Watermelon Drink

Ingredients

watermelon

lemon

mint leaves

sugar

Preparation

Cut Water melon into cube shape pieces. Tale a glass jar, add 5-8 watermelon pieces, then add lemon pieces, sugar and mint leaves, then mash it with a wooden stick. Take a serving glass, add ice cubes, pour the water melon mix, add cold water, then add more watermelon pieces, then serve it.

Chickpea Roast

Ingredients

chickepea soaked- 1 1/2 glass

salt

water

oil-2 tbsp

mustard

shallots-10-20

crushed garlic-4-5

chilly flakes

curry leaves

Preparation

Cook soaked chickpea in pressure cooker with salt and water. Heat oil in a pan, pop mustard, then add chopped shallots, roast it until it become slightly brown, then add garlic crushed, mix well, then add curry leaves and chilly flakes, saute it well, then add cooked chickpea, mix it well, once it become dry, turn off flame.

Raw Dates Pickle

Ingredients

raw dates-50

gingelly oil-4 tsp

mustard-1 tsp

ginger

garlic -5-6

green chilly-3-4

curry leaves

hing-1/4 tsp

fenugreek powder-1/4 tsp

turmeric-1/2 tsp

kashmiri chilly powder-2 tbsp

water-1 glass

salt

vinegar-1 cup

Preparation

Remove seeds from the dates, then cut it into small pieces. Heat oil in a pan, add mustard, let it pop well, then add ginger, garlic and green chilly, saute it well , then add curry leaves, mix all well, add masala powders, mix until the raw smell gone, add water and salt, boil until it become thick, then add vinegar, once boil it well add dates, then boil it well and turn off flame.

Wheat Murukk

Ingredients

wheat flour-2 cups

ajjwain-1/2 tsp

turmeric-1/4 tsp

salt

chilly powder-1 tsp

water-1 cup

Preparation

Take an idli plate, add wheat flour in each holes, then steam it well, next strain the powder into a bowl, add ajjwain, salt, turmeric and chilly powder, mix all well, then add water, knead it well and make a soft dough. Take idiyappam maker, brush oil inside, then fill the dough, press it on a tissue, and make round shape murukk, then fry it in hot oil.

Idiyappam

Ingredients

rice flour-1 cup

water-1 1/2 cup

salt

oil-1 tsp

grated carrot and coconut

Preparation

Add rice flour to a pan, pour water, mix well, then add salt and oil, combine all well, then turn on flame, stir the mix well, once it become thick and non sticky turn off flame and transfer it to a bowl, wait for the heat gone, then knead it well and make a soft dough, brush idiyappam maker with oil, then fill the dough, add coconut and carrot together in idli plate, then press idiyappam in each hole, finally, steam it well.

Jelly Candy

Ingredients

lukewarm water-1/4 cup

gelatin-2 tbsp

water-1/4 cup+2 tbsp

sugar-1/4 cup

vanilla essence-2-3 drops

food colors

Preparation

Mix gelatin and lukewarm water together. Boil water, sugar vanila essence together, then add gelatin mix, let it boil well, then pour the mix equally to 3-4 glasses, add different food color in each glass, then transfer the mixes to moulds, refrigerate it for 30 minutes, then demould jellys.

Pathiri

Ingredients

rice flour

salt

water-1 ltr

Preparation

Take a bottom thick pan, add water and salt, let it boil well, then add rice flour, mix it very well, then turn off flame and cover the pan, after 5-10 minutes, transfer it into counter top, then knead it well with your hand and make very soft dough, divide it into equal small balls, then flatten it with a roller, dust it with rice flour, cut the pathiri in correct round shape, now start cooking it in tawa.

Preparation

Marinate chicken with the given masala powders. Rest it for 10 minutes. Mix maida and corn flour together. Take chicken pieces, coat maida mix tightly, then fry chicken pieces well. Heat a pan, add oil, then add garic, saute it well, then add sauces, salt and sugar, mix all well, boil it until it become thick, now add fried chicken, coat the sauce well, finally add sesame seeds, then turn off flame.

Broken Wheat Payasam

Ingredients

broken wheat -1 glass

water-3 glass

coconut milk thick

coconut milk-2nd extract

coconut milk 3rd extract

jaggerry-2 balls

ghee-1 tsp

cardamom-3-4

dry ginger powder-1/4 tsp

coconut pieces

black sesame seeds

cashew nuts

kismis

Preparation

Cook wheat with water in a pressure cooker, then transfer it to a bottom thick pan, boil it well, add third coconut milk, boil it until it become thick, pour jaggerry juice, stir it for 5 minutes, then add second coconut milk, continue stirring for 5-10 minutes, next add dry ginger powder and cardamom powder, then pour thick coconut milk, after a mix, turn off flame. Add fried coconut, cashew, kismis and sesame seeds to the payasam.
