Egg Cutlet

Ingredients

oil-2 tbsp

ginger garlic paste-1 tsp

onion-1

green chilly-1

turmeric-1/4 tbsp

kashmiri chilly powder-1/2 tbsp

chicken masala-1/2 tsp

salt

boiled and mashed potato-1

corinader leaves

egg boiled pieces-2

egg-1

bread crumbs

oil for frying

Preparation

Heat oil in a pan, add ginger garlic paste, after 1 minute of sauting add onion and green chilly, mix all well, next add mashed potato, mix it with masala, add coriander and small pieces og egg, combine well and turn off flame. Make small cutlets from this mix, dip all in egg mix, then coat bread crumbs, now fry it in hot oil.

Jack fruit Appam

Ingredients

jack fruit-12 chula

wheat flour-1 cup

jaggerry-6

coconut-1/2

cardamom

water

Preparation

Melt jaggerry. Add jackfruit pieces to mixie jar, add jaggerry juice, then blend it well, next add coconut, blend it again, then add wheat flour, add jaggerry juice again, blend it well. Take a plate, add a banana leaf, pour the mix, then steam it well.

Paneer Tomato Rice

Ingredients

Cooked Basmathi Rice – 4 – 5 cups

Paneer – 150 – 200 gms

Tomato Chopped – 2 medium

Onion thinely sliced – 1 medium

Coriander leaves chopped – 3 tbsp

Mint leaves – 1 tbsp

Turmeric Powder – 1/2 tsp

Kashmiri chilli Powder – 1 tsp

Garam masala Powder – 1 tsp

Oil or ghee – 3 tbsp

Salt as needed

Preparation

Heat oil in a pan, add whole spices, after roasting add chopped ginger garlic, saute it well, next add onion and green chilly, mix all, add salt, saute it well, now add masala powders, mix it in low flame. Once the raw smell gone add tomato, wait until it become soft, add coriander too, then add paneer, cook it after the lid is closed, next add cooked rice, then mix it with masala, finally, add some mint leaves, then turn off flame.

Chicken roll

Ingredients

for dough

lukewarm water-1/2 cup

yeast-1/2 tsp

sugar-1/2 tsp

maida-1 1/2 cup

salt

oil-1/2 tsp

For masala

oil-2 tbsp

onion-2

ginger garlic-1 tbsp

salt

turmeric-1/4 tsp

garam masala-1/4 tsp

coriander powder-1 tsp

chilly powder-1 tsp

pepper powder-1/2 tsp

curry leaves

cooked chicken crushed- 150 gm

bread crumbs

oil for frying

Preparation

Take a bowl, mix yeast , water and sugar together, then add maida and salt, knead it well and make a soft dough, apply oil above it, then keep aside.

For making masala, heat a pan, add oil, then add ginger garlic and onion, saute all, then add masala powder, once it combined well add crushed chicken, mix it all together, finally, add coriander leaves, combine all and turn off flame.

Divide the dough into equal small balls, flatten it into thin layer, add filling, then roll it , carefully seal the sides, dip the rolls in water, then coat bread crumbs, finally, fry it in hot oil.

Banana Payasam

Ingredients

gram dal- 2 cup

ghee-4 tsp

banana boiled-2

melted jaggerry-3 glass

milk-1/2 ltr

ghee

cashews

Preparation

Wash gram dal throughly, then soak it for 2 hrs. Take a pressure cooker, add soaked dal, add water, then cook it for 3-4 whistle. Once the pressure is gone, open lid and turn on flame again, once it become dry add banana pieces, then mix both well, add ghee into it, combine all together, pour jaggerry juice, after mixing all pour milk, let it boil well, once it become thick turn off flame. Finally add roasted cashews and ghee.

Preparation

Heat oil in a pressure cooker, add shallots into it, saute it for 2 minutes, then add whole spices and turmeric, mix all well, pour coconut milk and salt, let it boil well, then add soaked rice, then cook it for 3 or more whistle. Super tasty masala rice is ready.

First step is washing rice, throughly wash rice for 2-3 times, then strain it , dry the rice under sunlight, then grind it into fine powder. You can make soft idiyappam and pathiri from this flour. Store it in air tight container.

Heat a sauce pan, pour the batter, then cook it after covering the pan, flip to another side if one side is cooked enough, then transfer it to a plate.
