Fried rice

Ingredients

•Basmati rice(India Gate)

•Salt

•Oil

•Water (to boil)

For the chicken:

•Boneless chicken

•All purpose flour -1/2tblspn

•Cornflour -1tblspn

•Salt

•Oil (deep fry)

For the final mixing:

•Oil

•Eggs

•Salt

•Sugar

•White pepper powder

•Soyasauce (optional)

•Spring onion

Preparation

Boil water in a vessel with salt and oil, add soaked rice and cook it about 80 %, then strain the rice, after that, let it cool, then keep this in fridge for 1 hour. For frying chicken, add maida, corn flour, salt,and water, mix it well and make a paste, marinate chicken with this masala, then fry it well, then crush it into small pieces.Heat oil in a pan, pour 2 beaten eggs, scramble it, then add chicken, after a mix add cooked rice, then add white pepper, and 1 pinch sugar, then cook it in high flame, mix well, finally add spring onion, heat it well, then serve it.

Bitter gourd fry

Ingredients

bitter gourd-1

salt

turmeric-1/4 tsp

kashmiri chilly powder

coconut oil

curry leaves

garlic-3-4

Preparation

Chop bitter gourd into thin small pieces, marinate it with salt, turmeric and chilly powder. Heat oil in a pan, add curry leaves, then add marinated bitter gourd, mix well, then cook it after cover the pan, after 10 minutes add crushed garlic, mix it again, add more curry leaves, cook it until it become dry, then serve it.

Traditional Chick pea roast

Ingredients

chickpea-2 cup

onion-1

tomato-1

curry leaves

green chilly-2

garlic-10

ginger

coconut pieces

turmeric-1/4 tsp+1/4 tsp

chilly powder-1/2 tsp+1/2 tsp

coriander powder-1/2 tsp

meat masala-1/4 tsp

salt-1/4 tsp

garam masala-2 pinch

coconut oil-2 tsp

Preparation

Cook soaked chickpea in pressure cooker by adding salt,turmeric,chilly powder and water. Then Heat oil in a pan, add garlic, ginger and green chilly, saute it well, next add onion, once it saute well add tomato, mix it again, next add masala powders, after mixing it add cooked chickpea, coat masala well , then pour a little water, cook until it become dry, finally add a pinch of garam masala, curry leaves and roasted coconut piece, then turn off flame.

Ragi appam

Ingredients:-

Raagi Flour – 2 Cups

Grated Coconut – 1 Cup

Cooked Rice – 3/4 Cup

Fermented Coconut water – 2 cups

Salt – 1/4 tsp

Sugar – 1 Tbsp

Preparation

Mix coconut water and sugar and keep this for a day.Then Add it to a mixie jar, add ragi flour, rice,coconut, sugar and salt, grind it well, then pour it to a vessel, then rest 8 hrs for fermentation. Now its ready to cook. Heat a pan, pour the batter, wait until bubbles come out, then cover it for a minute and take in a plate.

Eggless Ottada

Ingredients

soaked raw rice -2 cup

coconut-1 cup

cooked rice-1 cup

salt

coconut oil

Preparation

Take a mixie jar, add cooked rice, soaked rice and coconut, add a little water and grind it into fine paste, pour this batter to a bowl, add salt and coconut oil,mix well. Heat a clay pot, pour batter, cover it with a top, after 3 minutes open it then transfer it to a plate.

Chickpea Curry

Ingredients

chickpea soaked 8 hrs-300 gm

salt

onion-1

garlic-8

green chilly

curry leaves

water-2 cup

coconut oil-2 tbsp

shallots chopped

curry leaves

coriander powder-1 tbsp

kashmiri chilly powder-2 tbsp

turmeric-1/4 tbsp

fennel powder-1/4 tbsp

mustard-2 tsp

garam masala-1/4 tbsp

dry chilly-2

Preparation

Add soaked chickpea to a pressure cooker,add curry leaves,garlic, onion, green chilly, water and salt, cover the cooker and cook it for 8 whistle.Heat oil in a pan, add shallots,and curry leaves, saute it well, then add masala powders, mix all well, next add cooked chickpea, take a small quantity from it and make a paste, then add it to curry, mix all well, boil it for 2-3 minutes.Finally temper it with curry leaves, dry chilly and mustard.

Ingredients

Maida – 1/2 cup

Baking powder – 1/2 tsp

Coconut gratings – 1/3 cup

Egg -1

Salt – a pinch

Vanilla or coconut essence – 1 tsp

Powdered sugar – 1/2 cup

Oil – 1/4 cup

Milk – 2 tbsp

Preparation

Break egg to a bowl, add salt and essence,beat it well, then add sugar, beat it until it melts,next add maida and baking powder through a strainer, then mix all well, next add coconut, combine all well, transfer this batter to a greased cake tin,tap it well, then bake in oven.

Green gram kanji

Ingredients

raw rice-/2 cup

green gram-3/4 cup

salt

coconut

water

ghee

Preparation

Wash rice and green gram well, then add it to a pressure cooker, add water and cover the cooker then cook it for 2-3 minutes. Once the cooker is open, mash it with a laddle, add salt and water, boil it again, add coconut, boil it until it become medium thick, then turn off flame. Serve it with ghee.

milk powder

coconut oil

red chillies

Preparation

Heat oil in a pan, add mustard, allow it to splutter, then add dry chilly and curry leaves, roast it well, then add corn powder, mix it well, once it heat well, pour a little water and salt, mix well, add more water if required, mix well, cover the pan, cook it for 10 minutes, then add milk powder, mix it again, once it become dry turn off flame.

Porotta

Ingredients

maida-1/2 kg

sugar-1/2 tsp

salt-1/2 tsp

baking soda-3/4 tsp

egg-1

water

oil

Preparation

Take a bowl, add maida, salt,sugar, egg, and baking powder, knead it well, then pour water, knead it again and make a tight dough, apply oil above it and rest it for 20 minutes.Then take the dough,divide it into equal 9 balls, apply oil above the balls, and rest 10 more minutes. Then take the balls, flattern it into very thin layer, then fold it and make rolls, set all balls like this. Rest a few more mintes, then roll it with a chapathi roller, after that cook porottas in pan, by applying oil. Once whole parottas been cooked, strongly tap it with your hands, for separate the layers.
