Jackfruit seeds Black Halwa

Ingredients

Jackfruit seeds-50

water

jaggerry-400 gm

ghee-7 tbsp

almonds and cashew crushed

coconut milk-1 1/2 cup

corn flour-1/2 cup

cardamom powder

Preparation

Clean jackfruit seeds, then cook it in a pressure cooker by adding water alone. Then grind the cooked seeds with jaggerry juice. Heat a bottom thick pan, add ghee, roast cashews and almonds, then keep aside. Add jackfruit seeds paste into the pan, stir it well, once it heat well add coconut milk, mix well, then add corn flour and water mix, continue stirring, add ghee occationly, add cardamom powder, mix it well, cook until it become thick and non sticky, add cashews and almonds, after mixing well transfer it to a mould, tight it with spoon, then keep aside. Once it cooled enough, you can cut it in desired shape.

Green peas curry

Ingredients

green peas-1 cup

green chilly-2

onion-1

garlic-3-4

ginger-1 piece

coconut-1/2

fennel-1 tsp

oil-3 tsp

turmeric-1/4 tsp

chilly powder-1 tbsp

coriander powder-1 tbsp

curry leaves

Preparation

Soak green peas for 8 hrs. Then take it in a cooker, add water , salt and green chilly, then cover the cooker and cook it for 1 whistle. Heat oil in a pan, add onion,ginger and garlic, saute it well, add masala powders ,mix until raw smell gone, then add cooked green peas, mix well, grind coconut with fennel seeds, then pour it to the curry, mix it well and boil it, finally add some curry leaves and turn off curry.

Ladies Finger Curry

Ingredients

ladies finger-250 gm

turmeric-1/4 tsp

Preparation

Heat oil in a clay pot add okra, salt and turmeric, saute it well and set aside. Add more oil, then add onion, salt and chilly, saute it until the onion become transparent, next add ginger and garlic crushed, mix it again, now add tomato, once it become soft add masala powders, mix it well, next add water, let boil it, now add okra, cook until it become thick.

Spring Chicken fry

Ingredients

vinegar-1 tbsp

lemon juice

fennel seeds powder-1 tsp

Preparation

Add salt and vinegar to a bowl, add chicken into it , mix it well. Grind green chilly,garlic,ginger, curry leaves and coriander, and add to a plate, add masala powders, salt and water, mix well, then marinate chicken with this masala, rest it for 1/2 hrs, then deep fry it.

Beef Kondattam

Ingredients

Beef -1 kg

for marination

Preparation

Take a pressure cooker, add beef salt and chilly powder, then cover the cooker and cook beef. After that prepare a masala for marination, for that add masala powders, salt, corn flour and vinegar to a bowl, mix it well and marinate beef with this masala. Fry beef in oil and keep aside. Add garlic to oil, then add dry chilly, roast it well, then add onion, coconut and curry leaves, next add tomato paste and pepper powder, mix all well, then add fried beef, combine well.

Chicken Roll

Ingredients

maida-3 cup

milk powder-2 tbsp

lukewarm water + 1/2 tsp yeast+ sugar 1 tsp

egg-1

ghee

chicken

salt

pepper powder

turmeric

ginger garlic paste

turmeric-1/2 tsp

chilly powder-2 tsp

coriander powder-2 tsp

curry leaves

bread crumbs

egg

oil for frying

Preparation

Cook chicken with salt,turmeric and pepper powder. Take maida in a bowl, add salt,milk powder, yeast mix and egg, mix well, knead it well and make a medium thick dough , keep this aside for 2 hrs. Heat oil in a pan, add onion and ginger garlic paste, saute it well, add salt and curry leaves then add masala powders, mix it well, next add chicken crushed, mix all well and turn off flame. Take the dough and divide it into equal parts, take one flatten it into long shape, add filling, roll it like chicken roll, then fold it, after that, dip it in egg mix, then coat bread crumbs, finally fry all in hot oil.

Nadan Kozhukkatta

Ingredients

* For Dough –

Roasted Rice flour ( Appam/Idiyappam/Pathiri powder ) – 2 cup ( 300 g )

Cumin powder – 2 pinch

Salt – 1 /2 tsp

Coconut oil / Ghee – 2 tsp

Boiled water – 2 to 2 1/2 cup

* For Filling –

Ghee – 1 tbsp

Grated coconut – 2 cup

Flattened rice ( Aval ) – 3 tbsp

Cardamom powder – 1/2 tsp

Cumin powder – 1/4 tsp

Jaggery syrup

* For jaggery syrup-

Jaggery – 175 g

Water – 1/4 cup

Preparation

Take rice flour in a bowl, add cumin powder and hot water, mix well, add coconut oil , continue mixing, then knead it well and make a soft dough. Heat ghee in a pan, add coconut , roast it for 2-3 minutes, then pour jaggerry juice, cook until it become dry, add cardamom powder, and cumin powder, next add soaked poha, mix all well, once it become dry turn off flame. Take small quantity of rice dough, make a ball shape, then flatten it in your palms, add filling, then cover it carefully and make a perfect ball shape, when all kozhukkatta is ready steam it well.

Okra ,carrot thoran

Ingredients

Preparation

Heat oil in a pan, add shallots and garlic chopped, saute it well, next add curry leaves and chilly flakes, roast it well, next add coconut, mix all together, once the coconut is turn brown add carrot, after cooking well, cover the pan and cook carrot, after that add okra, combine all well, then cook until the okra cooked enough.

Rava sweet snack

Ingredients

Preparation

Break 2 eggs in a bowl, beat it well. Grind sugar and cardamom together, and make fine powder, then add it to the egg mix, mix it with a whisk, next add semolina, combine all well and keep aside for 10 minutes, after that add crushed banana into it, mix well. Heat a unniyappam pot brush oil, then pour the batter in each hole, keep the flame low and cover the pot, cook both sides well, then transfer it to a plate.

sardine fish-1 kg

kashmiri chilly powder

turmeric

tamarind

fenugreek

Preparation

Take cleaned fish add salt, turmeric and chilly powder, mix well and set aside. Heat oil in a clay pot, add mustard and fenugreek , let it pop, then add crushed garlic and ginger, mix well, wait until it roast, then add green chilly and curry leaves, mix it well , then add shallots and tomato, saute it well until tomato cooked well, then add turmeric, and chilly powder, mix it again, pour tamarind juice, add more water. Once it boil well add fish , cover the pan, cook it until it become thick.
