Carrots

grated coconut

mustard seeds

Preparation

Wash and chop ladies finger and carrots into small pieces. Grind coconut.Heat oil in a pan.Add mustard seeds to the pan and let them splutter.Add chopped bitter gourd and carrots to the pan and stir fry.Add turmeric powder, salt, and dried red chilies to the pan and mix well.If the vegetables stick to the pan, add a little water and cover the pan to simmer.Cook for 15 minutes or until the vegetables are cooked through.Serve hot.

Ingredients:

1 cup wheat flour

A pinch of salt

Water

1/3 cup jaggery, melted in 1/4 cup water

1 1/2 cups grated coconut

2 cardamom pods, powdered

Banana leaf

Ghee

Preparation

Mix the wheat flour and salt in a bowl. Add water gradually and knead into a dough. The consistency of the dough should be soft.Melt jaggery in water. Then add grated coconut and cardamom powder to the jaggery mixture and cook until it thickens. This will be the filling for the Ada.Take a banana leaf and smear ghee on it. Pour the wheat flour dough on the banana leaf and spread it thinly.Add the filling mixture over the dough and fold the banana leaf.Steam the Ada for a few minutes.Once cooked, take out the Ada from the steamer and enjoy.

Chicken chukka

Chicken -1 kg

Curd- 3 tbsp

Onion -4 (fried)

Oil for frying

Ginger garlic – crushed – 1 tbsp

Oil -2 tbsp

Chilli powder -3 tbsp

Turmeric powder -1/2 tsp

Coriander powder – 1 tbsp

Garam masala – 11/2 tsp

Pepper powder -1 tsp

Curry leaves

Preparation

Clean and marinate 1 kg of chicken with 1 teaspoon of salt, ½ teaspoon of turmeric powder, 3 tablespoons of yogurt, for at least 15 minutes.In the meantime, chop 4 medium onions and fry them in oil on medium flame until golden brown. Then remove them from the oil and set them aside. Add 2 tablespoons of oil to the pan and saute 1 tablespoon of grated ginger and garlic.Add 3 tablespoons of chili powder, ½ teaspoon of turmeric powder, 1 tablespoon of coriander powder, 1 ½ teaspoons of garam masala, and 2 chopped tomatoes to the pan. Fry until the tomatoes become mushy.Add the marinated chicken, 1 teaspoon of black peppercorns (crushed), and 1 tablespoon of cumin seeds (crushed) to the pan. Cover and cook for 10 minutes.Simmer for an additional 10 minutes, or until the chicken is cooked through. If using a non-stick pan, you may not need to stir as often.Once the chicken is cooked through, add the fried onions back to the pan and cook for an additional minute.Serve hot with chapatti, porotta, or rice.

water – 2&1/2 cup

wash rice and moong dal seperatly. to a pressure cooker add1 tsp ghee and saute mong dal for 3 to 4 minutes in medium flameadd rice and saute for a minute and add 2 &1/2 cups of water and cookfor 2 whistles in medium flame
melt jaggery in 1 cup of water ..add strained jaggery syrup to the cooked dal and rice… mix well and add powdered cardamom..cook for 8 to 10 minutes after boiling in medium flame….add 1/2 cup of hot water to adjust consistency…remove from the fire…saute coconut chunks, cashews and raisins in 2 tsp ghee and pour this to pongal ….mix well and add 1 tsp ghee….mix well and keep aside for 15 minutes…serve hot….yummy chakkara pongal is ready….

Preparation

Mix the rice powder, Kashmiri chili powder, ground black pepper, turmeric powder, cumin seeds, and black sesame seeds in a bowl.Add hot water and knead well to make a soft dough.Grease a murukku mold with oil.Fill the mold with the dough and press it out onto a banana leaf.Heat sunflower oil in a pan. Once the oil is hot, deep fry the murukku until golden brown. Drain the murukku on a tissue paper to remove excess oil.

Preparation

Clean and wash one kilogram of chicken leg pieces. You can use other cuts of chicken or keep the skin on if you prefer.Prick the chicken all over with a fork to allow the marinade to penetrate the meat.In a bowl, combine 1.25 cups of buttermilk (or yogurt), 1 tablespoon of vinegar, 1 tablespoon of black pepper powder, 1 tablespoon of Kashmiri chili powder (or ½ tablespoon of regular chili powder), 1 tablespoon of ginger paste, and 1 tablespoon of garlic paste.Add ¼ teaspoon of baking soda, enough salt (about 1 ½ teaspoons), and another 2 tablespoons of vinegar (or lemon juice). Mix everything well.Marinate the chicken in the mixture, making sure all the chicken pieces are submerged. This will make the chicken juicy and tender.Fry the chicken pieces over medium heat until golden brown, about 15 minutes.Drain the chicken from the oil.The video claims that the roasted chicken is crispy on the outside and juicy on the inside.
