Ingredients

Preparation

For Tortilla, soak quinoa overnight after washing it well, then grind it with required water to make a batter. A dd salt then make a soft thin tortilla(dosa) with it.

Heat a pan, add butter, then add onion, saute it well, then add chilly flakes , combine well, next add mushrooms, add salt and cook it well, add chopped garlic, cook it until the water of mushrooms completely dissolves, next add dills to it, combine well, then turn off flame.

Preparation

Marinate 500 grams of prawns with turmeric powder, chili powder, vinegar, and salt. The prawns are then marinated in the refrigerator for 30 minutes.Next, the prawns are fried in hot oil with curry leaves until cooked through. The remaining oil is used to create a masala paste with mustard seeds, ginger, garlic, small onions, tomatoes, turmeric powder, chili powder, coriander powder, and garam masala. Water is added to the masala paste and brought to a boil. The fried prawns are then added back to the pot and simmered for a few minutes. Finally, curry leaves are added and the dish is complete.

Mix water and gram flour in a bowl, then pour it to the pot, boil it again until it become thick, then turn off flame.

Korean Chicken Wings Dish

Ingredients

Preparation

First, the chicken wings are marinated in a mixture of salt, pepper powder, black pepper powder, and half of the lemon juice, marinating the chicken wings for 30 minutes.Then, the marinated chicken wings are coated in all-purpose flour. Next, the chicken wings are fried in oil until they are cooked through and crispy.

In the meantime, a sauce is prepared by sauteing garlic in oil, then adding tomato ketchup or tomato sauce, sugar, soy sauce, the remaining lemon juice, and Kashmiri chili powder. The sauce is simmered for about a minute.

Finally, the fried chicken wings are added to the sauce and mixed well, mixing for 2-3 minutes to ensure the chicken wings are evenly coated in the sauce.garnishing the chicken wings with white sesame seeds.

Preparation

Grind the leftover puttu into a coarse powder. Heat oil in a pan and splutter mustard seeds. Add chopped vegetables (onion, ginger, carrot, and beans) and curry leaves to the pan. Fry until the vegetables become soft.
Add turmeric powder, chili powder, and garam masala powder to the pan. Mix well.Add the ground puttu and salt to taste. Mix well. Cook for 2-3 minutes until everything is well combined. Serve hot.

Crispy Snack Lotta

crispy Snack Lotta, a crispy snack from Thalassery, Mahi and Kannur districts of Kerala.

Ingredients

All Purpose Flour/ Maida – 2 Cups

Yeast – 1 tsp

Salt – 1/2 tsp

Sugar – 2 tsp

Water

Oil

Preparation

Activate the yeast: If using active dry yeast, mix it with sugar and lukewarm water in a glass. Let it sit for 5-10 minutes until foamy.

Combine dry ingredients: In a large bowl, mix together maida flour, salt, and sunflower oil.

Add wet ingredients: Add the activated yeast mixture (or instant yeast) to the dry ingredients and mix well.

Knead the dough: Knead the dough for a few minutes until it becomes smooth and elastic. Add more water if the dough is too dry, or more flour if the dough is too sticky.

Let the dough rise: Cover the dough with a damp cloth and place it in a warm place for at least an hour, or until doubled in size.

Heat oil in a frying pan over low flame.Pinch off small balls of dough and flatten them slightly into rounds.

Fry the Lotta in batches until golden brown on both sides.Drain the fried Lotta on paper towels and serve them warm with tea.
