Chicken Cutlet

Ingredients

Chicken -1/2 kg

Pepper-1 tsp

salt

Potato-1/4 kg

onion-2

ginger-1 piece

Garlic -2

Green chilli-4

salt

Pepper crushed-1 tsp

garam masala-1/2 tsp

egg wash / egg / milk

bread / bread crumbs

Preparation

Cook chicken with salt and pepper powder, then crush it. Cook potato in a pressure cooker, then mash it well.Heat oil in a pan, add chilly, garlic and ginger crushed, saute it for 1 minute, next add onion, mix it until it become soft, add salt too, next add crushed chicken, mix all well, now add masala powders, mix well, add some curry leaves and turn off flame. Once it cool enough, make small cutlets from it. Mix egg white and milk in a bowl, take bread crumbs in a plate. Take cutlets, then dip in egg white, and coat bread crumbs, then fry it in hot oil.

Tomato Theeyal

Ingredients

coconut-1 cup

shallots-3

curry leaves

chilly powder-1 1/2 tbsp

coriander- 1 1/2 tbsp

turmeric-1/4 tsp

fenugreek powder-2 pinch

hing powder-2 pinch

water

coconut oil

onion-1

tomato-3

salt

water

coconut oil

mustard

chopped shallots

dry chilly

curry leaves

Preparation

Heat a pan, add coconut, shallots, and curry leaves, then roast it well, next add masala powders, mix all together and heat it well, now turn off flame. Once it cooled enough , grind it into fine paste. Heat oil in a pan, add onion, after sauting it for a minute add tomato, cook it until it become soft, then add salt and cocconut paste, add water, then boil it well, once it become enough thick turn off flame. Finally temper it with mustard, shallots. dry chilly and curry leaves.

Oats Dosa

Ingredients

Instant oats-1 1/2 cup

water-2 1/2 cup

salt

Preparation

Add oats to a mixie jar, grind it into fine powder, add water and salt, blend again and make a loose batter, transfer the batter to a bowl, mix it well. Heat a tawa, adjust the heat by spraying water, pour the batter, spread over it, add oil, if one side is cooked, flip to another, then transfer it to a plate.

Ice cream Burfi

Ingredients

milk powder-200 gm

ghee-200 gm

sugar-250 gm

vanilla essence-1 tsp

water-150 ml

pista

Preparation

Take the mould, add butter paper, then brush it with oil, add crushed pista, then keep aside. Mix ghee and milk powder together. Melt sugar with water, once it become one string consistency , turn off flame, then add milk powder mix and vanilla essence, mix all well, turn on flame and stir it well, once it become thick, transfer it to the mould, level it with a spoon, add pista crushed, then keep aside for 2 hrs, after that cut it in desired shape.

Chilli Chicken

Ingredients

chicken-3/4 kg

chilly powder-2 tsp

corn flour-3 tbsp

ginger garlic paste-1 tbsp

lemon juice-1/4

corn flour + water mix

oil

ginger garlic chopped

green chilly-2

tomato ketch up-3 tbsp

soy sauce-1 tsp

salt

pepper powder

Preparation

Take chicken in a bowl, add salt, chilly powder, corn flour, ginger garlic paste and lemon juice, mix all well then keep aside for 10 minutes, then fry the chicken well. Heat oil in a pan, add ginger and garlic crushed, saute it well, next add green chilly, onion and capsicum, mix all well, after 1 minute add sauces and corn flour water mix, stir it well, then add pepper powder and salt, after a mix add chicken, combine all well, once it become dry turn off flame.

Full Chicken Fry

Ingredients

For marination

Chilly powder -1 tbsp

Coriander powder 1 tbsp

Fennel seeds powder 1 tbsp

Garam Masala -1/2 tsp

Turmeric powder- half tsp

salt

Ginger garlic paste -1 tbsp

Lemon juice -2 lemon

Water

Oil -2 tsp

Egg-1

Corn flour -1 tbsp

Chilli flakes 1 tsp

Oil -100 ml

Onion -3

Cashew and kismis

Tomato-2

Curry leaves, mint and coriander

Ginger garlic paste

Chicken stock

Full chicken

Preparation

Take a full chicken and foot Deep lines with a knief. Take a bowl, add masalas, ginger garlic paste, salt, lemon juice and a little water, marinate chicken with this masala. Heat a pressure cooker add oil then add marinated chicken, cover the cooker and cook for one whistle. Add egg and corn flour to the leftover masala and mix well, again marinate chicken with masala. Heat oil in a pan add the chicken fry it well, then set aside, add sliced onions into the pan saute it well, add ginger garlic paste and tomato, mix all together, add fried chicken into it then coat it well then turn off flame.

Banana halwa

Ingredients

Jaggerry – 1 1/2 cup

Water -1/2 cup

White sesame seeds

Banana -3

Coconut milk -1/2 cup

Cardamom powder -1/2 tsp

Crushed nuts

Ghee

Preparation

Melt jaggerry with water and keep aside. Grind banana with coconut milk. Heat ghee in a pan, add banana mix, stir it well, once it heat well pour jaggerry juice, mix together, and stir without stopping, add ghee occationly, continue mixing, once it become thick and non sticky add crushed nuts and cardamom, mix well. Take a container, apply oil, then spread sesame seeds and nuts, then add the halwa mix, level it with a spoon, allow it to cooled down, then cut it in desired shape.

Chammanthi Kozhukkatta

Ingredients

rice flour-1 cup

hot water

salt

tamarind

curry leaves

kashmiri chilly powder

Preparation

Take rice flour in a bowl, add salt, then pour hot water, knead it well, and make a soft dough, add oil for softness, divide the dough into very small balls, then steam it well. Take a mixie jar, add ingredients for chammanthi, crush it then keep aside.Heat oil in a pan, add mustard, let it pop well, then add dry chilly and curry leaves, after mixing well add coconut mix, mix well until the raw smell gone, then add cooked kozhukkatta, mix all together, cover the pan and cook it in low flame for 2-3 minutes, then turn off flame.

Avalose Podi

Ingredients

1. Puttu Podi/Rice Flour – 1 cup

2. Salt – 1/2 tsp(as required)

3. Water – 3/4 cup(as required)

4. Grated Coconut/Dry Coconut – 1 cup

5. Cumin Seeds – 1/2 tsp

6. Sesame Seeds – 1/2 tsp

7. Cumin Powder – 1/4 tsp

8. Dry Ginger(Chukku) Powder – 1/4 tsp

Preparation

Add putt powder in a bowl, add coconut, salt, sesame seeds, and cumin seeds, mix it well, add water, mix it with your hand, rest this for 10 min. Heat a pan, add the putt powder, mix it well, once it become brown color, turn off flame.
