/2 tsp

salt

water-6 cup

coconut oil-1 tbsp

mustard-1 tsp

curry leaves

coriander powder-2 tbsp

chilly powder-1 tbsp

garam masala-1/2 tsp

hing-1/4 tsp

Preparation

In a pressure cooker, add soaked chickpea, onion, salt, turmeric, ginger garlic and required water, then cook it for 5-7 whistle. Once the pressure is gone open the cooker. Heat a pan, add coconut oil and curry leaves, then add masala powders, heat it well , then add it to the cooker, then transfer the cooker to  stove top, then boil it until the curry become thick.

Buttermilk Curry

Ingredients

curd-3-4 tbsp

garlic-3

shallots-3

ginger

green chilly-2

coconut oil-2 tbsp

curry leaves

turmeric-1/4 tsp

salt

sugar-1/4 tsp

coconut oil-2 tbsp

mustard-1/4 tsp

fenugreek-1/4 tsp

dry red chilly-2

green chilly-1

curry leaves

chilly powder-1/4 tsp

kashmiri chilly powder-1/4 tsp

fenugreek powder-1/4 tsp

Preparation

Heat a clay pot, add coconut oil into it, wait until it become hot, then add shallots, saute it for a minute, then add green chilly, ginger, garlic and curry leaves, saute it again, then  add blended curd into it, mix well, add salt then heat it, turn off the flame when heat it well. For seasoning heat coconut oil in a pan, add mustard and fenugreek, lets pop it, next add dry red chilly, green chilly, curry leaves, roast it well, then add masala powders, after mixing it well pour it to the curry.

Bread Fruit Recipe (kadachakka thoran)

Preparation

Take a mixie jar, add coconut, garlic, shallot, curry leaves,turmeric and green chilly, then crush it well.Add bread fruit pieces to a pan, add turmeric, salt and crushed coconut, mix all together, add a little water, then cook it well, mix frequently, once it become thick turn off flame, Finally season it with mustard, rice,dry red chilly, shallots and curry leaves.

Preparation

Heat oil in a pan, add ginger garlic chopped, saute it well, next add green chilly, curry leaves,onion and salt, mix well and saute until the onion become soft, now add masala powders, mix well, next add tomato and few drops of water, combine all well and turn off flame. Take pastry sheet, add masala, add 1/2 of boiled egg, then fold the sheet to centre from corners, brush egg above it, finally , bake it in oven.

Orange Tea Cake

Preparation

Break eggs to a bowl, add powdered sugar and beat it well, add vanilla essence and grated orange peel, mix well, next add oil, then add maida and orange juice, fold it with a spoon, after mixing well add baking soda and powder, mix it again, now cake batter is ready.Take a mould, put butter paper on bottom, pour the batter then bake it well.

Leftover rice snack

Ingredients

cooked rice-1 cup

coconut-4 tbsp

fennel-1 tsp

onion-1/2

salt

rice flour

chilly powder-2 tbsp

turmeric-1/4 tsp

salt

water

curry leaves

Preparation

Take a mixie jar, add cooked rice, and grind it into fine paste then transfer it to a bowl. In the same mixie jar, add coconut, onion and fennel, after crushing it well add it to the bowl, add rice flour and salt, knead it well and make a soft dough, then take small portion from it and make unnakkaya shape. After that steam it in a steamer, then let it cool. Take a bowl, add chilly powder,turmeric, salt and water and make a paste, take each snack and coat the masala mix, finally shallow fry the snack in a pan.
