Ingredients

ghee – 1 tsp

semolina- 3 tsp

milk- 1 1/2 cup

cardamom-3

sugar

shallots- 1 tsp

cashews and kismis

Preparation

Heat ghee in a pan, add semolina, roast it well, then pour milk, stir it well until it become cooked, next add sugar and cardamom, mix it well, then turn off flame. Roast shallots, cashew and kismis, then add it to the rava kanji.

Ramadan Special Semiya Custard

Ingredients

sago- 1/2 cup

jelly mix

hot water

sugar

ghee- 1 tbsp

semiya- 1 /2 cup

milk- 3 cup

milk powder-1 1/2 tsp

condensed milk

milk-1/4 cup

custard powder- 2 tbsp

soaked sabja

fruits

Preparation

Mix jelly powder in hot water, then add sugar, mix well, then set aside. Heat ghee in a pan, add semiya, roast it well, then keep aside. Boil milk in a pan, add milk powder and condensed milk, mix well, next add semiya, once it cooked enough, add custard powder and milk mix, stir it well until it become thick, now add cooked sago, then turn off flame. Allow the dessert to cooled down, add jelly while serving.

Ingredients

maida-1 kg

sunflower oil

Preparation

Mix egg and sugar in a bowl, then keep aside. Take maida in a bowl, add salt, then pour egg mix , combine well, pour water, knead it well and make soft dough. Rest the dough for 3 hrs. After that, apply oil above the dough, knead it well, then make medium sized balls. Flat all balls into very nice layers, then use a kniefe to cut it like small strips, then roll it. Flatten it again, then cook it in a pan, tap cooked porottas for separating layers.

Grind, pepper, cumin, dry chilly and fenugreek, then keep aside. Crush ginger, garlic and shallot, then keep this aside. Heat oil in a pan, pop mustard, then add dry chilly and prepared masala, roast it for a minute, next add crushed items, saute it well, add tomato, after mixing it well, pour tamarind water, then add salt and let it heat well, turn off just before boiling, then add coriander, tasty rasam is ready.

Homemade Mayonnaise – 3 tablespoons

Pepper powder – 1 teaspoon

Oregano – 1 teaspoon

Olive oil – 1/4 cup

Lemon juice – 3 tablespoons

Salt – 1/2 teaspoon

Pitted green olives – 1/2 cup

Cooked pasta ( sprinkled with pepper & olive oil ) – 1& 1/2 cup

Cooked beans – 1/2 cup

Navy bean / White pea bean (cooked) – 1/2 cup

Chopped yellow capsicum – 1/2 cup

Cherry tomatoes sliced – 1/2 cup

Chopped cucumber – 1/2 cup

Chopped Spring Onion – 1/2 cup

Chopped lettuce – 1 cup

Chopped parsley leaves – 1/2 cup

Chopped feta cheese – 1 cup

(Low fat and less salt lite feta cheese)

PREPARATION

For healthy mayonnaise, add garlic to a mixie jar, then add lemon juice, add boiled egg white, pour sunflower oil, then grind it well, add water and salt, grind it again, make a thick paste, then transfer it to a bowl. Take another large bowl, add pepper powder, oregano , olive oil and mayonnaise, combine well, add cooked kidney beans, chopped carrot, capsicum and other veggies, then add cooked pasta, mix everything well, then have it.

Boiled shredded chicken: 1/2 cup

Cabbage : 1/2 cup

Salt: 1 tsp

Crushed red chili : 1 tsp

Black pepper powder : 1/2 tsp

Soya sauce: 1 tbsp

Chili sauce: 1 tsp

All purpose flour : 2 tbsp

Oil: 1 tbsp

Milk: 200 ml

Preparation

Heat oil in a pan, add garlic, after roasting it well add onion, saute it for a minute, next add vegetables, mix it well, now add crushed pepper, salt and sauces, mix it again well , now add cooked and crushed chicken, add spring onion and coriander, mix well, then keep the mix aside of the pan, then add milk and maida to empty side, mix well, then combine with masala, once it become cooked and thick, turn off flame. Dip bread slice in water Add Stuffing Dip in eggs Now coat it with bread crumbs (Keep it in air tight jar and freeze well, use it for 3 to 4 weeks) Heat up oil on medium flame,Fry each side for 2 minutes.

Tips to shred coconut

Coconut is indispensable in snacks and curries for Malayalis. It is common to add grated coconut and coconut milk to most of the curries. Coconut husking is a bit of a chore for housewives, but if you store coconut husks with this cool idea, you can reduce the work in half.

Take your pressure cooker, add coconut pieces with shell. Pour a little water into ot, then cover the cooker and cook it for 2-3 whistle. Then , open the cooker, once the heat is gone , remove coconut from shell. If you want pure white coconut, remove the brown portion, then chop coconut into small pieces, pulse it in a mixer jar, then store in airtight container in freezer.

PREPARATION

Take a bowl, add then given ingredients one bye one, mix everything well. Heat a little oil in a pan, add the mix with a spoon like a cutlet sized roti, cook both sides well.

Heat oil in a pan, add cumin and mustard, let it pop well, then add curry urad dal, next add curry leaves and dry chilly, saute it well, then add the grinded mix, then add tomato puree, boil it well, pour water and salt, boil again, now add dosa batter to the pan, stir well, once it cooked enough, turn off flame.
