It’s typically made with toor dal, tamarind, vegetables, coconut, and various spices. The sambar is cooked until the flavors are well-integrated and then served hot with idli, dosa, or rice.

Preparation

Dry roast coconut with spices and hing , then grind it into smooth paste . Wash the toor dal and soak it in water for about 30 minutes. Then, pressure cook it with water, salt, turmeric and hing until it becomes soft. Cook vegetables in a clay pot with turmeric, salt and water. Add cooked dal to the pan, then boil it well, next add coconut paste, then boil it again, add tamarind pulp or juice, add extra hing too, boil it again, add a piece of jaggerry. Finally, season it with curry leaves, dry chilly and mustard.

Heat oil in a clay pot, add mustard, wait until it pop well, then add dry chilly and curry leaves, saute it for a minute, then add shallots, saute it too, now add moringa leaves, saute it well, now add coconut paste , pour water, then add salt, boil it until it cooked enough.

Heat oil in a pressure cooker, add onion, saute it well, then add tomato, mix it until it become mushy, next add coriander and mint leaves, combine well, now add masala powders, once the raw smell gone add curd, then add beef, combine all, then pour water, add salt too, once it starts boil, add washed rice, then cover the cooker and cook it well.

In a pan, add veggies , turmeric, salt and water, cook it well, Grind the grated coconut, shallots, green chili, turmeric powder, and chilly towder together into a coarse paste . then add to pan, mix it well and cook it for 5 minutes, add eggs too, then add raw coconut oil to it, then turn off flame.

Heat oil in a pan, add shallots, saute it until it turns brown, then add curry leaves, mix well, then add curry, boil it until it thickens well.

Preparation

Soak urad dal for 4 hrs, then grind it into thick paste. Melt sugar with water and make a syrup, keep this warm. Add corn flour and food color to batter, combine well, then fill the batter to a piping bag, then press it to hot oil, then make jilebi, after frying it well soak it in sugar syrup for a while.
